Come and enjoy a weekend of vegetarian cooking with Deborah Madison, the founding chef of Greens restaurant. The menu will be based on what is in the CMZC garden, Deborah's garden, and what is in the market at that time.

In this small class of eight participants we'll cook together in the Zen Center kitchen and explore what amazing goodness vegetables and other plant foods have to offer. 
Koyo Welch-roshi, the Abbot of CMZC, who has worked as a cook at Greens and other restaurants, will assist with the class.


... grew up in a California walnut orchard. Farms and food were in her sights from the start. She first put that awareness into motion at the San Francisco Zen Center, where she was a student for eighteen years and held a host of kitchen positions: head cook, guest cook, private cook for the abbott and his guests. Deborah studied under Alice Waters at Chez Panisse and then went on to become the founding chef of Greens restaurant, one of the early Bay Area restaurants to have a farm-driven menu. Since her years at Greens, Deborah has been known as a cook, writer and cooking teacher specializing in seasonal, vegetarian recipes with strong emphasis on farmers markets produce and heritage fruit and vegetable varieties.

Schedule and Registration                           Save $50 with early registration

Deborah Madison will offer this class as a fundraiser for Crestone Mountain Zen Center. The fee for the weekend is $550 incl. room and board at the Crestone Mountain Zen Center. The proceeds of this event will directly support important kitchen renovation projects at CMZC.

Arrival is at 2 pm on Friday. Class starts at 3 pm for those who can arrive in time to prepare dinner. Or you can arrive at 5 pm in time for the 6 pm dinner. The class continues with meal preparations for Saturday lunch, Saturday dinner, and Sunday brunch. Departure is after brunch on Sunday (approx. 11 am).
