Weizenbock with Roast Pork Loin or Roast Beef
(ex. Victory Moonglow, Ayinger Weizenbock)
Rich, fruity, and bold, weizenbocks are excellent beers to pair with full-flavored meat dishes such as roast pork or beef. The flavors of mellow spice and dark, ripe fruit compliment the richness of the meat, especially when pan sauces and gravies are involved. The higher alcohol content (typically 7-9%) will also cut straight through the big, bold flavors.

Two Beer Pumpkin Soup
Reprinted from The Beer Cook

Difficulty: Medium
I carved some pumpkins yesterday and then roasted the seeds and made a pumpkin soup. I decided to use two beers in the soup - a pumpkin ale (Shipyard Pumpkinhead) to highlight the pumpkin flavor and a dubbel for it's sweeter caramel and fruit notes.
Here is a pretty rough estimate of ingredients:
-2.5 lb chopped pumpkin (I scraped mine from the inside of a pumpkin I was going to carve) -1 cup evaporated milk -1/2 cup whole milk -4 tbsp butter -1/2 cup sugar -1 tsp salt -1 tsp cinnamon -1 tsp garlic powder -1 tsp onion powder -1 tsp ground ginger -1 tsp nutmeg -1 tbsp Parmesan cheese -1 cup Shipyard Pumpkinhead -1/2 cup Abbey ale or dubbel
Place the chopped pumpkin in a large pot and cover with water. Bring water to a boil and cook until tender. Drain, then puree the pumpkin in a blender and return to the pot. Over medium heat add the rest of the ingredients. Top with roasted pumpkin seeds. For my pumpkin seeds I covered them in a mixture of melted butter, salt, garlic powder, cinnamon, and paprika before roasting for 45 minutes.

 I'm not exactly sure, but it was some time around 2003 that Fresh Beer (as we were known then) did its first beer festival in Miami's Peacock park. Attendance? Three people... LITERALLY. Really, I'm not kidding. It may have been one of the most disappointing events I have ever participated in. Worse, it made me question whether or not craft beer would ever catch on in Miami -- or anywhere else South Florida, for that matter. Fast forward to 2011. Craft beer is growing at a record pace. Our fall beers -- Pumpkinhead, Punkin, and the like -- have all sold out in record time. (Yes that's right: we are sold out! So get them while you can!) Our event schedule has never been bigger, and on the eve of Grovetoberfest, which will probably have over 3,000 in attendance, we are seeing more growth in Miami than any other territory that we currently service. Boy, have times changed!

Mark your calendars for Grovetoberfest! This daytime craft beer festival takes place at Peacock Park in Coconut Grove (2820 McFarlane Rd., Miami, 33133). Sample from over 100 craft beers and vote in three different categories on your favorites! A huge display of classic hot rods and motorcycles will be on display, plus Big City Dogs will perform classic rock covers from 4 to 7 p.m. Food will be provided by Luigi's, and 50% of the proceeds raised from select drafts will go to the Big Bike Riders Children's Foundation.

October 17 Get ready for a Stone Brewing Co. dinner at Leftovers ( 451 University Blvd., Jupiter, 33458). The dinner starts at 6:30 p.m. and will feature four courses paired with Stone brews, plus a reception beer before dinner. Highland Cask - This Innis & Gunn beer has been matured in rare 21-year-old single malt Scotch Whisky barrels to create a complex beer with a classic Highland character. 7.1% ABV (bottle only).

HOPF WEISBIER BRAUEREI
Helle Weisse - This traditional Bavarian wheat beer has been brewed since 1910. With the special flavors of banana and fruit that come from the brewery's own private yeast culture, the smooth, refreshing taste, and the Champagne-like carbonation make this beer a great thirst quencher that goes well with food. Brewed according to the German purity law. 5.3% ABV (bottle only).
Spezial Weisse - From a 100-year tradition emerges this Spezial Weisse, a golden-red wheat with an effervescent quality. This full-flavored beer is made from caramel malts which lend the Spezial a strength and fruitiness that goes down smoothly. Pairs excellently with fish and fowl. 6% ABV (bottle only).
SCHONRAMER FAMILY BREWERY
Gold Lager - This full-flavored lager is deceivingly pale in color but strong in alcohol, making it a perfect beer for special occasions. For over 230 years, the Schonramer Family Brewery has made its Gold lager with a single malt, Barke, the world's most expensive malted grain. This careful brewing process creates a nuanced, rich, and soulful brew. 6% ABV (bottle only).
Pils - Organically farmed Barke malt and a deft hand with aromatic hops make this slightly sweet and potent pilsner a true classic. Open fermented and brewed in the shadow of the Alps by Schonramer for over 230 years. 5.4% ABV (bottle only).
REUTBERGER
Export Helle - This recipe was created by the Reutberg cloister of nuns in the 1400s so that the beer would keep on long voyages. They added an extra, but unimposing amount of hops and malt for higher alcohol content and flavor. Today, the nuns continue the brewing tradition with open fermentation and slow, low temperature lagering over 8 weeks to create a very balanced, austere beer. 5.1% ABV (bottle only).
Export Dunkel - 331 years ago, the nuns of the Reutberg cloister created the seminal export beer that was to become the trademark formula of the Bavarian-style beer. Out of that tradition comes the Export Dunkel, a rich, deep-red beer with malty aromas of chocolate, molasses, and caramel. This dark red manna has a surprising, guilt-free lightness to it. 5.2% ABV (bottle only).
RED BRICK BREWING
Vanilla Gorilla - A smoked porter aged in Tennessee whiskey barrels with smoked vanilla beans, courtesy of Fox Bros. BBQ in Atlanta. This porter was brewed with cherry wood smoked malt. 7.8% ABV (draft and bottle).

Oktoberfest - Another palate-pleasing seasonal brew. Originally brewed in 1810 to celebrate the betrothal of the Crown Prince of Bavaria, Blue Point continues the celebration by traditionally brewing this special malty amber lager every October. Oktoberfest lager is stored cold for 2 months to ensure its distinct smooth flavor. 5% ABV (bottle only).

Bough Breaker Barleywine - A dark ruby amber color with a big tan head. BB features a gargantuan amount of Amarillo hops. Aroma is flowery, spicy, and has a distinct orange bouquet. At first taste, the intense hop characteristic is all encompassing, only to be smoothed out by a caramel, candy-like malt finish. 9.1% ABV (draft and bottle).

Successful Brew-Print: Shipyard Pumpkinhead Creates National Buzz

For beer-drinkers around Maine, the arrival of Shipyard Brewery's Pumpkinhead beer means it's time to dig the fall sweaters out of the closet and put away the patio furniture.
The nearly 20-year-old Portland brewery's seasonal beer has become a staple for fall in Maine, but lately, the beer has taken off outside of the state, too. The brewery announced that this year it will add two more months to the brew cycle in an attempt to keep up with demand.
"We're still bound by capacity," Bruce Forsley, Shipyard's business manager, said. "The demand is more than our capacity."
Shipyard usually stops brewing Pumpkinhead, its most popular beer, around Halloween, but this year, it will brew into late November. The brewery on Newbury Street extended its capacity earlier this year in anticipation of brewing more of its biggest money maker, and plans to extend capacity again in the near future. The company plans to ship 400,000 cases of Pumpkinhead this year.

'Faithful Ale' Salutes Pearl Jam Twenty

Pearl Jam and beer go together, according to an indie brewery in the U.S. In commemoration of the band's 20th year anniversary, Dogfish Head brewery released "Faithful Ale".
Dogfish Head Craft brewery announced recently that it will release this October -- Faithful Ale -- "a Belgian style golden ale delicately hopped to 20 IBUs and fruit-forward from 10 incremental additions of black currants over a one-hour boil. Faithful will clock in at 7% ABV." The Delaware based brewing company also plans to re-release their two previous music-inspired beers: Robert Johnson's Hellhound on My Ale and Miles Davis' Bitches Brew. Dogfish Head celebrated legendary blues-man Robert Johnson's centennial birthday on May 8, 2011, with the "super-hoppy brewery inspired ale". In June 2010, the brewing company revered Miles Davis epic jazz recording of the same title with "a gustatory analog to Miles' masterpiece."

Let's be honest, nothing washes down any great meal quite like craft beer. Chef and Miamian Luis 'Lou' Ramirez is taking the gastro-pub movement and making it his own with Lou's Beer Garden, a laid-back place that can satisfy fancy-shmancy eaters. A Lou's, Ramirez calls the shots and picks the micro-brewed beers that make it to every table. Originally from the kitchens of the Marseilles Hotel and Randazzo's Talula restaurant, he believes the most important influence in his career is his relationship with the ingredients he comes across (and those he has yet to discover).
NBC Miami: I'm sure all the dishes on each of your menus are like your children, but if you had to choose only one dish from the menu, which ones are you most proud of?
Luis Ramirez: Tripe, callos de sevilla. It took me nearly a month and a half to create and perfect it.
Most popular item on the menu?
Iberico squid. It's always sold out (and painful to make).
