Sliders with Abbey Ale Caramelized Onions

By: Institute for Culinary Education

Difficulty: Moderate

The ultimate upscale comfort food, these sliders are juicy with a tangy glaze, sweet onions, and sharp blue cheese all complement each other perfectly and the smoky bacon adds a nice crunch. Try making this with Ommegang Abbey Ale.

Ingredients

Abbey Ale Caramelized Onions

-1 tablespoon canola oil
-1 tablespoon unsalted butter
-3 large yellow onions, thinly sliced
-2 tablespoons light brown sugar
-¼ teaspoon kosher salt
-1 cup Abbey Ale

Abbey Ale Glaze

-¼ cup unsalted butter
-½ cup minced onion
-2 teaspoons minced garlic
-2 teaspoons kosher salt
-2 teaspoons paprika
-2 teaspoons chili powder
-½ teaspoon red pepper flakes
-¾ cup Abbey Ale
-¾ cup water
-½ cup cider vinegar
-2 tablespoons light brown sugar
-1 tablespoon Worcestershire sauce
-2 tablespoons molasses
-¼ cup tomato paste

Patties

-1.5 lbs. 85% lean ground beef
-¼ cup Abbey Ale
-1 teaspoon kosher salt
-½ teaspoon black pepper
-12 slices Applewood Smoked bacon
-Canola oil for brushing the grill
-12 mini brioche rolls, approximately -2 ½-3-inches in diameter, split
-4 oz. Danish blue cheese

Directions:

Preheat a gas grill to medium high heat. Preheat an oven to 400 degrees.

To make the caramelized onions, heat the canola oil and butter in a large sauté pan over medium heat.

Add the sliced onions and stir to coat with the fat.

Cook 10 minutes until onions are slightly softened, stirring occasionally.

Add the brown sugar and salt and continue to cook, stirring occasionally, another 10 minutes or until the onions start to develop some golden color.

Add the Abbey Ale and simmer the onions another 20-25 minutes until onions are softened and golden.

Add more Abbey Ale if the onions are getting too dry.

While the onions are cooking, make the Abbey Ale glaze.

Heat the butter in a medium saucepan over medium heat.

Add the minced onions and garlic and cook until softened.

Stir in the salt, paprika, chili powder, and red pepper flakes.

Cook another 1-2 minutes.

Add the Abbey Ale, water, cider vinegar, brown sugar, and Worcestershire sauce and bring to a simmer.

Whisk in the molasses and tomato paste.

Simmer until sauce is thickened, approximately 15 minutes.

Taste and adjust seasoning. Keep warm.

To make the patties, combine the ground beef with the Abbey Ale, salt, and pepper, being careful not to overwork the meat.

Form into 12 small patties, making a slight indentation in the center so that the patties cook evenly.

Cover and set aside.

To make the bacon, lay the bacon strips on a sheet pan in a single layer, slightly overlapping them.

Bake in a 400 degree oven until cooked, 10-12 minutes.

Remove from oven and drain on paper towels.

Brush the grill with oil.

Add the patties and cook approximately 3 minutes on each side, basting often with the Abbey Ale glaze until the desired doneness is reached.

Remove patties from the grill and continue to baste with the sauce.

While patties are cooking, toast the brioche rolls lightly on a sheet pan in the oven (or on the grill).

To assemble the burgers, place each patty on a roll bottom.

Top with a piece of bacon, a mound of caramelized onions, and some crumbled blue cheese.

Spread some of the Abbey Ale glaze on each roll top.

Add tops and serve with a bottle of Abbey Ale.

The fourth of July has passed and we all had a good time BBQing, blowing things up, and watching beautiful light shows. The next holiday isn't until Labor Day in September...but wait...it is Feestdag! What is Feestdag you ask? Well it is a celebration of the Belgian Independence from Dutch rule and it is celebrated on July 21st. And what better way to celebrate this by toasting and drinking some great Belgian Beers. We have lots of great accounts that are putting on events in celebration and pouring the likes of Palm, Steenbrugge, Duvel, Orval, Westmalle, La Chouffe, Estaminet, Timmermans, Maredsous, Lindemans, Leifmans, and more. See our event area for a full listing of all events on Saturday. Happy Feestdag!

Cheers,

Adam Fine

New Study Suggests Alcohol is The New Milk
By: Alan Kropf

For you ladies out there that have been drinking a daily White Russian to get your recommended supply of whatever it is in milk to fend off osteoporosis, a new study out of Oregon State University suggests that moderate alcohol consumption on its own may help prevent bone loss.

The study was published in the scientific journal "Menopause", which I personally read for its witty sense of humor and random beverage story nuggets such as this.

From the study:

A new study assessed the effects of alcohol withdrawal on bone turnover in postmenopausal women who drank one or two drinks per day several times a week. Researchers at Oregon State University measured a significant increase in blood markers of bone turnover in women after they stopped drinking for just two weeks.

What beer goes best with Swedish meatballs? Öl Mörk Lager. Translated directly to "dark lager beer," Ikea is currently selling the brew in the United Kingdom, available for in-store pickup only.

Simple drawings of hop flowers decorate the label of the 12-ounce bottle ("assembled size: 330 ml" reads the product page), along with the familiar blue and yellow logo. This appears to be a very new offering from the assemble-your-own furniture and home goods giant - the French website ikeaddict.com just added the item to its roster June 15, and a review has yet to be posted.

Few tasting reviews are available either - likely due to the beer's limited availability and newness - though several have checked in on beer-drinking social media network Untappd, noting they were drinking the brew. A slightly malty taste was the general consensus of those samplers, with a slightly sweet undertone, as one would expect from a beer of the style (though slightly watery and not robust, as one would expect of an Ikea product).

Ikea does have a large food line already

The more time I spend amongst the beer blogging community, the more I begin to realize that destination travel to indulge in fine adult beverages is no longer limited to Napa, Burgandy and Tuscany for wine or the Caribbean for fruity rum drinks in coconuts with tiny umbrellas.  With the craft beer industry growing at incredible rates, the desire to travel and discover another perfect pint makes beer tourism a whole new way to adventure.

Why is Beer Tourism so cool?

Support local communities.

While a great deal of the country is struggling with unemployment issues, the craft beer industry is exactly the opposite.  Over the past three years, big beer sales have gone down about 5%, while craft beer sales have gone up 21%.  In fact, it is estimated that last year craft beer created 100,000 jobs in the United States.  So next time you're on vacation and sitting down to peruse the drinks menu, ask your server what local brews they carry.
