Smoked Beer and Pecan Pie

(ex. Stone Smoked Porter, Fort Collins Z Lager)

 

You might think a smoky beer belongs with grilled meat, but it's great with pecan pie (and not bad with pumpkin either). The smokiness of these beers lend themselves to the nutty sweetness of the pie, and the roasted, toasty quality of the pecans.

Roasted Turkey With Beer and Herb Baste

Difficulty: Medium

 

The rich flavor of Bavarian wheat beer paired with herbs and butter give this turkey a savory flavor, and the butter browns the skin beautifully. Keeping the turkey tightly covered for the first hour of roasting makes for tender, moist meat. Be sure to baste (use a pastry brush to get every nook and cranny) the turkey every 15 minutes for the best flavor and color.

 

Ingredients

-1 (14- to 16-pound) fresh turkey

-Salt and freshly ground black pepper

-3/4 cup (1 1/2 sticks) unsalted butter

-1 (12-ounce) bottle Bavarian wheat beer

-1 tablespoon minced fresh rosemary

-1 tablespoon minced fresh sage

-1 tablespoon fresh minced thyme

-2 tablespoons Worcestershire sauce

-1/4 cup soy sauce

-2 tablespoons Dijon mustard

 

Preheat oven to 350 degrees. Discard the neck and gizzard (or save for stock). Save the heart and liver for the gravy. Rinse the turkey with cold water and pat dry with paper towels. Sprinkle the skin and cavity of the turkey with salt and pepper. Truss the turkey and place it on a rack in a large roasting pan with a tight-fitting lid.

 

To make the baste: In a medium saucepan, heat the butter on low heat until almost fully melted. Add the beer and continue heating. Add the rosemary, sage and thyme, Worcestershire sauce, soy sauce and mustard. Keep the mixture warm on the stove as the turkey is roasting, using it to baste the turkey every 30 minutes.

 

Roast the turkey for 45 minutes to 1 hour, basting with the beer baste every 15 minutes. Remove the lid from the pan and roast for 1 to 1 1/2 hours or until an instant-read thermometer inserted in the inner thigh reads 175 to 180 degrees. If the turkey browns too quickly, cover with aluminum foil. Let the bird rest for 20 to 30 minutes on a cutting board before carving.

Thanksgiving is upon us! I can already smell the turkey roasting in the oven; the delicious side dishes being prepared are dancing through my head!

 

Thanksgiving is a glorious holiday of food, merriment, and sharing. My food menu is pretty much set at this point... but what about my beer menu? I always look forward to this holiday to dig into my beer collection, looking for those little hidden treasures I have been holding onto. Thanksgiving is a great time to finally break some out and share with my guests as we enjoy the day of cooking and football. 

 

What will I pair with the turkey? The new Dogfish Faithfull Ale, or Cigar City Sugar Plum Brown Ale? Hmmmmm... decisions, decisions! What will my guests enjoy during the football pregame? I've got a few Pumpkin beers and a couple of good 2009 barleywines. Now is the perfect time to enjoy those gems. Oh yeah; don't forget that IPA I picked up out of state recently. I don't want to miss out on those fresh hops.

Some people kid about pouring beer into their breakfast cereal, but beer for brunch is no joke! Cheese Culture (815 E. Las Olas Blvd., Fort Lauderdale, 33301) is hosting its very own Beer Brunch on December 4 starting at 11 a.m. The cost is $24.99 and includes a such brunchified beer cocktails as the Beermosa (a Belgian tripel with OJ) and the Bloody IPA (a spicy Bloody Mary mixed with hop-forward India pale ale). To go with your cocktails, Cheese Culture will present a spread of delectables like mellon-wrapped proscuitto, dried figs with Bleu cheese and speck, ricotta cheesecake, fresh fruit jams and spreads, and much more. Truffles are one of the most prized items in the culinary world -- so it makes sense to pair them with rare and outstanding craft beer! The Town Kitchen & Bar (7301 SW 57th Ct., South Miami, 33143) is doing just that at it's Black Truffle Beer Dinner. The menu looks amazing:

Nut Brown Ale - The walnut or hazelnut notes in Nut Brown Ale come from dark malts and from fermentation in Yorkshire Squares - no nuts are used in the recipe! Dry, medium-bodied; the Sam Smith ale yeast strain gives a fruity note to the finish. 5% ABV (bottle only).

 

Oatmeal Stout - Oatmeal and malted barley brewed together into an opaque, chocolate color with a creamy head. The oatmeal lends an unusually silky texture and complex, medium-dry velvet palate. Bittersweet finish. 5% ABV (bottle only).

 

Pale Ale - Captures the soul of beer. It has a fresh maltiness that reminds you that good beer is a product of the soil. Beautiful balance of malt and fresh hops. Copper-colored, rich caramel malt flavor, sophisticated. 5% ABV (bottle only).

 

Imperial Stout - Opaque ebony color, espresso-like depth, firm structure & roasted barley flavor. Rich, flavorful, deep chocolate color, scented and roasted barley nose. Complexity of malt, hops, alcohol and yeast. 7% ABV (bottle only).

 

Organic Lager - A full-bodied lager with lots of malt and hop character. A touch hoppier than many lagers yet perfectly balanced. 5% ABV (bottle only).

 

Organic Strawberry Ale - The subtle but compelling flavors of strawberry in delicious organic ale. Strawberries offer a soft and subtle flavor, making the character of this fruit beer extremely sophisticated and refined. The smooth malt and aromatic strawberry flavors merge together in an elegant fashion, with fresh, ripe strawberries shining through. 5.1% ABV (bottle only).

 

India Pale - A restrained maltiness and an emphasis on the aroma and flavor of hops from England's finest hop yards. Amber-colored, restrained maltiness, very hoppy. 5% ABV (bottle only).

 

Taddy Porter - Very dark, fairly full in body and packed with flavor. Intense, dry tangy character of roasted barley. Full, rich, and dark, with a velvet mouthfeel. 5% ABV (bottle only).

 

Winter Welcome Ale - Throughout history, beer of somewhat higher alcohol and richness has been enjoyed for the winter holidays, when old friends get together to enjoy the season. Winter Welcome is vintage-dated with a special label each year, and was first shipped to the US in 1990 - it was the first imported winter seasonal beer. Serve in a traditional Sam Smith tulip or nonik glass for the holidays. 6% ABV (bottle only).

 

Pure Lager - Samuel Smith is most famous for classic ales, but it also offers what is described as "England's finest lager." The all-malt beer is brewed with a softer water and fermented in separately-housed stainless steel lager vessels using bottom-fermenting yeast. Rich golden color, delightful floral bouquet with lots of fruity hop character and fragrance. 5% ABV (bottle only).

Framboise - Long before hops were common in most beers, various fruits and vegetables were used to season beers. The acidity of Lambic beers blends perfectly with raspberries. Magnificent aroma, delicate palate of raspberries with undertones of fruity acidity; elegant, sparkling clean taste. 4% ABV (draft and bottle).

 

Peche - Suggested to Lindemans Brewery by Merchant du Vin in the early 1980s, the sweet rich flavor of ripe peaches is a perfect foil to the complex demanding flavor of lambic. Golden in color; with a nose that fills the room with fresh peaches. Sparkling, crisp, and refreshing balance of fruit and acid. 4% ABV (bottle only).

 

Kriek - This cherry lambic is best served as an aperitif in place of dry sherry, with carbonnade a la beouf, mussels in white wine or Gueuze, or flavorful cheeses. Bouquet of freshly harvested cherries; sparkling, smooth, fruity, and refreshing, finishing dry. 4% ABV (bottle only).

 

Pomme - Smooth, light body with the fresh flavor of real apples and a light green-apple tartness. 4% ABV (bottle only).

 

Cuvée René - An ancient beer style, Gueuze (pronounced "GOO-za") is wild-fermented wheat beer that is made with only aged hops, and those in small quantities. Lindemans Cuvée René is authentic "Oude Geuze," every batch blended by hand. Glowing golden color, cidery, winey palate; reminiscent of bubbly dry vermouth but with a more complex and natural flavor. 5% ABV (bottle only).

Courage Imperial Russian Stout - Russian Imperial Stout is a strong dark stout dating back to the 18th century when it was produced at Thrale's Brewery in London to export to the court of Catherine II of Russia. The high alcoholic strength was necessary to prevent the beer from freezing in the temperatures of the Baltic Sea on its voyage to Russia. Along with a high degree of hop bittering, Courage has the aging quality of a fine wine. 10% ABV (bottle only).

Faithfull Ale - Faithfull Ale is a celebration of Pearl Jam's 20th anniversary as a band and its extraordinary debut album, "Ten." In recognition of these milestones, this Belgian-style golden ale is delicately hopped to 20 IBUs and fruit-forward from ten incremental additions of black currants over a one-hour boil. 7% ABV (bottle only).

ROGUE SPIRITS

 

Oregon Single Malt Whiskey - This single malt whiskey is created from 100% 1st Growth Oregon malt, grown by Rogue in the Tygh Valley Appellation. It is combined in Newport with Free Range water in brewing vessels and then Ocean aged. Rogue Single Malt Whiskey also uses 100% 1st Growth Oregon Malt but is accompanied by 1st Growth Wingrich Appellation Hops, grown on Rogue's own Micro Hop Farm in Independence Oregon. Twelve percent of the malt used in Oregon Single Malt Whiskey is hand-smoked by a Rogue employee of four decades, Nate Linquist, using his Little Chief Smoker filled with local Alder and Maple chips.

  

Dark RumBrewed in the first Rum Distillery in Oregon, Rogue Rum is handcrafted in 567 litre grundies using Hawaiian cane sugar, Champagne yeast, and Free Range Coastal Water. Each batch is double distilled in a process that allows lower grade alcohols to be extracted. Any impurities are then removed through a hand charcoal filtering process that delivers a smooth crisp taste that measures 80 proof. The White Rum is mellowed in Oak barrels and the Dark Rum is aged in charcoaled Oak Bourbon barrels from the Jack Daniels Distillery in Tennessee.

Sugar Plum Brown AleBrown in color with a khaki head, Sugar Plum Brown Ale is a beer for the Holiday Season. It immediately asserts itself with spice aromas that remind you of baking in the kitchen with Grandma around Christmas time. Rosehips, hibiscus, and purple plums give a hint of acidity to the toffee sweetness and meld well with the chocolate notes. Cinnamon, chicory, ginger, carob, and cardamom add more depth to an already elaborate beer and bring about memories of Christmas lights and Holiday cheer. 5.5% (draft and bottle).

 

Improv India Brown Ale - What you have here is an Oatmeal Rye India-style Brown Ale. Now you might be thinking oatmeal, rye, brown ale, India-style; isn't that a lot to be going on in just one beer? Well yes, it is. But that is the point. Layers. Flavor elements building on and playing off of preceding elements, like a building wave; a growing crescendo of taste bud temptation; a wall of sound expressed through flavor and channeled toward your mouth. This beer isn't for everyone. In many ways it is more than just a little weird. 9% ABV (bottle only).

We gripe about it every year -- everything associated with Christmas seems to show up earlier and earlier.

Store displays. Mall decorations. Music on the radio.

Beer.

 

Seasonal beers are big business, and no one -- retailers, distributors, brewers and beer lovers -- wants to miss out on those beers that come around just once a year. And that can be tough when they seem to be released earlier and earlier each year.

 

"As a craft beer lover, I'm not always excited to see pumpkin beers in August or Christmas beers in October, but that's the reality of it," said Chris Dilla, the owner of the Bocktown Beer and Grill restaurants in Center and North Fayette townships. "And I'm placing orders for those beers months in advance, so I'm spending almost half of my year thinking about fall and winter beers."

Climate extremes are getting more common, a new report says, and the planet is getting warmer.

More than 200 scientists from 62 countries worked on the report for the Intergovermental Panel on Climate Change (IPCC). The project is seeking ways to manage and reduce disaster risk because of a changing global environment, attempting in part to improve sustainability for crops and other agricultural products.

In Colorado, one of those products is craft beer. Fort Collins' New Belgium Brewery has been creating specialty brews since 1991, and sustainability director Jenn Orgolini says the brewer is seeing evidence of a changing climate.

"This is not a problem that's going to happen someday, and this is not a problem that's just going to impact some industries. If you drink beer now, the issue of climate change is impacting you right now."
