Featured Beer Cocktail

Dog's Nose

 

Ingredients

 

-1 pint porter or brown ale

-2 oz gin

-1 tablespoon brown sugar

-1 pinch of nutmeg

 

Combine all in a pint glass and dust with the nutmeg.

Featured Recipe

Garlic, Cheddar, and Double IPA Soup

Difficulty: Easy

 

A healthy pour of your choice of Double IPA imparts a bold dose of bitterness that perfectly complements the sticky sweet flavor of roasted garlic permeating ever gooey spoonful of this hearty soup. 

    

Ingredients

 

Soup

 

-1 cup unsalted butter

-1 1/3 cups all-purpose flour

-1 large yellow onion, diced

-8 cloves garlic, minced

-4 cups vegetable stock

-1 cup Double IPA (Southern Tier 2XIPA, Thomas Creek Up The Creek, Dogfish Head 90 Minute IPA, Stone Runiation, Stoudts Double IPA, Shipyard XXXX IPA)

-1 cup whole milk

-3 heads roasted garlic

-1/2 teaspoon ground cumin

-2 1/4 pounds sharp white cheddar cheese, grated

-salt

-Freshly ground white pepper

-Chopped fresh chives, for garnish

 

Roasted Garlic

 

-1 head garlic

-1 tablespoon extra-virgin olive oil

-Salt

-Freshly ground black pepper

     

Directions:
 
Soup:
 

Melt 3/4 cup of the butter in a small saucepan over medium heat. 

 

Add the flour, whisking briskly to avoid lumps. 

 

Cook, stirring frequently, until the flour takes on a light blond color, about 5 minutes. 

 

Remove from the heat.

 

Melt the remaining 1/4 cup butter in a large soup pot over medium heat. 

 

Stir in the onion and minced garlic and cook just until the garlic is aromatic, 30 seconds to 1 minute. 

 

Add the vegetable stock, IPA, and milk. 

 

When the liquid begins to simmer, stir in the garlic, paprika, and cumin. 

 

Using a handheld immersion blender or in a regular blender, puree until smooth. 

 

Whisk in the flour mixture. 

 

Add the cheese a handful at a time, whisking after each addition, until melted and smooth.

 

Season with salt and pepper to taste. 

 

Serve immediately, garnishing each serving with some of the chives.

 

Roasted Garlic:

 

Preheat the oven to 350°F. 

 

Cut the top 1/4 inch off of the head of garlic, leaving the head intact but exposing the individual cloves of garlic. 

 

Place it cut side up on a large sheet of aluminum foil. 

 

Drizzle the olive oil over the garlic and season with a sprinkling of salt and pepper. 

 

Gather the foil up around the garlic, folding or twisting the top to seal.

 

Roast for 1 hour, then let the garlic cool completely. 

 

Use a fork to pull the roasted

cloves out from their papery skin. 

 

Alternatively, you can squeeze the cloves out from the bottom up using your hands.

So by now if you are a regular at one of our accounts or a regular reader of this newsletter, you probably have seen or heard about the "Drink Like a Local" movement. Aside from knowing that this is connected to local Florida beer and breweries, I thought it would be a good time to explain a bit more about this movement. Of course the foundation of the movement is about local beers, locally brewed in the state of Florida or locally owned, these beers are supporting the local economy by providing jobs and income to people that live here. In a state where the number one industry is tourism, having local breweries also contributes to the amount of beer tourists that visit as well. (Yes, beer tourists actually exist and there are probably a few reading this right now!) 

 

The movement is much more than being just about local beer though. Drink Like a Local supporters (DLAL for short) not only support our local Florida beers but also support local farms and local suppliers. A good example would be a restaurant that grows their own produce right behind their location or others that base their menu items on what is seasonally available from local farmers. Does your favorite restaurant ship in their fish from the Caribbean or do they get it from the local fisherman down the street? Are their tomatoes from NJ or from Homestead?

 

But back to the beer.... the movement is meant to encourage you to be aware of all the great beers being brewed in Florida.  DLAL spots will have a selection of great local Florida beer. They may have different ones from time to time but they will always have some type of local Florida beer. And that's what we want to see because we are finally getting great beer from Florida and now is the time to let people know about it.

 

So next time you are out...ask yourself "Do I drink like a local?"

Duvel Single - Enjoy the classic Belgian Strong Ale, now brewed for draft! This "single-fermented" ale contains all the typical Duvel flavors and aromas. It has a slightly lighter and crisper taste and is lower in carbonation. Stone 16th Anniversary IPA - This double IPA is taking IPAs in a whole new direction with the addition of rye malt and some exotic-ish additions of the lemony persuasion. It has hints of spiciness that contrast deliciously with the tropical fruit flavors and aromas of the Amarillo and Calypsp hops. They then added some European specialty malts, some lemon verbena, and three more hop varieties to the mix, and you now have a highly complex brew, melding both bitter and fruity hop notes with rich toasted malt character, punctuated by nuances of spicy rye and subtle lemon.

Samurai Krunkles - Taking the Orient and the rest of the world by storm, Krunkles returns! In this edition of the bearded IPA brewer's saga, "Samurai Krunkles", as he was once known in the Far East, pulls out all the hops from his katana's sheath to make this Asian flared brew. While traveling around the Pacific in a souped up rickshaw pulled by his trusty side kick Cato, Krunkles uncovered unique brewing ingredients such as jasmine rice, jasmine green tea and the finest ginger the Orient had to offer for this Samurai master's ale. 7.1% ABV (bottle and draft).

World Beer Production Hits New High, Says Study

TOKYO -- A new report says the world's appetite for beer hit a new high last year, with China leading the way.

 

The report released Wednesday by the research arm of a major Japanese brewery said it was the 27th consecutive year that beer production marked an increase. It attributed the rise to robust demand in Asia and developing countries.

 

The report commissioned by Kirin Holdings said 192.71 million kiloliters (50.9 billion gallons) of beer were produced last year, up 3.7 percent from 2010. China was the world's largest beer producer - accounting for about 25 percent - for the 10th straight year.

 

The United States saw a slight decrease in production from the year before but still ranked second at 11.7 percent, followed by Brazil and Russia.

 

Taste-test: Do Beer Glasses Enhance The Brew?

Of all the lessons I've learned about how to select, store and serve beer, the one area where I've slacked a bit is using the proper glassware. The glasses I use most often are a set of stemless wine tumblers. Sure, they might not be purpose-made for different styles of beer, but am I really missing out on that much?

 

I decided to find out by doing a taste-test between my trusty wine tumblers and a set of Spiegelau Classics Beer Connoisseur glasses, a collection of four crystal vessels, each shaped differently to bring the best out of certain styles of beer. 

 

The plan was simple: I'd pour the same beer into a wine tumbler and into one of the fancy Spiegelau glasses, and taste them side-by-side to see if there's difference.  And there was  - an enormous one.  It's like the first time I watched TV in HD.

No, this isn't the beginning of a tired joke, it's an increasingly common real-life occurrence. And research shows that, once inside, those avid runners-and other frequent exercisers-tend to accrue bigger tabs than the average bar patron. Picture the Cheers gang clad in head-to-toe sweat-wicking spandex.

 

A 2009 study from the University of Miami found that the more people exercise, the more they drink-with the most active women consuming the highest amounts every month. It's a peculiar phenomenon that has had scientists scratching their heads since 1990, when research first pinpointed the alcohol-exercise connection. But they expected that, at some point, the script would be flipped-that the biggest boozers would exercise less. Never happened.

 

Instead, this landmark 2009 analysis of more than 230,000 men and women revealed that, on average, drinkers of both genders and all ages (not just wild twentysomethings) were 10 percent more likely to engage in vigorous exercise like running. Heavy drinkers exercised 10 minutes more each week than moderate drinkers and 20 minutes more than abstainers. An extra bender actually increased the number of minutes of total and vigorous exercise the men and women did that week.
