Mussels and Belgian Wits 

  

Mussels have been consumed by humans for thousands of years and are particularly popular in Belgium, the Netherlands, and France. They are often consumed with french fries and Belgian wits. The lemony flavor and coriander spiciness of a great Belgian wit goes well with the smooth, saltiness of fresh mussels. Mussels can be smoked, boiled, steamed, or fried in batter. So next time try a Blanche de Bruxelles or an Avery White Rascal with your mussels. It will be pairing you will soon not forget.

Mussel Soup with Wheat Beer and Star Anise

Difficulty: Moderate

 

John, a chef and blogger living in Rome, Italy, shares his recipe for a rich mussel soup. Recreate this recipe with your favorite Belgian Wit and serve with your favorite local bread.

    

Ingredients

  

-2 lbs mussels

-3 shallots or 1/2 onion
-1 stalk celery
-A small piece of fennel
-A small carrot
-1 bay leaf
-2 cloves garlic
-1 generous Tbsp butter 
-4 cups milk
-1 star anise
-1/2 bottle wheat beer 
-Marjoram or oregano
-sumac (if available) 

 

Clean the mussels by rinsing them under cold water, scrubbing them and removing the "beard". 

 

Make sure to throw away any mussels that are open (and won´t close if you tap them hard), broken or damaged in any way.

 

Start by chopping all the vegetables except the garlic into very small pieces.

 

Peel the garlic cloves and lightly 

crush them. 

 

Put the vegetables in a pan together with the butter, bay leaf, sprig of marjoram/oregano and the garlic.

 

Cook over medium-low heat for a couple of minutes until soft but not brown. 

 

Add the mussels. 

 

Add 6.5 ounces of water, cover and bring to a boil. 

 

Reduce heat and simmer until the mussels have opened (about 5-6 minutes). 

 

Discard any mussels that remain closed.

 

Strain the liquid into a saucepan, add the milk and the star anise. 

 

Boil gently for about 10 minutes. Remove from heat, discard the star anise and then add the beer. 

 

Add salt to taste.

 

Arrange the mussels in serving bowls, mix the soup with an immersion blender to create a nice froth and then pour it over the mussels. 

 

Pick some leaves of marjoram/oregano and put them on each plate. 

 

Finally sprinkle a small amount of sumac on top.

 

Serve with rye or sourdough bread.

 

Pair with Blanche de Bruxelles, Avery White Rascal, or Steenbrugge Wit.

Well it is that time of year again....Time for the Mother of all Beer Weeks...American Craft Beer Week. It is a time to celebrate all that is beer in America from your  lightest pilsner to your darkest stout.  But just remember, it is American craft beer week so make sure the beer you are drinking is brewed in America. By drinking American craft beer you can be sure that you are keeping your hard earned cash right here in the good ole' USA. You are not only generating profits for small businesses...you are employing hard working Americans. And if you have ever homebrewed, you have an idea of how very hard working these people are. From the Brewmaster to the employee packing up the POS materials and t-shirts, you are generating income for each and everyone of those Americans and their families.

 

And American Craft Beer Week is the ultimate way to help out the US economy. With the dozens of events on our calendar, not only will you help drive the job market in brewing forward but don't forget about all the others that you are helping also servers, bartenders, managers, delivery drivers, warehouse workers, and the list can go on and on.  So be sure to join us for at least an event or two. Bone Valley Brown Ale
 - This brown ale is a sessionable, highly hopped American brown ale with rye added. It has large forward citrus hop bitterness and aroma with light spicy notes from the rye and moderate chocolate character. The perfect beer for hop heads who want to have an extended humulone experience without being overtaken by alcohol early in the evening. 5% ABV (draft only).

 

  

CRAZY MOUNTAIN BREWING COMPANY

  

Amber Ale - This delightfully floral American style Amber Ale displays a wonderful balance while still maintaining a profound hoppy goodness. We load this beer with a ridiculous and obscene amount of West Coast hops that are added late in the boil, resulting in a hoppy beer without any bitterness. 5.25% ABV (can only).

  

Lava Lake Wit - This Ale is their take on a classic Belgian Wit Beer. To make this beer unique, they add un-malted wheat, rolled oats, two varieties of classic European hops, chamomile, curacao orange peel, coriander, grains of paradise, and a rare yeast strain from the Old Country. This is a beer that can be enjoyed year-round, whether on the slopes on a beautiful bluebird day, or lazily fly fishing in Lava Lake. 5.2% ABV (can only).

  

Mountain Livin' - They utilize two types of American hops in such a way that they put the flavor of these hops center stage and let their bitterness fade into the background. The hop forward character of this beer is represented not in its bittering qualities, but in the unique, fruit forward flavor of two new and somewhat experimental American hop varieties. Enjoy this beer with a fresh approach to how a Pale Ale expresses its inner hoppiness. 5.7% ABV (can only).



BISCHOFF PREMIUM

Pilsner - This award winning pilsner is brewed with premium, hand-selected hops that create a fresh, traditional pils tasted that is love by beer drinkers around the world. 4.7% ABV (bottle and draft).

Black Lager - A classic German "schwarzbier" or "black beer" with a traditional black color and a full but mild taste. 5.2% ABV (bottle and draft).

Hefeweizen - A traditional wheat beer that is a delight for all occasions and a refreshing experience during all seasons. 5.2% ABV (bottle and draft).

Doppelbock - A strong, full-bodied bock beer that gives you wings due to its' inner strength and richness. 7.5% ABV (bottle and draft).
 
 
GAFFEL KOLSCH
 
Gaffel Koelsch - This particularly fresh, specialty beer from Cologne, brewed according to a time-honored family recipe and German Purity Law of 1516 with water, malt, and hops. The delicately bitter, pleasant, slightly hopsy taste is characteristic of this traditional product and clearly distinguishes Gaffel Koelsch from all other Koelsch brands. 4.8% ABV (bottle and draft).  
 
 
OSKAR BLUES BREWERY
 
Deviant Dale's - Born at the corssroads, in a juke joint, as if Dale's Pale Ale sold its soul to balance Deviant's foreboding aromas of citrus, grapefuit rind and piney resins with a copper ball-of-fire color and inscrutable finish. 8% ABV (draft for now...).

BRASSERIE D'ACHOUFFE

 

La Chouffe - The legend of the gnomes (of Chouffes) who once brewed in this small area in France, inspired this lovely golden ale. Brewed with spices and bottle-conditioned, La Chouffe pours orange-yellow with a lush head. Fruit, hops, and citrus aromas and tastes abound, with a spicy finish. 8% ABV (bottle and draft).

 

McChouffe - This strong brown ale is dark, earthy-hued and spicy. It is brewed with Pilsner malts and English Golding and Saaz hops. The appearance is deep brown and the aroma is fruity and zesty. This is a full-bodied beer with hints of fruit, spice, plums and raisins. It has a complex and lingering fnish with a lush and smooth mouth feel. 8% ABV (bottle and draft).

Houblon Chouffe - In his travels around the globe, the little Chouffe wandered through beautiful hop fields. The overwhelming aromas such as Tomahawk, Amarillo and Saaz mesmerized him. Back home he brewed his favorite ale, a Belgian Tripel with these new found hops. It's a great quaffing beer. 9% ABV (bottle and draft).

 

BREWERY OMMEGANG

 

Abbey Ale - This abbey ale is directly influences by the patience and wisdom of the Trappists, who ever seek divine union. Dark, ruby in color with coffee, chocolate, banana, roasted nut, and gingerbread aromas. The mid-palate brings prune and raisin with hints of pepper and more chocolate. The finish is dry on the tongue with a deep, sweet caramel finish. Suitable for cellaring. Enjoy with roasted meats, rich sauces, desserts, or as a meal by itself. 8.5% ABV (bottle and draft).

  

Hennepin Saison - This saison is a delicious brew for all seasons. Spicy and refreshing, it also has a high alcohol content to keep you warm throughout the winter months. Luminescent, golden color with aromas of citrus and yeast. Mid-palate brings a balance of orange peel, sweet malt, bitter hop, and ginger. The finish has a peppery kick with lemon and hops in the finish. Suitable for cellaring. Enjoy with fresh fruit, cheeses, and spicy foods. 7.7% ABV (bottle and draft).

  

Witte - Hazy pale gold topped by a huge white frothy head. Witte has a soft, supple mouthfeel and aromas of coriander, oranges, and wheat. Its slight malty sweetness is balanced by citrus notes and a tart, dry finish. It is the perfect thirst quencher. Pair it with light and summery foods such as barbeque, salads, and picnic fare. 5.1% ABV (bottle and draft).

  

Rare Vos Amber - This Belgian Amber is styled after the smooth, drinkable beers popular in Belgian cafes. In fact, it's named after one just outside of Brussels: De Rare Vos, which translates as The Sly Fox. This sly fox has a beautiful tawny color with a balanced citrus, hop and caramel malt aroma. Mid-palate is smooth and mellow. It finishes with a perfect blend of fruity yeast and malt with a subtle yet addictive hoppy finish. Enjoy as a session beer or with mussels, fries, and other pub foods. 6.5% ABV (bottle and draft).

  

Three Philosophers Quardrupel - A dark, mysterious cherry-chestnut color. Flavors of dried dark fruit, chocolate, toffee, and caramel lend to the overall port-like aroma. Mid-palate shows a soft malt center which gives way to a dry, warm, wine-like finish. The strength and complexity of this beer make it a good candidate for ageing gracefully, as spicy sherry and port notes should intensify. Enjoy with rich cheeses, desserts, or as a digestif. 9.8% ABV (bottle and draft).

 

Belgian-style Pale Ale (BPA) - This fine pale ale has citrus and tropical fruit aromatic shared with a well-balanced - yet abundant - hop character. It uses their own Belgian yeast, five malts, two hops, and plenty of patience. Finishing touches include dry-hopping with Cascade hops and warm-cellaring. 6.2% ABV (bottle and draft).

 

Art of Darkness - This limited edition ale is dark and magical, with champagne-like carbonation and rich maltiness from a complex of recipe of multiple barley and wheat malts, as well as flaked oats. 8.7% ABV (bottle and draft).  

 

DUVEL

 

Duvel - The rich, color, flavor, aroma, and the soft meringue like head of Duvel does not come from cosmetic tricks or additives. These qualities come from a highly sophisticated and unique brewery techniques used by the Moortgat brewery, including bottle conditioning followed by six weeks of cold cellaring at 41 degrees F. 8.5% ABV (bottle only). 

 

 

LIEFMANS

 

Fruitesse - This unique, fresh beer blend, matures for 18 months on cherries in the Liefmans cellars. Then it is artfully blended with natural juices of cherry, bilberry, elderberry, strawberry, and raspberry. The result is a fruity, pleasantly sweet, sparkling, and refreshing beer with a soft foam head. 4.2% ABV (bottle and draft).

 

Cuvee-Brut - This Kriek is made with a completely different method then the Kriek Lambic. It starts with old brown beer which is macerated with fresh whole cherries in shallow, horizontal tanks. Then is matures for about one year, afterwards it is blended with both Oud Bruin and Goudenband of different ages. The result is a well-balanced sour and sweet Kriek of great complexity. 6% ABV (bottle and draft).

 

Goudenban - This brown beer is brewed with special malts and matures for four to eight months in the cellars. The taste of this typical provision beer evolves positively over time. 8% ABV (bottle only).

Triple - This golden-bodied triple is replete with a festive sparkle, complex aroma, lush body and creamy head. Beer Makes Men Smarter: Males Solve Brain Teasers Better After Consuming Alcohol, Researchers Say

Beer makes men smarter.

 

So say researchers at the University of Illinois in Chicago.

They found that men with a couple beers under their belts were actually better at solving brain-teasers than their sober counterparts.

 

To reach that surprising conclusion, the researchers devised a bar game in which 40 men were given three words and told to come up with a fourth that fits the pattern.

 

For example, the word "cheese" could fit with words like "blue" or "cottage" or "Swiss."

 

Half the players were given two pints. The other half got nothing.

 

The result? Those who imbibed solved 40% more of the problems that their sober counterparts.

 

Also, the drinkers finished their problems in 12 seconds while it took the non-drinkers 15.5 seconds.

 

"We found at 0.07 blood alcohol, people were worse at working memory tasks, but they were better at creative problem-solving tasks," psychologist Jennifer Wiley reported on the Federation of Associations in Behavioral and Brain Sciences (FABBS) site.

 

Wiley conceded that her findings run counter to popular belief that alcohol hinders analytical thinking and muddies the mind.

 

"We have this assumption, that being able to focus on one part of a problem or having a lot of expertise is better for problem solving," says Wiley. "But that's not necessarily true. Innovation may happen when people are not so focused. Sometimes it's good to be distracted."

A brew and a bro - it's the classic pairing, right? Not necessarily.

From the rise of female brew masters to the growth of women's tasting groups, women are becoming much more than a pint-sized part of the brewing world.

 

The emergence of women as both beer-lovers and brewers happened as the craft beer scene grew overall by leaps and bounds, and that's no coincidence, says Lisa Morrison, Oregon-based writer, blogger and author of "Craft Beers of the Pacific Northwest."

 

"I think that women are finally discovering, thanks to craft beer, that beer has flavor," she says.

 

"When we start getting into the artisan stuff you start realizing that there's an entire rainbow of flavors that you can enjoy. And because of that you can pair that with all kinds of different food flavors," Morrison says. "Women love food. We love cooking. We love tasting food. We love sampling different things. So when you put all that together, the cooking with beer, the pairing food with beer, the whole wide-ranging genre of beer styles and beer flavors - it's something that women can get really excited about."

 

Alabama Bans Craft Beer Over Dirty Name

BIRMINGHAM, Ala. (AP) - You can buy Fat Bastard wine in Alabama, but you'll have to go elsewhere for Dirty Bastard beer.

 

The state alcoholic beverage control agency said Thursday it has banned the sale of that brand of beer in the state because of the profanity on its label.

 

Beer and wine are commonly sold in grocery and convenience stores and anyone can see the labels, so staff members rejected the brand because parents may not want young people to see rough language on the shelves, said Bob Martin, an attorney with the Alabama Alcoholic Beverage Control Board.
