In 1810 Prince Ludwig of Germany married Princess Therese in Munich. The citizens of Munich were invited to attend the festivities, and ever since then they have celebrated Oktoberfest in recognition of this event. Over 200 years later, six million people will attend the Oktoberfest celebration (in Munich) which runs the course of several weeks during the end of September until the first few days of October. (The festivities were moved into September to take advantage of the better weather during that time period.) They will drink over 7 million liters of beer, eat over 500,000 chickens, 400,000 sausages, and 70,000 pork knuckles. 

 

Oktoberfest is now celebrated around the world, although most people don't know who Prince Ludwig or Princess Therese are and most think that the festival is actually during October. Traditionally only breweries from Munich are pouring beer at the festival in Bavaria but that cannot be said about the festivals around the world where you can find beers from all over Germany and other countries as well that brew their version of an Oktoberfest beer. 

 

Oktoberfest beer is traditionally a Marzen (or March) style beer  that in the days before refrigeration was typically brewed before April and stored in cold caves during the warm summer months. Bavarian brewer's figured out that they couldn't brew good beer in the warm summer months, so they brewed like crazy and stored it till it ran out right around October when the fall harvest would allow them to start brewing again. The original style was dark brown but today's Marzen is more of an amber colored beer with light hopping and a fair amount of alcohol. 

 

There are lots of Oktoberfest celebrations going on all over South Florida this weekend so check out the list below, put on your lederhosen and dreindels, grab a liter of beer and get ready to do a little oompah dancing! Prost!

There's a place just south they call Frog's Hollow, with cauldrons afire in Fall, and they only speak in whispers of the name. Shiner Wild Hare Pale Ale 
This classic American Pale Ale features two row barley malt with a blend of Munich and Caramel malt for rich malt flavor and golden color. This nut brown ale is the first beer in the world made with whole roasted pecans. The pecans are used just like grain and provide a nutty characteristic and a delightful depth to the flavor profile. An influential alcoholic drinks analyst says the launch of a novel beer blended with black tea could supple the spark that ignites a craft brewing revolution in China.

 

Spiros Malandrakis, senior alcoholic drinks analyst at Euromonitor International, said that the movement reflected the late noughties heresy - in some Western eyes - of the Chinese taste for premium Scotch mixed with tea.

Could we one day see shelves stocked with space whiskey? Perhaps so, assuming an experiment launching vials of limited edition whiskey into space goes well.

 

Scottish distillery Ardbeg teamed up with the International Space Station last year to test the effects of near zero gravity on the maturation process. Of interest to scientists are the micro-organic compounds known as "terpenes" inside the whiskey, which was launched into space via rockets from Kazakhstan last year. The experiment is the first of its kind.

Cherry Lambi Crisps

Difficulty: Easy

 

At NYC's Vandaag, chef Phillip Kirschen-Clark uses beer in everything from cocktails to desserts. Kriek - lambic beer fermented with cherries-intensifies the fruit flavors in these crisps.

    

Ingredients

 

-1 1/2 pounds dark cherries, pitted

-1 1/2 cups dried sour cherries (about 8 ounces)

-1/2 cup Kriek lambic beer

-2 tablespoons honey

-1 vanilla bean, split and seeds scraped

-Kosher salt and freshly ground pepper 

-4 tablespoons unsalted butter, melted and cooled slightly, plus more for greasing

-1/4 cup almonds, coarsely chopped (about 1 ounce)

-2 tablespoons dark brown sugar

-1/4 teaspoon cinnamon

-1 teaspoon finely grated orange zest

-Pinch of nutmeg

-Pinch of ground cardamom 

    

Directions:

 

In a bowl, mix the pitted and dried cherries, beer, honey, vanilla and a pinch each of salt and pepper. 

 

Let stand for 30 minutes.

 

Meanwhile, preheat the oven to 375°. 

 

Butter six 8-ounce ramekins and set them on a rimmed baking sheet.

 

In a medium bowl, combine the sugar, flour, almonds, brown sugar, cinnamon, orange zest, nutmeg and cardamom. 

 

Stir in the melted butter. 

 

Press the topping into clumps.

 

Spoon the cherry filling into the ramekins and sprinkle with the topping. 

 

Bake for about 30 minutes, until browned and bubbling. 

 

Serve the crisps warm or at room temperature.
