Hard Cider Cinnamon Cupcakes with Dulce de Leche filling and Cinnamon Buttercream Frosting

Difficulty: Moderate
Cooking with beer is always fun, but baking with hard cider is awesome! These sweet dulce de leche filled cupcakes are the perfect treat for a hot summer day. Make sure you save a glass of cider to reward yourself for all of your hard work.
Ingredients
Yields 12 cupcakes
For the cake part:
-3/4 cup All Purpose Flour -3/4 cup Whole Wheat Flour -1/2 tsp. Baking Powder -1/2 tsp. Salt -1/2 cup (1 stick) unsalted Butter, room Temperature -3/4 cups Light Brown Sugar -2 eggs -3/4 tablespoon Pure Vanilla Extract -1/2 cup Hard Cider
For the filling:
-7 Tbsp Dulce De Leche
-2 tsp Hard Cider
For the frosting:
-1/4 cup butter, room temperature -1 1/2 cups powdered sugar, sifted -1 1/4 tablespoons Almond Breeze Unsweetened Vanilla milk -1/2 teaspoon vanilla extract -1/2 teaspoon cinnamon
Directions:
Line a muffin pan with cupcake liners and preheat the oven to 350 degrees F.
Combine the flour, baking powder, and salt in a medium bowl.
Set aside.
In a larger bowl, beat together the butter and brown sugar until light and creamy.
Add the eggs, one at a time, until fully incorporated.
Mix in the vanilla extract.
Add the flour mixture, alternatively with the hard cider, beginning and ending with the flour.
Divide the batter among the prepared baking cups.
Bake the cupcakes until a toothpick inserted into the center comes out clean, about 20 minutes.
Remove the cupcakes from the oven and allow them to cool in the pan for a couple minutes.
Transfer the cupcakes to a cooling rack to cool completely.
Once they are relatively cool, cut small holes inside in the middle with an apple corer or a knife.
Go about 3/4 of the way down the cupcake, be careful not to go all the way down.
You can take the inside of the cake out with a knife or your finger. Be gentle.
Take the dulce de leche and put it in a small bowl. Add the hard cider to soften it up and make the mixture more creamy.
Stir it up with a spoon until it reaches a nice creamy consistency.
Transfer the mixture to a piping bag and pipe it into each hole of a cupcake to the top. You can use a large ziplock bag with one of the ends cut out to make your own piping bag.
To make the frosting, place butter in a large bowl.
Beat on low for 30 seconds.
Add the powdered sugar in, about 1/2 (I did it by 1/4) of a cup at a time.
Beating on low between each addition.
You may need less than the ingredients say to reach the perfect consistency because of the gradual mixing of sugar and butter.
Once it reaches the perfect "just stiff enough" consistency, add the milk, vanilla, and cinnamon.
Beat on medium for 1 minute. You can add additional powdered sugar if the frosting is too liquidy. If the frosting is too hard, add more milk.
Frost the cupcakes as desired.
Voila!

Wow..what a week last week! My liver is still recovering from the onslaught of events for American Craft Beer Week. It is hard to imagine that we put on or participated in over 50 events in one week. Although, I couldn't attend all (I don't think anyone could), the ones I went to were a good time. I want to thank all of you that came out and participated. I hope all of you had a good time and enjoyed some of the great beers that we brought in just for ACBW. I think we had a cask pouring somewhere every night of the week. That is a first for South Florida! Other firsts include the Comic Book and Brews night where over 50 people showed up dressed like their favorite Superhero's. Take that Halloween! How about the Skype's with some of the brewers? How often do you get to talk to the people who make your favorite beers? Pints and Putters golf tournament. Beer and golf is a pretty common thing, but Putt Putt golf and beer...now that is a great combination. Then there was the Tequesta Pool Party in North Miami...it may have been raining a bit but who cares as long as you are in your bathing suit and have a beer in your hand.
So another year is complete, but the events are still going on. I count another 15+ just below. So check 'em out. And I would feel remiss if I didn't mention the opening of a new production brewery in our own backyard. Due South Brewing opened it's doors just in time for ACBW. You can stop by (Sunday through Thursday 12 to 10 p.m. and Friday and Saturday from 12 to 11 p.m.) and sample some of their wares such as Caramel Cream Ale, Cat 3 IPA, and Honey Wheat. And you can count on Mike to have a few other offerings available as well. They are located up in Boynton Beach which may be a bit far for some of you but the good news is that there is a Tri-Rail station located just around the corner. So hop on that train and head over for a pint. You can't get a DUI riding a train!

CARIB BREWERY Mackeson XXX Stout - This is a high alcohol version of the British Mackeson Stout, which is a traditional milk stout. It is smooth and slick with a nice amount of carbonation. 4.9% ABV (bottle only).

Indie Pale Ale - Finally a hoppy East Coast IPA! This beautiful red-orange ale has a full malty body, balanced by fruity apricot and grapefuit hop character. Mounds of dank Summit hops provide a deliciously quenching finsh to this East meets West coast ale. 6.5% ABV (bottle only).
Summer of Lager - A light lager released at the beginning of the summer when Nantucket is just getting it's groove on! It's a classic Bavarian style lager with delicious malt palate and an assertive noble hop finish. DOGFISH HEAD BREWERY
Urkontinent - A social collaboration of worldwide proportions with ingredients from all over the world including; wattleseed from Australia, toasted amaranth from South American, rooibos tea from Africa, myrica gale from Europe, and honey from the United States. The name is a German word for the theory that all of the continents were once connected. The careful combination of ingredients gives this Belgian dubble complex coffee and chocolate-covered cherry notes. 8% ABV (bottle and draft).
DUE SOUTH BREWING COMPANY
Caramel Cream Ale - The nice caramel notes will bring to mind memories from your childhood of savoring soft caramel candies. This ale is dry-hopped with vanilla to give it a pleasing, round finish. 5% ABV (draft only).
Category 3 (Cat 3) Florida Style IPA - Brewed with loads of malts and loads of hops, this golden India Pale Ale is true to the style while maintaining a balance between matly and bitter. A special blend of American hops give this beers its unique flavor. Although fruity and citrusy, this beer has only four ingredients: malt, hops, yeast, and water. 6.1% ABV (draft only).
Southern Saison - The light golden color and body of this Belgian ale give no indication of the intense flavor within. One whiff of its large rocky head will leave you curious about this fruity, farmhouse ale. Brewed with Carribean spices, this Southern Saison is a truly unique beer. 5.6% ABV (draft only).
Honey Vanilla Wheat - Golden and silky are the best ways to describe this seasonal beer. Golden in color and flavor, this surprising beer has a smooth and drinkable honey sweetness. It's finished off in the fermenter with vanialla which adds a complexity to this easy drinking beer. 4.8% ABV (draft only)
FLYING DOG BREWERY
Wild Dog Barrel-Aged Gonzo - Hunter S. Thompson once said, "When the going gets weird, the weird turn pro." Consider this their professional version of Gonzo Imperial Porter. Aged and seasoned for three months in wood barrels from their neighbors at Stranahan's Colorado Whiskey, this ale has a well-balanced taste and abundance of character. The taste will remind you of sweet chocolate, dry oak, and smooth whiskey with a memorable, velvety mouth-feel. 9.5% ABV (draft only).
MACTARNAHAN'S BREWING COMPANY
Full Bloom Craft Lager - With beginnings reminiscent of a Bohemian pilsner, this bountiful craft lager is a refreshingly hoppy Northwest experience. 6.3% ABV (bottle only).

The 9 Beers You're Drinking This Summer

We like light beer from a can as much as the next guy. But there's more to beer these days than chugging Miller High Life at a cookout. Let's face it: beer has gotten more complicated, more nuanced, more intimidating. But it's all the better for it. There's more variety and quality in the beer world than ever before, and it's not just about what you're drinking anymore but what you're drinking it in and what you're drinking it with.
We got Anne Becerra, New York's first female cicerone (the equivalent of a wine sommelier) from beer bar The Ginger Man in New York City, to suggest the nine beers we should be drinking this summer. And we've paired them with the best meals for each as well as what to drink them out of - courtesy of Spiegelau glassware.

More Breweries. Less Beer.

Earlier this year, we wrote about Kings County Beef Jerky, an artisanal jerky company in Brooklyn (of course). Sure, it's easy to mock artisanal jerky companies. The jokes basically write themselves.
But the company may represent the future of U.S. manufacturing. We wrote:
The Kings County approach is a model for how manufacturers in many sectors can do better. Ignore low-priced commodity products. Focus instead on customizing high-quality goods for a select audience willing to pay a premium.
The same idea turns out to hold true for beer. Beer production has been flat in the U.S. for decades - it's actually a tiny bit lower than it was 30 years ago (find a comprehensive data set here). And the number of big breweries has gone down.
But over the same time, the number of small, independent breweries in America has exploded.

In the last ten to fifteen years, the beers of the Belgian and Dutch Trappist Abbeys have become increasingly popular and highly regarded in the U.S.A. among beer lovers.
Whenever an individual, product, or service becomes held in high esteem, it is common for it to be emulated. As the old saying goes, imitation is the sincerest form of flattery.
Commercial breweries and homebrewers stateside have been emulating beers such as Chimay Blue, Orval, Rochefort 10, Westmalle Tripel and Westvleteren 12 for many years. Achel Extra and La Trappe Quadrupel enjoy a similar reputation for high quality nowadays.
However, there are an increasing number of commercial breweries in the U.S. that use the word "Trappist," or some variant thereof, to name or describe certain beers that they produce. This worries the Trappist monasteries that brew beer, as Trappist is not a style of beer. It is an appellation, and a guarantee of provenance!
