Featured Beer Cocktail

Holy Mack-A-Rita

 

-1 oz of Triple Sec

-1/2 oz of Lime Juice

-4 oz of Holy Mackerel Panic Attack

-Ice

 

Combine all the ingredients in a shaker and mix well. Pour over ice and serve with a lime wedge.

Jeremiah Red Baby Back Ribs

Difficulty: Moderate

 

A great red ale such as Summit Red Ale, enhances the flavor in these mouthwatering barbecued baby back ribs, a summer favorite! 

    

Ingredients

 

Basting Sauce ('moppin')

-1 tsp salt

-1 tsp black pepper

-1/4 cup Red Ale

-1tsp garlic powder

-1 tsp red chile powder

-1 tsp paprike

-1 tsp Louisiana hot sauce

-1 Tbsp Worcestershire sauce

-1/4 cup vegetable oil

-1/4 cup butter

 

 

BBQ Sauce ('soppin')

-1/4 cup butter

-1/4 cup peanut oil

-1 yellow onion, minced

-6 cloves of garlic, minced

-1 1/2 cups ketchup

-1/2 tsp Louisiana hot sauce

-1/4 cup brown sugar

-1/4 cup molasses

-1/4 cup cider vinegar

-1 cup red ale

-1/4 cup water

-2 tsp lemon juice

-1 Tbsp liquid smoke

-1 bay leaf

-2 tsp dry mustard

-1/8 tsp thyme

-1/2 tsp cayenne pepper

-1 tsp salt

-1/2 tsp black pepper

 

Baby Back Pork Ribs 10 lbs (Approximately 6 racks)

-3 1/2 gallons water

-1/4 cup salt

-1 yellow onion, chopped

-2 bay leaf

-2 cups of red ale

-2 Tbsp black peppercorns

-2 Tbsp liquid smoke

 
Directions:
 
Basting Sauce Instructions ('moppin'):

 

Mix ingredients together in a 1˝ quart saucepan. 

 

Heat over medium-high heat until butter melts (approximately 180 degrees) stirring often.

 
BBQ Sauce Instructions ('soppin'):

 

In a heavy 2 quart saucepan over medium heat, melt butter and oil. 

 

Add onion and sauté until it is slightly caramelized, approximately 5 minutes. 

 

Add garlic and sauté another minute. 

 

Add all remaining ingredients, stir well. 

 

Raise heat to high, bring to a boil and stir constantly for 5 minutes. 

 

Reduce heat to low and simmer for 1 hour, partially covered, stirring occasionally.

 

Note: Sauce can be used immediately or if preparing ahead of time, cool sauce completely, under refrigeration. 

 

Prior to using, reheat sauce to a minimum of 180 degrees.  

 

Sauce may be refrigerated for up to one week.

 
Baby back Rib Cooking Instructions:

 

In a large stock pot, combine all ingredients except ribs and bring to a boil for 5 minutes. 

 

Add ribs to pot and return to a boil, immediately turn off heat and allow ribs to 'soak' for 10 minutes.

 

Remove ribs from liquid and allow them to cool at room temperature for 15 minutes. 

 

Baste ribs with basting ('moppin') sauce, both sides. 

 

Place in a storage container, cover and place in refrigerator for 12 to 24 hours.

 

Prepare a BBQ hardwood is best, but gas or charcoal work just as well. 

 

Heat should be medium, 350-400 degrees and grates at least 4"- 6" from heat source. 

 

Place ribs bone side down. 

 

Begin basting ('moppin') ribs on each side, from end to end, evenly turning every 6-8 minutes. 

 

Baste for approximately 1 to 1 ˝ hours until tender to the touch.

 

Baste the ribs with the BBQ ('soppin') sauce for 15 minutes turning and basting often until glazed and lightly charred. 

 

Serve with extra BBQ sauce.

If you have a drinking hat...now is the time to put it on because American Craft Beer Week is upon us. Dubbed the "Mother of All Craft Beer Weeks" ACBW is sure to have at least one event you are going to want to attend. With 50 events planned for South Florida alone (yes that is not a typo....we really do have 50 events planned!!), there is bound to be at least one or two in your neighborhood. And if you are adventurous we have several that are worth driving many miles for. East coast vs. West Coast hop showdown, Comic Books and Brews, Beer and Cheese Pairings, Pool Parties, Beer Dinners, Tap Takeovers, Skypes with Brewers, Pub Crawls (notice plural), and a Pints and Putters Golf Tournament. Leading up to the week, we even have a new brewery opening up right here in our backyard, Due South Brewing opening their doors this weekend (more details below). Sound like fun? Be sure to check out our website and our Facebook page for complete details of all the beer related fun. Hope to see you at a few events...I can't make all 50 but I will sure try to make quite a few!

Pink Pedals to Pints is a Sunday evening ride for the ladies (gentlemen are also invited) that honors women past and present and recognizes the freedom bicycles have offered women across the world. Pedals up at 7 p.m. at the Government Center Metro Station (111 NW 1st St., Miami, 333128) and enjoy a nice leisurely ride down to The Lokal (3190 Commodore Plaza, Miami, 33133) were they are offering a ladies only deal of 2-4-1 beer or wine.   • World of Beer Dadeland (9010 Sw 72nd Place, Suit F-101, Miami, 33156) will be hosting an Oskar Blues night. It is rumored something Deviant will be making an appearance.     
  • DB Bistro Moderne (255 Biscayne Blvd. Way, Miami, 33131) will be hosting a Cigar City beer dinner. The cost will be $55 per person plus tax and gratuity and please call 305-421-8800 for reservations ASAP.  
  • World of Beer Coconut Creek (4437 Lyons Rd., Coconut Creek, 33073) will be hosting a "Craft in Cans Night". Break out your favorite koozie and check out those cans! Hubba! Hubba!
  • Total Wine Pembroke Pines (15980 Pines Blvd., Pembroke Pines, 33027) will be hosting a special event from 6:30 to 8:30 p.m. with Bob from Holy Mackerel and Jason Silvinac from Shipyard.   • Five Point Lounge (2608 S. Federal Hwy., Fort Lauderdale, 33316) will be sampling out 7 craft beers while jamming out to live music from 9 to 11 p.m.
  • Funky Buddha Brewery and Lounge (2621 N. Federal Hwy., Boca Raton, 33431) will be doing a live interactive Skype session with Southern Tier Brewery. Get to talk with the brewers as you drink their favorite Southern Tier beers!
  • Select South Florida Total Wine and More locations will be giving  your chance to learn about the history and importance of the India Pale Ale and sample its various sub-styles during this series of classes. Friday - May 18

  • Have fun at the Clematis Craft Beer Pub Crawl. Put on your swimsuits, floppy hats, and silly beach towels as you crawl to the finish line. Stop at Roxy's, Grease, and World of Beer to name a few, for featured drafts and beer cocktails.
  • Lucky Liquors (7807 Bird Rd., Miami, 33155) will have a craft beer tasting for $12 per person from 7 to 9 p.m and you will get a $5 credit for any craft beer purchase.

  • Due South Brewing Company (2900 High Ridge Rd., #3, Boynton Beach, 33426) will be having a night of locally brewed beer, food trucks, and games starting at 5 p.m. 

Saturday - May 19 

  • Have fun at the Boca Raton Pub Crawl with stops at the Lion and Eagle, Funky Buddha, O'Brian's, and Biergarten. Each bar will be showcasing a different brewery and will beer specials. The crawl runs from 4 to 8 and is $10 per person which gets you on the bus to all these great stops. 
  • House of Brews (3311 NW Main Ave., Jensen Beach, 34957) will be hosting a Swamp Head tap take over. 
  • Parrot Lounge (911 Sunrise Lane, Fort Lauderdale, 33304) is celebrating ACBW with specials on select craft beers all day including Victory, Penn, Magic Hat, and more. The fun starts at 12 p.m.
  • The Coffee District (325 NW 2nd Ave., #104, Delray Beach, 33444) will feature your favorite local breweries (Cigar City, Tequesta, Due South) as they show off their limited release drafts and special casks.
  • Lou's Beer Garden (7337 Harding Ave., Miami Beach, 33141) will be holding a Tequesta Tap Takeover and Pool Bash from 1 to 8 p.m with a special cask from Tequesta!  
  • All South Florida Total Wine and More locations (with classrooms) will be holding a "Hooray for IPA" class that you can learn about India Pale Ale while sampling its various sub-styles. Register in advance at totalwine.com.
  • The Second Annual Ales on the Ave. Pub Crawl will feature three stops (Park Tavern, Tryst, Coffee District), each with unique beers on tap and in cask! The crawl starts at 4:30 p.m. at Park Tavern.
  • Texas Hold'em BBQ (1025 N. Federal Hwy., Fort Lauderdale, 33304) will be having craft beer specials all weekend to culminate ACBW! 
  • Cervezas (5835 Sunset Drive, Miami, 33143) will be hosting a cigar and Cigar City Brewery pairing. They will be limiting this event to 25 people, so make sure you get there early. Handlebar mustaches and top hats are encouraged. 
  • Park Tavern (32 SE 2nd Ave., Delray Beach, 33444) will be having an "East vs West" tap takeover with Dogfish Head and Avery. Who will reign supreme? Only you can tell.  

Sunday - May 20

  • Putt'n Around (350 NE 5th Ave., Delray Beach, 33483) will be hosting a mini golf tournament and craft beer day from 11 to 5 p.m. Channel your inner Caddy Shack characters and the most outrageous golf attire will be rewarded.

May 24

Join us for an Ommegang Pint Night at World of Beer Coconut Creek (4427 Lyons Road, Coconut Creek, 33073)! Lava Lake Wit - This Ale is their take on a classic Belgian Wit Beer. The Beer Guy Previews American Craft Beer Week

The business of craft beer is booming. And that means American Craft Beer Week 2012, which runs Monday through May 20, will be bigger than ever.

 

"While craft is booming everywhere, it's especially true in South Florida," according to John Linn, baron of beer happenings for Brown Distributing Co. in West Palm Beach.

 

While the nation's craft brewing industry was up last year (13 percent by volume, 15 percent by dollars), its growth was puny in comparison with South Florida's.

"Our Specialty Division sales (Palm Beach to Key West) were up 84 percent from 2010 to 2011," says Linn.

 

Part of that growth can be seen and tasted daily at the Tequesta Brewing Co., where brewers Matt Webster and Fran Andrewlevich have been bubbling up daily batches without much respite. They'll celebrate American Craft Beer Week (ACBW) in style with a special release of an Imperial Red Ale made with a hop from a central Washington farmer.

 
 
Beer Mash Fattening Cows, Trimming Costs in Colorado

Explosive growth in Colorado's craft-brewing industry produces not only more beer, but more beer byproducts.

 

That means the hamburger you eat next week may come from a steer happily fed last week with brewing leftovers.

 

Using spent grains for livestock feed dates to the advent of beer. But with corn and other commodity prices sky high, feedyards increasingly are using brewing byproducts to help fatten cattle in preparation for slaughter.

 

"They say that Colorado is the Napa Valley of beer, and there are a lot of breweries here producing a lot of spent grain," said Joe Schiraldi, vice president of brewing operations for Boulder-based Left Hand Brewing.

 

Shipping processed barley to livestock feeders "really helps their economics," Schiraldi said. "It's a great way to direct that waste stream."  

 

Some brewers give their spent mash away. Others receive about $5 to $10 per ton for the wet grains.

 

Either way, it must go. Craft brewers have little storage for used grain, and production bottlenecks quickly materialize without disposal.

 
World Beer Cup Announces Winners at Craft Brewers Conference

Winners of the World Beer Cup -- unofficially dubbed the "Olympics of beer competition" -- were announced early Sunday morning at the conclusion the 2012 Craft Brewers Conference, which hosted the event.

 

The biannual competition, now in its ninth year, featured submissions from 799 breweries across 54 countries and 45 U.S. states. In all, 3,921 beers in 95 style categories were considered. Five breweries and brewmasters were named champions in various size categories. Sixty-seven percent of the 211 judges were from outside of the U.S., spanning 26 countries abroad. Taste tests were blind to eliminate the possibility of bias.
