Roasted Turkey and Belgian Saison or Farmhouse Ale
(ex. Jolly Pumpkin Bam Biere, Avery Fifteen, Victory Helios)
Saison is a rich, complex ale full of spice and notes of late season fruit. It is deliberately soured so it carries just a touch of tanginess, making it not only a great companion for herbaceous roasted turkey, but also an entire spread of foods on the holiday table. Saison's effervescent nature also makes it a very nice palate cleanser between courses.

Cooking with Victory Beer this Thanksgiving Season

Difficulty: Easy
With Thanksgiving on its way, we thought we would publish these recipes from Victory Brewing, which use Victory's fantastic beers in an array of warming holiday dishes. For best results, crack a cold Victory to drink alongside your finished dishes!
Rosemary and Sage Stuffing with Helios Ale
Ingredients
-2 onions, diced
-1 cup celery, diced
-1 large focaccia, staled one day
-8 sprigs rosemary, destemmed
-¼ cup sage, chopped
-3 eggs
-½ cup scallion, sliced
-Victory Helios Ale (or chicken stock) as needed
-salt and pepper to taste
Combine all ingredients except Helios. Use the Helios to moisten the stuffing. Put mixture into a greased baking pan or casserole dish and bake at 325° for about 30 minutes or until top is golden brown.
Pumpkin Apricot Cheesecake with Graham Cracker Crust
Ingredients
-2 ¼ lbs. cream cheese
-¼ cup Victory Golden Monkey
-¾ cup pumpkin puree
-1 ½ cups sugar
-¼ cup brown sugar
-2 tsp cinnamon
-¼ tsp clove, ground
-¼ tsp nutmeg
-3 eggs
-2 egg yolks
-1 cup dried apricot puree
Recipe for graham cracker crust
-¼ cup sugar
-2 cups chopped pecans
-1 cup graham cracker crumbs
-4 oz. melted butter
Combine all ingredients. Press into cheesecake pan to form crust.
Combine all ingredients and mix thoroughly. Assemble recipe for Pumpkin Cheesecake crust. Spread thin layer of pureed apricots on top on crust. Spread cream cheese filling evenly over apricot puree. (Tip before baking: tap pan on table surface to remove air bubbles). Bake in water bath at 350° for 20 minutes.

Walmart is now looking to carry craft beer. Is this the beginning of the end, or just a sign of how far craft beer has come? The nation's largest retailer has just realized that craft beers are getting popular -- but will Walmart customers really care? These are the things that keep me up at night. Fortunately, I can generally just pop a beer and that cures that problem. Not that Walmart is going to change the dynamic of its business model around craft beer, but it certainly is deviating from the "Save Money, Live Better" campaign. Certainly craft beers fit in the "Live Better" part. Who knows: maybe we will get some great beers at great prices too!
And now for something completely different: tap takeovers. If you haven't attended one of our tap takeovers, now is the time! We have half-a-dozen brewery events planned for this next month. What is a tap takeover? It is when a brewery comes in and "takes over" the tap system with five, ten, or 15-plus of their beers. The great thing about these events is they offer a chance to try some really great, limited release beers that aren't always easy to come by. For example, Terrapin will have a beer called "Substance Abuse" this month at their tap takeover. I didn't even know they made a beer called Substance Abuse, much less have a chance to try it! And if that doesn't float your boat, Terrapin will have five other beers for you to try. So take a look at our event section and pick out one or two to show up at... they are a lot of fun and, of course, the beers are outstanding.

This competition will pair hot chili and cool beer, with all proceeds benefiting Honor Flight and Fops. Can you hear the music? You will after the Dogfish Head Tap Takeover and Music Series Release Party at Coffee District ( 325 NE 2nd Ave., # 104, Delray Beach, 33444). Starting at 7 p.m., try great Dogfish beers like Burton Baton, Palo Santo Marron, Pangaea, Olde School Barleywine, 60 Minute IPA, and 90 Minute IPA on draft. There will also be a special tapping of a Bitches Brew keg, and the entire Music Series will be available in bottle, including the brand new Pearl Jam Faithfull Ale and Robert Johnson's Hellhound IPA. Sounds good already!
November 12 Look out, Fort Lauderdale -- the annual New Times' Beerfest is coming to Esplanade Park ( 450 Himmarshee St., Fort Lauderdale, 33301) from 7 to 11 p.m. Sample dozens of beers from craft and domestic vendors, plus enjoy food from top area restaurants. Tickets cost $30 in advance -- grab them here. National recording act Sister Hazel will headline and Brown will pour over a twenty beers from Magic Hat, Shiner, Carib, PALM, Shipyard, Holy Mackerel, and Narragansett.
November 12 Please your palate, step into your stride, and enjoy the largest outdoor culinary affair in South Florida during the 2nd Annual Boca Raton Wine & Food Festival ( Federal Highway and E. Camino Real, Boca Raton, 33432). Enjoy beers from Victory, Stone, Palm, Holy Mackerel, and more at this tasting extravaganza from 6 to 10 p.m. Tickets can be purchased here.
November 14 Nothing like a great stout with food, right? Well check out the stout pairing on Monday at The Blind Monk ( 410 Evernia St., West Palm Beach, 33401). The wine and beer bar will pair Left Hand Milk Stout with ice cream, Highland Mocha Stout with Gouda, Shipyard Blue Fin Stout with BBQ meatballs, Oskar Blues Ten Fidy with gourmet chocolates, and Heavy Seas Peg Leg Stout with cheese. November 15 Dogfish Head is taking over at World of Beer Coconut Creek ( 4437 Lyons Road, Coconut Creek, 33073). Starting at 7 p.m., sample a huge selection of great Dogfish draft, including Olde School Barleywine, My Antonia, Pangaea, Midas Touch, Palo Santo Marron, and (drum roll) Bitches Brew. 120 Minute IPA will also be on draft (limit 1 per customer, Loyalty Card Members only). The Italian restaurant and pizzeria will host a bevy of summer-y beers to say "goodbye" to heat and hello to cooler, winter air. November 16 Wings and beer is a match made in heaven! Well save the date for a Wing and Beer Tasting going down at South Miami Sports Grill ( 1559 Sunset Dr., Coral Gables, 33146) on November 16. The notorious Sports Grill wings will be paired with Oskar Blues Dale's Pale Ale, Terrapin Hopsecutioner, and Left Hand Black Jack Porter. There will also be a host of new beers to try and vote on; Sports Grill will bring in the best brew permanently! Cost is $15 and the event starts at 7 p.m.
November 16 Show your Georgia pride during Terrapin Brew Night at World of Beer Clematis ( 101 Clematis St., West Palm Beach, 33401). A number of rare and unique brews from Terrapin will be on draft, including Substance Abuse, Reunion, Oak-Aged Big Hoppy Monster, Peaotch!, Rye Squared, So Fresh and So Green Green, and Hopsecutioner. November 17 Love a good smoke with a craft brew? Head to Havana Humidor ( 650 NW 22nd Terr., #108, Homestead, 33033) for their Cigars and Brews event. Enjoy three San Lotano Cigars paired with three beers from Cigar City Brewing Co. The event runs from 6 to 9 p.m. and costs $20 per person (limited to 40 people). Call to reserve your spot.

This beer festival will bring together brews from the likes of PALM, Cigar City, Magic Hat, Shipyard, and more as we celebrate from 7 to 10 p.m. Cost TBA. BOULDER BEER COMPANY Freshtracks Wet-Hopped Ale -This fresh hop session ale features citrus-y hops up front with toasted bread and caramel in the malt for a refreshing, delicious pale ale. 4.9% ABV (draft only).
AVERY BREWING CO. Rumkin - This high gravity ale is brewed with pumpkin spices and aged in rum barrels for a complex flavor. 15.9% ABV (bottle only). 
DOGFISH HEAD CRAFT BREWED ALES Faithfull Ale - Faithfull Ale is a celebration of Pearl Jam's 20th anniversary as a band and its extraordinary debut album, "Ten." In recognition of these milestones, this Belgian-style golden ale is delicately hopped to 20 IBUs and fruit-forward from ten incremental additions of black currants over a one-hour boil. 7% ABV (bottle only). 
ROGUE SPIRITS Oregon Single Malt Whiskey - This single malt whiskey is created from 100% 1st Growth Oregon malt, grown by Rogue in the Tygh Valley Appellation. It is combined in Newport with Free Range water in brewing vessels and then Ocean aged. Rogue Single Malt Whiskey also uses 100% 1st Growth Oregon Malt but is accompanied by 1st Growth Wingrich Appellation Hops, grown on Rogue's own Micro Hop Farm in Independence Oregon. Twelve percent of the malt used in Oregon Single Malt Whiskey is hand-smoked by a Rogue employee of four decades, Nate Linquist, using his Little Chief Smoker filled with local Alder and Maple chips. Dark Rum - Brewed in the first Rum Distillery in Oregon, Rogue Rum is handcrafted in 567 litre grundies using Hawaiian cane sugar, Champagne yeast, and Free Range Coastal Water. Each batch is double distilled in a process that allows lower grade alcohols to be extracted. Any impurities are then removed through a hand charcoal filtering process that delivers a smooth crisp taste that measures 80 proof. The White Rum is mellowed in Oak barrels and the Dark Rum is aged in charcoaled Oak Bourbon barrels from the Jack Daniels Distillery in Tennessee. 
VICTORY BREWING CO. Victory Lager - Perfectly balanced, this authentic version of a German helles-style lager satisfies gloriously. Lean, German malts and fine European hops offer subtle harmony. 4.8% ABV (draft only).
TERRAPIN BEER CO. Peaotch! - Sometime around midnight in a city nobody can agree on, the idea for Terrapin and Left Hand to brew a collaboration beer was born. Peaotch is the third in the series of one-time releases between the two breweries. Terrapin brewmaster Brian "Spike" Buckowski hosted Left Hand brewmaster Ro Gunzel in Athens, GA, and late one night the two brewed up this dreamy ale. Yep, they brewed a beer with Georgia and Colorado peaches. They tried to tell the peaches to get out of the way, but they wouldn't. Ludicrous, we know. 7.2% (draft and bottle).

CIGAR CITY BREWING
Hotter than Helles - This Munich Lager is a nod to the thirst quenching lagers of Germany. Hotter than Helles has a sweet malt expression that is balanced by floral bitterness from the use of German Hallertaur Mittelfruh hops. A very refreshing beer that will also entice you by its subtle complexity and drinkability. 5% ABV (draft only).
Improv India Brown Ale - What you have here is an Oatmeal Rye India-style Brown Ale. Now you might be thinking oatmeal, rye, brown ale, India-style; isn't that a lot to be going on in just one beer? Well yes, it is. But that is the point. Layers. Flavor elements building on and playing off of preceding elements, like a building wave; a growing crescendo of taste bud temptation; a wall of sound expressed through flavor and channeled toward your mouth. This beer isn't for everyone. In many ways it is more than just a little weird. 9% ABV (bottle only).

Say what you will about Walmart, the monster retailer certainly moves a lot of dollars. If you make a thing and want to sell it, it's hard to go wrong by getting it on Walmart's shelves. That's as true for beer as for anything else. In fact, did you know that Walmart sells more beer in the US than anyone else?
So, it's definitely good news for craft brewers that Walmart is planning to devote more shelf space to craft beer. That's according to ex-CEO Lee Scott speaking at the National Beer Wholesalers Association convention in Las Vegas. Walmart execs recognize that today's beer drinkers are increasingly looking for selection and they plan to provide it.
It's literally been years since I strolled down the beer aisle at my local Walmart so I really don't know if this is really that big of a change or not. I remember that back in the '90s, the most exotic beer to be found there was Killian's Irish Red. Perhaps some individual stores have already recognized the trend and have been carrying better beer for a while now. But, now it's going to a nation-wide push.

Beer For Brains Foundation Raises Money Through Brews

For the past six months, Louis Dolgoff's life has been consumed by preparations for this Saturday's RareAffair, his foundation's biggest event ever.
The Peoria man has been making calls to line up rare beers, including Alaskan Brewing Co.'s 2004 Vintage Smoked Porter and Four Peaks Brewery's Sirius Black bourbon-barrel-aged imperial stout. He has sold tickets to the event at Talking Stick Resort, promoted the four-hour party to the media, booked the three Valley-based bands and confirmed the restaurants that will be serving at the party, including Rico's American Grill in Phoenix and Bryan's Black Mountain Barbecue in Cave Creek.
Dolgoff, 57, runs the Beer for Brains Foundation, a non-profit organization that raises money for the Barrow Neurological Institute at St. Joseph's Hospital and Medical Center in Phoenix. The combination might seem odd -- craft beer and brain research. But when you hear the story of Dolgoff and his wife, Laurie, it makes complete sense.

Drinking My Way Through 1,000 Belgian Craft Beers

Charles De Gaulle, who moaned about France, "How can you govern a country which has 246 varieties of cheeses?" might have had a nervous breakdown running Belgium, which is smaller than Maine and has over 1,000 different beers.
A book on the subject, "All Belgian Beers" by Hilde Deweer is 1,568 pages long and weighs 3.4 pounds.
Try as I would to make a dent in the nation's favorite beverage while on a trip to Antwerp, Ghent and Brussels last month, I came away only flabbergasted at the variety and styles of the brews there, each with its own signature glass.
There are amber, blonde, brown, champagne, sour, and strong ales, lambic and fruit beers, pale lagers, stout, white-wheat beer, winter varieties, and many more.
