IPA and Carrot Cake
(ex. Stone IPA, Dogfish 60 Minute IPA, Cigar City Jai Alai)
One of the best pairings you'll encounter is a decadent carrot cake with an equally hedonistic IPA. The carrot cake's sweetness and creamy frosting are amplified by the sweet malt backbone of the IPA, only to be cut down to size by the hops and spiciness of the alcohol.

Onion and Mushroom Soup

Difficulty: Medium
Ingredients
(Makes 4 servings) -2 ounce-package dried porcini or similar mushrooms -1 cup boiling water -5 tablespoons butter, divided -3 large sweet onions, thinly sliced -1/4 cup full-bodied beer such as Laughing Skull by Red Brick -2 leeks, white parts only, cleaned and sliced -2 shallots, chopped -2 cloves garlic, minced -2 tablespoons chopped fresh thyme -2 tablespoons chopped fresh rosemary -3 tablespoons all-purpose flour -4 cups beef broth -Salt and ground black pepper, to taste -4 slices stale crusty bread -4 slices thick-cut Gruyere cheese -Chives, for garnish
Break dried mushrooms into small pieces and place a bowl. Pour boiling water over the mushrooms; set aside.
In a large saucepan over medium heat, melt 3 tablespoons of the butter. Add onions and cook until well-browned, stirring regularly, about 15 to 20 minutes. If the onions begin to get too browned, add a couple teaspoons of water. When the onions are browned and caramelized, add beer and deglaze the pan. Add leeks, shallots, garlic, thyme, rosemary and 2 tablespoons of butter.
Turn heat to medium-high and cook, about 6 to 8 minutes. Add flour and stir to coat everything. Pour in the beef broth, then stir well and bring to a boil. Add the steeped mushrooms and liquid, then reduce heat to simmer for 10 minutes. Season with salt and pepper.
Heat the broiler.
Ladle the soup into 4 oven-safe crocks. Top each with a slice of the stale bread, then a slice of the cheese. Arrange the crocks on a rimmed baking sheet, then place under the broiler and cook until the cheese is melted and begins to brown, 1 to 2 minutes. Sprinkle with chives.

The Zombies were out last night in Downtown Fort Lauderdale for our First Annual Zombie Pub Crawl... and I am sure there are a few lurking in the hallways of some places of business today after a full night of crawling through the Himmarshee District. Over 50 boaters will hit the high seas to catch the most lionfish, an invasive species that's overrunning South Florida's waters. But fear not -- these fish are tasty. VICTORY BREWING CO. Victory Lager - Perfectly balanced, this authentic version of a German helles-style lager satisfies gloriously. Lean, German malts and fine European hops offer subtle harmony. 4.8% ABV (draft only).
TERRAPIN BEER CO. Peaotch! - Sometime around midnight in a city nobody can agree on, the idea for Terrapin and Left Hand to brew a collaboration beer was born. Peaotch is the third in the series of one-time releases between the two breweries. Terrapin brewmaster Brian "Spike" Buckowski hosted Left Hand brewmaster Ro Gunzel in Athens, GA, and late one night the two brewed up this dreamy ale. Yep, they brewed a beer with Georgia and Colorado peaches. They tried to tell the peaches to get out of the way, but they wouldn't. Ludicrous, we know. 7.2% (draft and bottle).

CIGAR CITY BREWING
Hotter than Helles - This Munich Lager is a nod to the thirst quenching lagers of Germany. Hotter than Helles has a sweet malt expression that is balanced by floral bitterness from the use of German Hallertaur Mittelfruh hops. A very refreshing beer that will also entice you by its subtle complexity and drinkability. 5% ABV (draft only).
INNIS & GUNN
Highland Cask - This Innis & Gunn beer has been matured in rare 21-year-old single malt Scotch Whisky barrels to create a complex beer with a classic Highland character. 7.1% ABV (bottle only).

HOPF WEISBIER BRAUEREI
Helle Weisse - This traditional Bavarian wheat beer has been brewed since 1910. With the special flavors of banana and fruit that come from the brewery's own private yeast culture, the smooth, refreshing taste, and the Champagne-like carbonation make this beer a great thirst quencher that goes well with food. Brewed according to the German purity law. 5.3% ABV (bottle only).
Spezial Weisse - From a 100-year tradition emerges this Spezial Weisse, a golden-red wheat with an effervescent quality. This full-flavored beer is made from caramel malts which lend the Spezial a strength and fruitiness that goes down smoothly. Pairs excellently with fish and fowl. 6% ABV (bottle only).
SCHONRAMER FAMILY BREWERY
Gold Lager - This full-flavored lager is deceivingly pale in color but strong in alcohol, making it a perfect beer for special occasions. For over 230 years, the Schonramer Family Brewery has made its Gold lager with a single malt, Barke, the world's most expensive malted grain. This careful brewing process creates a nuanced, rich, and soulful brew. 6% ABV (bottle only).
Pils - Organically farmed Barke malt and a deft hand with aromatic hops make this slightly sweet and potent pilsner a true classic. Open fermented and brewed in the shadow of the Alps by Schonramer for over 230 years. 5.4% ABV (bottle only).
REUTBERGER
Export Helle - This recipe was created by the Reutberg cloister of nuns in the 1400s so that the beer would keep on long voyages. They added an extra, but unimposing amount of hops and malt for higher alcohol content and flavor. Today, the nuns continue the brewing tradition with open fermentation and slow, low temperature lagering over 8 weeks to create a very balanced, austere beer. 5.1% ABV (bottle only).
Export Dunkel - 331 years ago, the nuns of the Reutberg cloister created the seminal export beer that was to become the trademark formula of the Bavarian-style beer. Out of that tradition comes the Export Dunkel, a rich, deep-red beer with malty aromas of chocolate, molasses, and caramel. This dark red manna has a surprising, guilt-free lightness to it. 5.2% ABV (bottle only).

The Label Game

Whether you aim to drink moderately or immoderately, there are few bits of information handier than how much alcohol is in your beer. Planning to drive home later? Maybe that 12%-ABV barleywine isn't the savvy choice. Looking to drown your woes and pass out on the couch? A low-calorie 3.2% lager may not yield the best results.
Odd, then, that this information is not always there. In some states, on some labels, hunting for that magic number can be fruitless. New York, for example, bans that information from labels on beer sold there. On the other hand, North Carolina requires it-but only for beers stronger than 6% ABV. In New Hampshire, the threshold is 12%.
Generally, most states leave it up to the breweries to decide whether or not to put the alcohol strength on the label. Often that decision depends on whether disclosing the alcohol content might help or hinder sales. Hence, drinkers of the country's most popular light lagers-Bud Light, Miller Lite, Coors Light-don't always know that their beverage of choice is typically 4.2% ABV.
So, why hasn't the federal government just gone ahead and required that useful piece of information across the board? The Treasury Department is considering whether to do just that. But for now, many regulations are based on another way of thinking: Under this older, post-Prohibition regime, sharing that information with consumers might be a bad idea.

Berliner Weiss Stands at the Crossroads of Sours and Session Beers

If there were an endangered beer species list, Berliner weisses would be on it. Once declared the "Champagne of the north" by Napoleon's troops during their rather un-neighborly invasion of Prussia, this puckering, effervescent pale wheat ale, marked by a clean sourness (think plain Greek yogurt) from its top-fermenting yeast and Lactobacillus bacteria, now teeters on the edge of obscurity.
Born around the 16th century along with the rest of Germany's weissbiers in Berlin, the formerly ubiquitous brew not only predates the popular German pilsner, but it's been described as the most refreshing style in the world; its sourness falls somewhere between a weizen and a lambic while its ABV is a tame 2.8% to 3.8%. Today, you can count the number of Berliner weisses from Germany on one hand. Like other forgotten styles (heard of Broyhan alt or Licktenhainer?), it's almost impossible to pinpoint why Berliner weisses' popularity waned; certainly, though, the extensive floor space and fermenting time required to create the beer have kept brewers away. But now that demand for Belgian sours and session beers has exploded, the tart style is poised for a comeback.

The United States and Belgium are clearly at the head of the world's craft beer revolution, but several other nations and regions are quietly contributing.
Italian craft beer, for instance, has thrived on a small scale with remarkably bold and creativerecipes. The Czechs and Germans have forsaken their traditions of familiar lagers to brew large-bodied, small-batch ales. And then there is northern Europe.
Like few other places, Scandinavia (and Finland, which isn't technically Scandinavia) is experimenting broadly with beer while adding its native twist. Who else would age a porter in aquavit barrels (as does Norwegian brewery HaandBryggeriet)? Or brew a tart ale with juniper branches (like Finland's Lammin Kataja)?
