SLOW FOOD
The Slow Food movement actually began in Italy in 1986 to resist the opening of a McDonald's near the Spanish steps in Rome. It is now a major non-profit, eco-gastronomic organization operating to counteract fast food and fast life, the disappearance of local food traditions and people's dwindling interest in the food they eat, where it comes from, how it tastes and how our food choices affect the rest of the world.
Today, there are over 100,000 members in 132 countries. The Slow Food Movement Mission includes: Preserving and promoting local and traditional food products, along with their lore and preparation Promoting "taste education"
Educating consumers about the risks of fast food
Educating citizens about the drawbacks of commercial agribusiness and factory farms
Lobbying against government funding of genetic engineering
Lobbying against the use of pesticides
Teaching gardening skills to students and prisoners
Encouraging ethical buying in local marketplaces

Midsummer Recipe
Farro Salad with Fresh Mozzarella and
Vegetables
1 cup of Farro (Spelt) Marinated artichoke hearts 1/2 celery heart 3 oz of marinated green olives (pitted) 2 oz of diced fresh mozzarella cheese 1/2 green bell pepper 1/2 lb of grape tomatoes 2 fresh green onions 2 red radishes Capers 1 small bunch of basil 1 tbs. chopped parsley 1 fl oz of balsamic vinegar 2 fl oz of extra virgin olive oil Sea salt, ground white pepper
Soak the spelt for at least 8 hours. Cook the Spelt in salted water. Simmer for about 30 minutes. Drain and cool.
Dice all the vegetables, except the tomatoes, radishes and the fresh onions. Cut the radishes and the onions in small rounds and set aside.
Halve the grape tomatoes. Cut the fresh mozzarella in cubes about 1/3 in.
Whisk separately the vinegar with salt and pepper, add the oil a few tablespoons at a time to make an homogeneous dressing.
In a bowl mix all the spelt and vegetables, drizzle with the dressing, add the cheese and decorate with the basil.
Farro is the Tuscan name for Spelt, a hearty brown wheat grain. Used frequently in medieval times in soups, nowadays being rediscovered for its nutritional value. Spelt contains more essential amino acids than many other types of wheat.
Farro also contains a considerable amount of silicic acid ensuring a good complexion and shiny hair and also reputed to stimulate the mental faculties! Enjoy!
