Yields 2 dozen or so!
Ingredients:
3 cups
unsweetened dried organic coconut
3
tablespoons raw organic cashew or almond butter
4-6
tablespoons agave nectar
4-6
tablespoons maple syrup
2
tablespoons coconut butter/oil
2 teaspoons non alcohol vanilla extract
pinch sea
salt
1.5 cups
organic cocoa powder
ΒΌ cups
organic cacao nibs (optional)
Instructions:
In a food
processor grind 1 cup of the coconut to a powder
Add
cashew or almond butter, agave, maple syrup, coconut butter, vanilla, sea salt
and half the cocoa powder, blend until well mixed.
Fold in
remaining coconut, cocoa powder and cacao nibs by hand.
Roll 2
tablespoons of dough into balls and flatten with hand or bottom of a wet glass.
Put in
freezer until firm then store in fridge.
