Spicy Wings with India Pale Ale
Love spicy wings? The hotter the better, you say? How about next time you try burn your taste buds off with some chicken goodness, you pair it with a good, strong India Pale Ale. The intense flavor profile of the IPA, from the citrus nose to the hop bitterness is going to pair amazingly with those wings. IPAs even go great with mild blue cheeses like Gorgonzola or Cambozola. So next time, wash down those wings with an ice cold IPA. Your taste buds will thank-you.
Suggested beers: Cigar City Jai Alai IPA, Dogfish Head 60 Minute IPA, or Breckenridge Lucky-U-IPA.

Beer Marinated Baked Chicken Wings

Difficulty: Easy
Did you know that more than 1.25 billion chicken wings will be eaten on Super Bowl Sunday? It's the country's biggest eating day of the year, after Thanksgiving. If those wings were laid end to end they would reach one-quarter of the way to the moon; they'd circle the earth more then twice. So we thought we would help you and show you how to make great baked wings at home. Use your favorite style of beer to add that unique flavor. Maybe a brown ale for something a little sweet, or a lager for clean taste. This is a great base recipe, so be creative and show off those wangs!
Ingredients
-1/4 cup olive oil
-1/2 cup of your favorite beer
-1/4 cup soy sauce
-1/8 cup lemon juice
-1/2 tsp of salt
-1/4 tsp of pepper
-1/8 tsp of ginger
-1 clove garlic, minced
-3 to 3 1/2 pounds of chicken wings
Combine all the ingredients, except the chicken, and blend well.
Rinse chicken under very cold water and drain on paper towels.
Place in a large bowl or plastic bag and pour the marinade over the wings.
Turn all the pieces to coat thoroughly.
Cover tightly and refrigerate for 24 hours.
Place chicken skin-side up in a roasting pan.
Do not use the excess marinade!
Bake at 350 degrees until golden brown, about 1 hour.
Pair with your choice of beer that you used in the sauce.

 So you got through the holidays, South Florida Beer Week, and the Jupiter Craft Brewers Festival, and you might have thought the beer drinking holidays were behind you. Perhaps you are aware that there is a pretty big football game on Sunday; the biggest game of the year! It's the Giants vs. the Patriots. Not only is it the Super Bowl, it is one of the biggest drinking days of the year. New York vs. New England. Bluepoint vs. Shipyard. Southern Tier vs. Woodchuck. Whose cider you on?
Then again if you are like me, you could just opt out on the competitive nature of the whole thing. Lay back and watch the commercials, drinking your favorite local brew from Florida, wishing that the Dolphins could find a quarterback that could last more than a single season. A nice hoppy IPA, such as Stone Ruination Double IPA, would be a good match for the bitterness I harbor towards my favorite team's continued mediocrity. In fact a Double IPA would be a perfect pairing for the hot wings that I will be devouring (see Featured Beer Pairings below). Hey...there is always next year!
While you are shopping for your Super Bowl party, let me remind you that Valentine's day is just around the corner. May I suggest a delicious chocolate stout, such as Rogue, Well's, or Youngs Double Chocolate Stout, or even Left Hand Milk stout to pair with your favorite dessert. If your honey's taste in beer is as sweet as she/he is, perhaps Timmerman's Strawberry or Lindeman's Framboise Lambic would better suit your needs. Alternatively a combination of stout with lambic might suit well to satisfy the desires of all parties. We in the biz affectionately call this delicious concoction a "chocolate covered strawberry".

Dos Costas Oeste Cedar - This saison is a collaboration between Cigar City and The Bruery is a high gravity ale with coriander, ginger, and sweet orange peel. It is aged on cedar wood spirals. 9% ABV (bottle only).

DOGFISH HEAD BREWERY
Noble Rot - This saison-esque science project is brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. Two unique wine grapes also provide a source of fermentable sugars. The first addition is from viognier grape that has been infected with a benevolent fungus called botrytis, which reduces the water content of the grape while magnifying the sweetness. The second addition is from pinot gris grapes that go though a process called dropping fruit, where large clusters of grapes are clipped to amplify the quality of those left behind. It has a spicy white wine body and a dry tart finish. 9% ABV (bottle only).

NARRAGANSETT BREWING COMPANY
Spring Bock - A traditional Bavarian helles lager beer, Narragansett Bock is deeply flavorful with a rich golden color and full body. 6.5% ABV (cans only).
SOUTHERN TIER BREWING COMPANY
Eurotrash Pilz - This beer was born as a way for Southern Tier to propagate their yeast for the summer seasonal Farmer's Tan, but it has now taken on a life of its own. Fitting perfectly between Old Man Winter and Hop Sun, this new addition will help bridge the gap between winter and summer. Eurotrash Pilz is a lightly carbonated, malty pilsner, and is perfect for session drinking. 5.2% ABV (bottle only).
TWISTED PINE BREWING COMPANY
Ghost Face Killah - This beer is brewed with 6 zany peppers: Anaheim, Fresno, Jalapeno, Serrano, Habanero, and Bhut Jolokia, or the Ghost Pepper. Aroma of smoked chillis fills the nose on first whiff and immediately on the first sip it does have a nice golden wheat flavor. This will only last for a fleeting moment before the temperature rises. Just hold on, the warmth of this beer will set in for a long spicy burn. There is only one finish on this beer - HEAT! 5% ABV (bottle only)

Craft Beer from the Land of the Rising Sun

Shigeharu Asagiri loves beer so much he has even brewed it by the light of the moon.
He's not a bathtub hootcher with vampiric tendencies, but the boss of Japanese microbrewery Coedo and a man committed to putting his craft beer on the map, no matter what it takes.
His nighttime brewing activity came just after the earthquake that rocked Japan's Tohoku region last March led to frequent blackouts at his brewery just outside Tokyo.
From those difficult days and dark nights, Coedo has continued to make some award-winning beers that are helping to put the spotlight on interesting microbrews from Japan.
Earthquakes and blackouts aside, it hasn't been easy for Coedo, founded in 1997 by Asagiri's father-in-law. It wasn't until prohibitive laws against small commercial breweries were repealed in 1994 that a microbrew scene in Japan could emerge.

Super Bowl Sunday May Drive Americans to Consume 50 Million Cases of Beer

Super Bowl Sunday - one of the most famous days in American tradition - is watched by an average of 80-90 million people every year. Last year, Super Bowl XLV, drew the largest TV audience in history with 111 million US viewers. The Super Bowl may be famous for great footballs, an incredible halftime show, and yes, the innovative commercials - but it also has one more interesting attribute: beer.
Reports for 2011 Nielsen data showed that Americans consumed close to50 million cases of beer on Super Bowl Sunday. That's 1.2 billion cans / bottles of beer that Americans will potentially consume this weekend. One caveat is that this data does not include the beer served at restaurants, bars, or the stadium itself.
So let's do a bit of quick math here. The total population of the US is ~310 million. Let's assume for simplicity that 65% are over the age of 21 (in reality, ~76% are over 18 according to the US census). That brings us to ~202 million people. Recently, most surveys show that 60% of Americans over the age of 21 drink alcohol - so we have a total market potential of: 121 million. With 1.2 billion cans, that means that consumers over the age of 21 will have to take down 10 beers each on Sunday (as well as stay home, since the data doesn't include restaurants or bars).

Tweason'ale: A Gluten-Free Beer with a Taste of Honey

Gluten-free beers - those brewed without barley, wheat or rye - make up a narrow sliver of the market, but their number is growing. In a recent blog item, I mentioned Nikki's Gluten Free Ale from the Rock Bottom Brewery in Arlington. Now Dogfish Head Craft Brewery in Milton, Del., has come out with Tweason'ale, another beer that can be safely downed by drinkers with celiac disease.
"It's being trucked to market as we speak," said Dogfish president Sam Calagione of the new beer, which will be available in kegs and four-packs of 12-ounce bottles.
Tweason'ale is fermented from sorghum syrup and a dark buckwheat honey, and flavored with strawberries that the brewery mashes in a wood press. It's got a brisk, champagnelike carbonation and a subtle, sweet-tart fruitiness. The honey, added to the brew kettle near the end of the boil, adds a floral aroma but not much in the way of sweetness or body. Tweason'ale is light on the palate, and at 6 percent alcohol by volume, moderate by Dogfish standards.
