Featured Beer Cocktail

Porteree

Ancient, rich, sweet, rewarding, and simple.

 

Fill a pint glass � of the way with chilled porter. Stir in 1 tsp superfine sugar or, better, 1 tsp demerara sugar syrup (made with 2 parts raw sugar to 1 part water, heated and stirred until sugar has dissolved) and fill glass with cracked ice. Slowly top off with more porter until full. Grate nutmeg over the top.

 

Try Breckenridge Vanilla Porter or Rogue Mocha Porter.

Java Porter Cupcakes

Difficulty: Easy

 

Who doesn't love a cupcake? More importantly, a cupcake made with a delicious porter reduction, making them perfectly moist and dense.   

 

Ingredients

 

-1 cup porter or coffee porter

-1 cup (2 sticks) unsalted butter

-3/4 cup unsweetened cocoa powder (preferably Dutch-process)

-2 cups all purpose flour

-1 1/2 tsp baking soda

-3/4 tsp salt

-2 large eggs

-2/3 cup sour cream

  

Preheat oven to 350�F. Line cupcake cups with the prettiest liners possible!

 

Bring 1 cup stout and 1 cup butter to simmer in heavy large saucepan over medium heat.

 

Add cocoa powder and whisk until mixture is smooth. Cool slightly.

 

Whisk flour, sugar, baking soda, and salt in large bowl to blend.

 

Using electric mixer, beat eggs and sour cream in another large bowl to blend.

 

Add stout-chocolate mixture to egg mixture and beat just to combine.

 

Add flour mixture and beat briefly on slow speed. Using rubber spatula, fold batter until completely combined.

 

Pour batter into prepared liners. Bake cake until tester inserted into center comes out clean, about 15 minutes.

 

The cake is dense and needs a bit more time than your traditional cake mix.

 

Ice with your favorite icing. Here are just a few icings that pair really nicely: peanut butter, salted caramel, cream cheese, chocolate ganache or chocolate mint.

 

Pair with a nice porter or chocolate stout.

As we are on the cusp of South Florida beer week, I feel it is my duty to impart a bit of wisdom that I have learned during many a marathon drinking session. When I say sessions, I'm not talking about the one night binge session, rather the week long, every night, some day time, some night, and even some mornings. In this industry, we occasionally are "forced" to endure these things. It is a rough life, but someone has to do it! Remember, if you are not properly prepared, you will have no idea how rough these things can be. So here we go....

 

Rule number one, stay hydrated! This first rule comes as sage advice from my sales manager, drinking buddy and close friend. And I do not mean drink more beer! This means drink water. Before you start, during, and after. A good rule of thumb is for every full serving of alcohol you enjoy, follow that up with a glass of water. It will help save you from the worst of the dreaded hangover. Trust me.

Rule number two, eat something! Having a full stomach will help slow the absorption of alcohol down and extend your enjoyment. It will also help you avoid that hangover.

Rule number three, moderation! Many of these beers you will be enjoying tend pack an extra punch. Make sure you know what you are drinking and this will help you from overdoing it. Have a beer with a lower ABV with those barley wines and imperials (and don't forget a little H20) and your night will be much more fun.

Finally the most important rule of all! Do not make the mistake of driving after you have had a few beers. You can call a friend, call a cab, book a hotel room, or find a couch to crash on. Getting behind the wheel of a car can cost you way more than a headache in the morning.

It is gonna be a great week and I hope to see you out at as many of the events as you can make it! I know, I am going to be at as many as I can make it to!

January 20
Get ready for South Florida Beer Week with a warm-up event at the Wine and Spirits Cellar (21055 Biscayne Blvd., Aventura, 33180) featuring local Florida beer. Sample beers from Native Brewing Company, Holy Mackerel, St. Somewhere and Cigar City. Even get to change to rub elbows with Phil from Cigar City! Free of charge. The tasting part that is, Phil might charge for the rubbing elbows part. 

 

January 21
JA World Uncorked! II (Huizenga Center at Broward College, 1000 Coconut Creek Blvd., Coconut Creek, 33066) presented by Brown Distributing and Southern Wine & Spirits of Florida combines food, wine, spirits, craft beers and decadent desserts in a swanky "SPEAKEASY" setting all inside the mini-city known as JA World. Publix Apron's Cooking School and the Art Institute's Culinary School will be creating outstanding dishes to compliment the beers and spirits, as will area restaurants. January 21 
Check out the beer vs. wine food pairing event at The Blind Monk (410 Evernia St., #107, West Palm Beach, 33401). This five course meal will be based on the themes: North, South, East and West. Each course will represent the flavors of the region and will be paired with a wine and a craft beer. Guest will then get to rate each pairing and their votes will determine the champ. 
 
First Course - Southern France - Pissaladiere (caramalized onions, Nicoise olives, and anchovies).
Paired with Cigar City Guava Grove.
 
Second Course - Northern United States - Oyster soup.
Paired with Cigar City Humidor IPA. 
 
Third Course - Western United States - IPA braised beef served over grits.
Paired with Cigar City Maduro Brown Ale.
 
Fourth Course - East Asia - Chicken satay served over sobe noodles.
Paired with Cigar City Jai Alai IPA.

Fifth Course - Central United States - Bourbon Pecan Chocolate Pie
Paired with a surprise from Cigar City.

Get ready to show your pride, South Florida! South Florida Beer Week combines an entire week's worth of beer events, dinners, and tap takeovers featuring local Florida craft beers. The week will culminate in the Field of Beers and Jupiter Craft Brewers Festival on January 27 and 28. See below for a complete schedule of events. 
  • January 23 at Lou's Beer Garden (7337 Harding Ave., Miami Beach, 33141) - South Florida Beer Week Kickoff Party with complimentary pig roast. A number of  Florida breweries will be represented including: Cigar City, Tequesta, Holy Mackerel, Native and Inlet Brewing.
  • January 24 at Total Wine and More (850 N. Congress Ave., Boynton Beach, 33426) - Join Cigar City Brewing Company for an exclusive in store tasting in honor of South Florida Beer Week. This tasting will run from 5 to 7 p.m.
  • January 24 at World of Beer (4437 Lyons Rd., Coconut Creek, 33073) - Celebrate South Florida Beer Week with a local brews night featuring beers from Cigar City Brewing Company, Tequesta Brewing Company, Native Brewing Company, and Monk in the Trunk. Start getting down with the locals at 7 p.m.   
  • January 24 at The Funky Buddha (2621 N. Federal Hwy., Boca Raton, 33431) - Join us as we commandeer the taps with all of our favorite Florida beers, featuring Cigar City, Tequesta, and special releases by the Buddha themselves. 
  • January 25 at Cervezas South Miami (5835 Sunset Dr., Miami, 33143) - Stop by for a cigar pairing with Cigar City beers to celebrate South Florida Beer Week. The event starts at 8pm and will be limited to the first 25 people. The cost of $25 will include all of your beer and cigars for the evening. For more information check out their Facebook page.  
  • January 25 at Total Wine and More (15980 Pines Blvd., Pembroke Pines, 33027) - Join Cigar City Brewing Company for an exclusive in store tasting in honor of South Florida Beer Week. This tasting will run from 5 to 7 p.m. 
  • January 25 at Tap 42 (1411 S. Andrews Ave., Fort Lauderdale, 33316) - We will be hosting another local tap takeover with beers from around the state that will continue  through the weekend.
  • January 26 at Total Wine and More (15980 Pines Blvd., Pembroke Pines, 33027) - Make sure to stop by and sample some great Holy Mackerel beers from 8 to 9:30 p.m. 
  • January 26 at Laser Wolf  (901 Progresso Dr., #101, Fort Lauderdale, 33304) - Come party as we do another local tap takeover with your favorite locals brews. Cigar City will feature some special kegs and plenty of other local goodies.

  • Leftovers Cafe (451 University Blvd., Jupiter, 33458) - No better place to grab a delicious bite and brew during South Florida Beer Week with drafts from Inlet Brewing Company, Tequesta Brewing Company, and Cigar City Brewing Company. Specialty drafts will start dropping on Monday, January 23.

January 24
Get a taste of Colorado at World of Beer Clematis (101 N. Clematis St., Suite 100, West Palm Beach, 33401) as they celebrate the greatness that is Colorado beer. Beers from Avery, Oskar Blues, Fort Collins, Breckenridge and Twisted Pines will be on draft all night starting at 7 p.m. Come get a taste of their version of the Rockies.   
 
January 26
Join the BX Beer Depot (2964 2nd Ave. N., Lake Worth, 33461) for some truly amazing draft beer from Dogfish Head Brewery. They will be breaking out bottles of 120 minute IPA as well as other great beers like: 2010 Vintage Olde School Barleywine, Immort Ale, Burton Baton Oak Aged IPA, as well as many others. The fun starts at 6 p.m.
 
January 26
Check out the Dogfish Head Heaven and Hell tap takeover at The Coffee District (325 NE 2nd Ave., Delray Beach, 33444) featuring your favorite DFH beers on tap such as Burton Baton, 120 Minute IPA, and Fort. Also introducing the latest in the Historical Ales Series, Ta Henket Egyptian Ale (as seen on TV).  Beers such as Faithfull Ale will be available in bottles. The Randall will also be making an appearance with DFH 90 Minute IPA. There are rumors of a mystery vintage case from Dogfish Head's very own cellar. You will just have to be there to find out more. The taps start flowing at 7 p.m.!
 
January 27
Have dinner at Tabica Grill (Ste 1, 901 W. Indiantown Rd., Jupiter, 33458) tonight and be treated to a unique and delicious craft beer themed dinner. Try not to drool too badly as you read the menu.
 
First Course - Grilled quail over hearts of palm salad with blue agave vinaigrette.
Paired with Breckenridge Agave Wheat Ale.
 
Second Course - Grilled prawn with conch croquette and roasted pineapple relish.
Paired with Blue Point RastafaRye Ale.
 
Third Course - Miso cobia over braised bok choy and jasmine rice.
The beer that will be paired with this course is still undecided at this time.
 
Fourth Course - Cream cheese turnover topped with spicy grilled peaches.
Paired with Innis & Gunn Rum Cask.

Enjoy a night under the stars in an intimate setting with the country's most inspired brewers! The 4th Annual Field of Beers Festival will take over Roger Dean Stadium (4751 Main St., Jupiter, 33458), the beautiful spring training facility of the Florida Marlins and St. Louis Cardinals. America's best craft breweries and top Palm Beach chefs headed by host Chef John Carlino, team up for a classic beer and food pairing. Runs from 6:30 p.m. to 9:30 p.m.

January 28
Join us Saturday, January 28, 2012, from 1 to 5:30 p.m. at  Roger Dean Stadium (4751 Main St., Jupiter, 33458) for the Jupiter Craft Brewers Festival! There's no better way to experience the ever-growing world of craft brewing. Guests will sample and savor brews from some of South Florida's as well as the nation's finest breweries. For $35, guests will enjoy unlimited samples of the brews. All this while listening to some of the best local entertainment around! 
Online ticket sales are now sold out, but there will be 1,500 tickets available to purchase the day of for $35, cash only.
 
January 30
Stop by Crown Wine and Spirits (7620 Peters Rd., Plantation, 33324) for a special Holy Mackerel Beer tasting. They will have special deals on 4 packs of Holy Mackerel during this event. This event starts at 7 p.m.    
 
February 1
Excite your taste buds at Anthony's Coal Fired Pizza (9521 Westview Dr., Coral Springs, 33076) and Holy Mackerel with a special menu created by Anthony Bruno.
 
First Course - Mozzarella and tomato salad.

They took inspiration from the traditional winter warmer for our fourth verse, integrating gingerbread spices into a robust dark ale. Notes of licorice and banana bread mingle with dark fruit, molasses and bitter chocolate for a perfect cold weather sipper! 11% ABV (bottle only).
 
Faster, Bigger, Better, Bolder (Gradually, Quietly, Steadily) - A collaboration between The Bruery and Dogfish Head, this ale is brewed with a spin on the traditional shichimi togarashi, or Japanese seven spice blend. The beer is flavored with spices like ginger, cayenne, sesame seeds, and nori and then fermented with sake yeast as well as a house yeast from The Bruery. This little blonde ale has now turned into something dry and complex. 8.25% ABV (bottle only).

More Brown Than Black IPA - A collaboration between The Alchemist, Ninkasi, and Stone Brewing companies this beer has a unique and very pronounced hop character. Although this beer started out trying to be a black IPA the color is a rich, deep brown with a tan head and has a modest, not particularly sweet, body with a lingering bitter, drying end. Proceeds from the beer will go directly to the Waterbury Good Neighbor Fund, a non-profit organization aiding families affected by Hurricane Irene. 7.4% ABV (bottle only).

Hypothetical situation: A friend of yours, who recently decided to buy a kit to brew his own beer at home, has presented you with a bottle of his first batch and asked for your honest opinion. 

 

This beer is flat, sour and looks like it was brewed with 51 percent spittle. What do you tell him? Do you tell him it's the best beer ever, and he should quit his current job to become a full-time brewer so he can distribute this ambrosia among the masses? Or do you maybe give him some constructive criticism in the hopes that his next attempt improves upon this one?

Frosted Glassware is Not Cool: Temperature Tips for Craft Beer Retailers

It should be obvious that many appreciators consider craft beer to be food, and in today's brave new modern world it's beyond important to store and serve these gems properly.

 

As you are likely noticing, lots of retail establishments are hanging their hats on finally serving an expanded beer selection. Unfortunately, many still operate as if they are only selling lighter flavored American-style pasteurized lager-hint, hint National Restaurant Association and today's better beer providers.

 

We've all seen the results of restaurants investing in wine cellars with temperature controlled storage and expanded glassware selections. So too does fermented malted barley deserve and need this type of attention. As Joshua Bernstein author of Brewed Awaking recently stated, "Beer isn't a Twinkie." Well said!
