Beer-Braised Chicken

Difficulty: Easy
Beer is the beverage that makes your food just taste better! The beer will really enhance the flavor of the bacon, while keeping your chicken moist and flavorful. This recipe will be sure to please even the pickiest gourmet at your table!
Ingredients
-1/4 pound slab or thick-cut bacon, cut in 1/2-inch pieces
-8 skinless, boneless, chicken thighs (about 2 1/2 pound)
-Kosher salt and freshly ground pepper
-All-purpose flour, for dredging
-1 Tbsp extra-virgin olive oil
-1 (12-ounce) bottle beer (preferably brown ale)
-1 cup frozen pearl onions, thawed
-1/2 pound small red-skinned new potatoes, halved
-2 Tbsp while-grain mustard
-2 Tbsp packed dark brown sugar
-4 sprigs fresh thyme
-3 Tbsp chopped fresh parsley
Heat a large pot over medium-high heat.
Add the bacon and cook until browned, about 5 minutes.
Remove with a slotted spoon and transfer to a paper-towel-lined plate.
Season the chicken with salt and pepper and dredge in flour, shaking off the excess.
Add the olive oil to the drippings in the pot.
Add the chicken in batches and cook over medium-high heat until golden on the bottom, 6 to 7 minutes, then flip and sear the other side, about 1 minute.
Add the beer, onions, potatoes, mustard, sugar, thyme and 1 cup water to the pot and stir, making sure the chicken is fully submerged.
Simmer until the chicken is cooked through, about 15 minutes.
Discard the thyme and stir in the bacon and parsley.
Pair with a Cigar City Maduro, Native Eleven Brown Ale, or Avery Ellie's Brown Ale.

 I have come to the conclusion that now is the season of craft beer. I'm not talking about spring, summer, fall and winter...I'm talking about the maturation of the entire country and for that part the world to appreciating finely crafted beers. Certainly Europeans has appreciated fine pilsners and pale lagers for years...plus of course a nice Irish Stout. But this week's St. Patty's Day promises so much more than your ever present dry Irish Stout thanks to the work of the great American craft brewers. We've got Left Hand Milk Stout, Rogue Shakespeare or Chocolate Stout, Shipyard Blue Fin Stout to mention a few. And if you are looking for a more traditional Irish Stout....how about Victory Donnybrook Stout or Cigar City Patio Tools (pun intended here). And if you happen to want to at least pickup one from across the pond and celebrate in decadent style...Young's Double Chocolate Stout is a yummy treat. So while most people will be sticking with tradition, break out of the box and find that delicious American craft stout to help celebrate the success of craft beer in America on this St. Patty's day. B. NEKTAR MEADERY Zombie Killer Cherry Cyser - This mead is made with Michigan tart cherry juice, apple cider and star thistle honey. It is sweet, but balances nicely with the tart cherries. BLUE POINT BREWING COMPANY White IPA - This White IPA is an unfiltered European-style white ale with a fresh American IPA finish. Brewed with malted and unmalted wheat and just the right amount of west coast hops, it's fermented with Belgian yeast to give it a perfectly balanced character with less bitterness than traditional IPAs. 6% ABV (draft only).
CISCO BREWERS Cisco Brewers Island Reserve Series Tripel Ale - This tripel has beautiful floral aroma with hints of honeysuckle, and geranium. Collesi Chiara - This beer has an elegant and fruity flavor, which is attributed to the malt. Look for the citrus fruits and the fresh tropical fruit in the aroma. 6% ABV (bottle only).
Collesi Bionda - Its hallmarks are a pronounced aroma of hops in bloom and malt with fruity notes. Let the aromas of vanilla, warm bread crust, and honey overflow your senses. 6% ABV (bottle only).
Collesi Ambrata - This amber ale has a clean and intense aroma, with an exceptional body. The bouquet is that of cereals, hops, and dried fruit. 7.5% ABV (bottle only).
Collesi Rossa - An amber ale with a great personality. It is pleasantly sweet with an intense and spicy aroma of caramel, malt, and hazelnuts, with a very persistent finish. 8% ABV (bottle only).
Collesi Nera - A full-bodied stout with a very complex aroma of roasted coffee, barley, cocoa, liquorice, and rhubarb. It has a soft, creamy and lingering mouth feel and that velvety, smooth foam will remind you of the best Italian cappuccinos. 8% ABV (bottle only).
Collesi Triplo Malto - Triple malt means that the quantity of malt used for brewing is three times the regular amount. This will give the brewer more sugars to be converted into alcohol. The Rye Time for a New Beer Style

THE RYE REVIVAL IS HERE. Bakers are returning to the hearty grain for rich, dark breads. Cocktail heads demand rye whiskey in their Manhattans. And now, a growing band of brewers is turning to the complex, earthy spice of rye for a new take on the strong flavors craft-beer drinkers have grown to love.
Rye whiskey may be old-America's first, they say, was distilled at Mount Vernon in the 1790s-but rye beer, at least in this country, is a new idea. In the European rye belt, above the 50th parallel, give or take, where the rugged grass flourishes, rye beers are more common. Germany has its roggenbier (imagine a muskier hefeweizen); Russia has weak, beer-like kvass, made from stale rye bread (look for it peddled in soda bottles in Russian enclaves like Brooklyn's Brighton Beach).

Beer Geeks - An American Sub-Culture

Her lean legs, firm as steel and deeply bronzed, glistened in the shadows just as readily as they did in the afternoon sunshine. She had traveled to over 1,000 brewpubs across the globe, always with Phil Farrell who snapped her photograph with every beer aficionado he met, including Beer Hunter Michael Jackson, Charlie Papazian, Don Younger, and Pierre Celis. He was proud of her. She never drank, although her companion certainly offered her a taste of his many libations. Their relationship may have been as hot as the affair between Yuri Zhivago and Lara Antipova, had she been human.
She was a bit of a chicken. Actually, she WAS a chicken ... a rubber chicken, who endured five years on the road with her beer geek chaperon. As her skin began turning to powder, he protected her with a loving bath of electromagnetic bronzing, preserving every detail in her ruffled skin, down to the "made in China" label embossed on her leg. She was his symbol of beer, mascot of the Chicken City Ale Raisers Homebrew Club in North Georgia. Before she began traveling, club members used her as a talisman, passing her ceremoniously over special brews for blessings and good luck. "That was a steamy affair!" she might have revealed, if Oprah had ever clinched an interview.
