Restaurant report: "No room for weak players:"
A 2009 survey by Technomic Inc. says "cautious spending on meals away from home will prevail, and top-of-mind restaurants will weather the storm best." Technomic's winning restaurant formula calls for delivering "consistent basics with standout qualities."
Many of Durango's Downtown restaurants would receive a high score from Technomic's list of "musts" such as "menu desirability that pops, hospitality you can feel, positively charged atmosphere, a connection with customers lifestyle, and manager presence that demonstrates customer appreciation."
