Ingredients

 

-1/3 bottle of Westmalle Tripel

-1 shot of navy rum

-Bar spoon of cassis

-Dash of orange bitters

 

Flame with orange zest.

 

Optional pepper rim.

 

Shake and double strain into a martini glass.

Amber Ale Barbecue Beef

Difficulty: Easy

 

Foolproof amber ale barbecue beef recipe for the crock pot, that can easily be modified to suit your tastes and it's kosher too! Perfect for a busy weeknight meal! 

  

    

Ingredients

   

-2.5-3lb beef shoulder roast

-2 (12 oz) bottles of your favorite amber ale (Rogue American Amber, Highlands Gaelic Ale)

-1/4-1/2 cup of your favorite barbecue sauce

-Rolls

 

All Seasonings to Taste Preferences:

 

Onion powder

Garlic powder

Cayenne powder

Seasoning salt

Black pepper

Paprika

   

Directions:

 

Place roast, fat side down, in the bottom of the crock pot.

 

Pour the beer over the roast until it fills up the vessel 1/2 to 2/3 up the side of the roast vertically. 

 

Apply all of the dried seasonings to suit your tastes. 

 

Place the lid on the crock pot, and set the heat setting to low.

 

Cook on the low setting for 7 to 8 hours.

 

After it has cooked through and is fork-splitting tender, drain the vessel so only the beer, and just enough liquid to cover the bottom of the pot.

 

Pull apart the beef, and mix in the barbecue sauce (to taste).

 

Serve on roll of choice.

Cask conditioned beer is an ale that is unfiltered and unpasteurized. Fermentatable sugars are added so that the yeast can reactivate, resulting in a secondary fermentation and carbonation. The result is often a finer and softer carbonation (not flat) as well as a richer tasting product with more body, and sometimes a higher ABV, than its non-cask conditioned counterpart. Often when the beer is being transferred to these "casks" or "firkins"it allows for the addition of unusual ingredients or treatments, opening the door for a whole new realm of flavors.

 

The traditional way a cask ale or real ale, as it is also know, can be served is by placing the cask on the counter of the bar, venting the cask with a spile and finally for a direct gravity draw tap (editor note: beer geek speak for a faucet) to be hammered in, allowing beer to be directly poured out of the cask. This requires that the cask be sitting in place for a few hours to allow any yeast or other particles to settle and not wind up in your glass. Keeping the cask cold is accomplished by using an ice blanket. As you can imagine, this doesn't keep the cask very cold but good cask beer, like any good beer, shouldn't be served ice cold. Additionally since this method exposes the beer directly to air, the cask is only good for 24-48 hours at best.

 

There is another way that you can enjoy good cask beer for a longer period of time via a beer engine. This method allows the bartender to draw the beer out of the keg using a hand pump and then CO2 is pulled back into the caskthus allowing the beer to be served for weeks as opposed to days. Just be nice to your bartenders after they pour you a pint off of a beer engine, as the energy to run the pump is from physical strength. Currently only a few locations in South Florida are fitted with these beer engines. 

 

Now when you see that we are having a cask night at a bar, you will understand why it is important to be there that very night and why the cask will not last past the following day. Hopefully, you will also learn to appreciate the nuances of the different casks that we have year round and for our special events. So go out there and enjoy some Real Ale!

Shiver me timbers, Shipyard Brewing Company will be hoisting their sails and taking over the taps at World of Beer Dadeland (9010 SW 72nd Place, Suite F-101, Miami, 33156) from 7 to 10 p.m. Forget the grog and fill up on great brews such as Smashed Blueberry, Blue Fin Stout, Export, Old Thumper, XXXX IPA, Monkey Fist, and Fuggles IPA. Join us for a five-course beer dinner at Kapow Noodle Bar (431 Plaza Real, Boca Raton, 33433) as they team up with Brewery Ommegang to bring you a perfect sampling of their Asian gastro-style fare. We all know great food deserves great beer!

 

First Course - Rock shrimp tempura with sweet chili remoulade, mixed leaves, ponzu, micro wasabi greens.

July is Belgian beer month at The Blind Monk (410 Evernia St., #107, West Palm Beach, 33401) and they are celebrating with some of the finest beers made from six Trappist breweries. You can try ordering a beer in Dutch, which 58% of the population of Belgium speak, or even French, but for fun. Why not try it in Latin? Mihi cerevisiae necesse est.

Batter up at Roger Dean Stadium (4751 Main St., Jupiter, 33458) and watch the Port Charlotte Stone Crabs vs the Jupiter Hammerheads while sampling over 50 regional and national micro brews. THE BRUERY

 

Tart of Darkness - This stout, aged in oak barrels, has been treated with The Bruery's very own special blend of souring bacterias and yeast. The result is a perfectly tart yet awesomely dark and roasty sour stout. Not a style that is seen too often, and in their opinion, not a style you see often enough. 5.6% ABV (bottle only).

 

White Oak - This blended beer is 50% wheatwine aged in Bourbon barrels, and 50% Mischief. It is vivid caramel, coconut, and vanilla flavors blanketed in a crisp yet robust wheat ale. White Oak is an exercise of balance. 11.5% ABV (bottle only).

 

Fruet Fourth Anniversary Ale - In celebration of their fourth anniversary, this ale was created using the Solera method. Each year they will continue to blend old barrels of anniversary ale with a new batch of the same beer, adding an additional layer of complexity that will grow over time. This year, for the first time, they are offering the 100% burbon barrel aged version of their anniversary ale. 15.5% ABV (bottle only).

Avery Anniversary Nineteen - In excited anticipation of almost 20 years in the making, as well as the new brewery, Avery has concocted this dry and fruity tripel just for you. Experience flavors of clove, and lemon, with a medium body and a hint of peaches in the aroma. This beer is one to savor. 8.2% ABV (bottle and draft).   

BENEDIKTINER WEISSEBIER

 

Benediktiner Weissebier - A collaborative effort between Bitburger and the Erral Monastery Brewery, this refreshing German wheat beer pours yellowish-golden, with a thick, long-lasting white head, active carbonation, balanced hop bitterness, clear notes of banana and balanced fruitiness, and a certain snappiness from the wheat malt and suspended yeast. 5.4% ABV (bottle and draft).

DOGFISH HEAD BREWERY

 

Positive Contact - Dogfish Head Craft Brewery and Deltron 3030's Dan the Automator have teamed up to create Positive Contact, a hybrid of beer and cider, based on Dan's favorite ingredients and Dogfish Head's innovative brewing practices. This ale is brewed with wood pressed Fuji apples, roasted farro, a handful of cayenne peppers and a late dose of fresh cilantro. This sweet-and-sour Belgian-ish brew is a light straw color with fruity, cider-like notes. The cayenne and alcohol give it a warming finish. Positive Contact will be released in a dynamic box set of six 750-ml champagne bottles, with the 10-inch vinyl EP and the recipes from great beer chefs such as Sean Paxton an others! 9% ABV (bottle and draft).

 

 
INNIS & GUNN

 

Independence Day - Brewed to celebrate the lineage between the Scots and Americans the outcome is a light and fruity beer with notes of candied apple and marzipan. The combination of biscuit malt and citrus hops tingle the palate only diminishing after the first sip to allow the signature Innis & Gunn vanilla and oak notes to shine through. Because of this combination of Scottish malted barley and mouth-watering zesty American hops, this beer is a great partner to BBQ dishes. 7% ABV (bottle and draft). 

 

 
TERRAPIN BEER COMPANY

 

Easy Rider - Put on your helmet and get ready for the ride. This session ale is one smooth character of a beer. Brewed with an abundance of Maris Otter malt and five different hops including Galaxy hops from Australia! This golden hued honey is laid back and free wheelin'. The room filling hop aroma will take you back to your first hippie experience, while you savor the flavor of this all day sipper. 4.5% ABV (bottle and draft).

 

Road Warrior Kolsch - A kolsch is a light-bodied, lightly hopped style that hails from Cologne, Germany. This particular example has a wonderful golden color and clarity, with subtle yet present hop character. 4.8% (draft only).

Saison Du Buff Three Ways

You may have seen Saison du Buff trickling through the market over the last few months, and if you weren't around for its inaugural release in 2010, the fact that Dogfish Head, Victory and Stone each put out a version may seem confusing. Don't be confused: The three breweries collaborated on the recipe (a saison with parsley, sage, rosemary and thyme; aka Simon and Garfunkel beer), then each brewed the beer independently. With the final wave from Stone now on shelves, we decided to compare our notes and see how similar the beers tasted. Turns out, not that similar!

 

The fact that each beer varies slightly isn't that surprising: This isn't cookie cutter work. Without a doubt, each beer delivers on its promise of herbal scents and flavors, especially Dogfish Head's version. Imagine laying down in an herb garden-that's pretty much what this beer evokes. Tons of sage and rosemary hit the nose (slightly minty) while more herbs run over the tongue-a hint of sweet bubblegum connects nicely with the rosemary.

 

All About Cask Conditioned Beers

Have you ever walked into a beer bar or pub and noticed some of the taps both looked and dispensed beer differently? Or have you ever been to a beer festival, or beer event, where beer was served directly from a spigot in the side of a metal container propped up on a table? If so, then you may have already encountered cask conditioned beer. If not, then after you read this article, I hope you seek some out.

 

Cask conditioned beer, or cask ale, is beer that is both conditioned in and served from a cask. Up until the beer is placed in the cask, the brewing process is exactly the same: mash, boil, ferment. After the beer finishes primary fermentation, it is placed in a cask with finings (a substance that causes particles suspended in fluid to drop out of suspension) to help clarify the beer. Often sugar will also be added to the cask to aid with the secondary fermentation, and sometimes even extra hops. The beer is then conditioned in the cask. Conditioning is the penultimate stage in the brewing process when the beer matures, clarifies and carbonates. In the case of cask conditioned beer, there is a small amount of yeast remaining in the beer that causes secondary fermentation, which carbonates the beer. The conditioning time depends on the beer style and can last between 24 hours and 16 days. Traditionally, the casks are conditioned at the pub by the publican, but can also be conditioned at the brewery and shipped out when ready. When the cask beer is ready, the yeast and other sediment settles to the bottom, the beer is carbonated and served directly from the cask. Cask ale is always unfiltered, unpasteurized and always best fresh.  

  

Church vs Beer: Using Twitter to Map Regional Differences in US Culture

A team of geo-data experts from Floatingsheep.org have used geolocated Tweets to gauge differences in culture across the US.

 

In honour of The Fourth of July, the analysts decided to celebrate the US' patchwork society by exploring and mapping local patterns in social media using their new geo-data project, DOLLY (Data On your Local Life and You).

 

For this particular exercise they counted Twitter mentions of either 'beer' or 'church' in every US county, and then assigned each a rating according to which of the two words came out on top and by what margin.

 

Roughly 10 million Tweets were analysed for the project, with data gathered between June 22 and 28. Almost 18,000 of these included the word 'church' and over 14,000 mentioned 'beer'.
