Beet and Goat Cheese Salad with American Wheat or Hefeweizen
(ex. Ayinger Brau-Weisse, Boulder Sweaty Betty, Blanche de Bruxelles)
This pairing just screams "end of summer." The earthy flavors of the beets pick up the spicy malt notes in the wheat ale, while the tangy goat cheese accentuates the citrus flavors of the beer. Enjoy!

Mexican Grilled Corn with Pale Ale

Difficulty: Easy
Ingredients
-8 ears of corn
-¾ cup (1 ½ sticks) butter, melted
-Pinch ancho chile powder (or to taste)
-Juice of 2 limes
-1 cup mayonnaise
-1 cup grated cotija cheese (can substitute Parmesan)
-Smoked paprika to taste
-Salt and pepper to taste
-¼ cup minced cilantro
-Lime wedges
Steps
Husk corn, leaving some stem attached to the cobs for something to hold onto when eating. Brush corn cobs with melted butter and place on hot grill or cast-iron griddle until slightly charred. This will take about 5 to 7 minutes. Be sure to turn corn regularly to char evenly on all sides.
While corn cooks, mix ancho chile powder and lime juice into the mayonnaise in a small bowl. While corn is still warm after grilling, slather corn with lime mayonnaise, sprinkle with grated cotija cheese, paprika, salt, and pepper, and finish with a topping of cilantro.
Serve with lime wedges on the side and pair with a hoppy pale ale!

DA DA DA DAAAA... DUHNA... DUHNA... DUHNA... DA DA DA DA DA DAAAAA! Yes that is the theme song for the NFL (you may have to use your imagination a bit). Labor Day weekend is upon us and the official start of college football -- and later in the week, the pros will be strapping it up. YAY! The end of the summer is officially upon us. It will not be long before we see the first game played in the snow. Hard to imagine that living down here, as we continue to deal with steamy hot days followed by torrential downpours in the afternoon. Ah, South Florida... what's not to love?
The fall beers are here and the Oktoberfest celebrations are being planned. If you haven't already heard, this is the Second Annual Key West Beerfest weekend, and it is loaded up with more than just a beer festival. Although this one is going to be an awesome event, we also have loads of events occurring before and after, including a Local Florida Brewery Tap Takeover event on Friday and a killer after-party following the fest on Saturday. Sounds like I will be sleeping one off on Sunday. Hope to see you down there and, if not, have a great holiday weekend and enjoy the start of football and the passage into fall.

 Mark your calendars for Grovetoberfest! This daytime craft beer festival at Peacock Park in Coconut Grove (2820 McFarlane Rd., Miami, 33133). Shiner Oktoberfest - This festive seasonal has a deep amber color and slightly toasted flavor. The initial rich malty aroma and sweetness fades to a moderately dry, hoppy finish. Honey Moon Saison - To celebrate his upcoming nuptials, Summit brewer Sam Doniach created Honeymoon Saison-Batch 07 in the Summit Unchained Series. It's inspired by French saison styles which were traditional farmhouse ales brewed to quench workers on long, hot days. Sam's creation has a refreshing citrus and floral character with hints of apple, pear and spicy, peppery notes. White Oak Jai Alai IPA - This is an American oak-aged version of Jai Alai. The oak adds notes of vanilla and light notes of dill to the aroma. Cigar City Brews Beer With Big Inspiration

TAMPA, Florida - When a friend gave Joey Redner a taste of a beer that had been aged with Spanish cedar - the wood used to wrap and box cigars - he knew it was an idea worth stealing.
The aroma and flavor instantly reminded the then avid home brewer of his hometown's historic Ybor City and the hand-rolled cigars Tampa is famous for. And he knew that if he ever owned a brewery, his beer needed to evoke the same memories.
"It just blew me away because when I smelled it, it was like waking down 7th Avenue in Ybor City, walking past a cigar shop," said Redner, who now owns Cigar City Brewing. "It was a win/win. It was good and it really pinpointed it on the map as coming from my city."

A few years ago, Colorado's Oskar Blues bucked bottling trends by cladding its well-regarded Dale's Pale Ale in a more hike-friendly (and for coastal folk, beach-friendly) container. Now, almost every craft brewery in the nation is riding the wave. This means good canned beers and more variety -- IPAs, porters, wheats, etc. -- but most importantly, a bunch of awesome looking cans to fill your cooler.
The beer can is the perfect conduit for logos and all-over print. Bomb Lager employed Billy the Artist to introduce his signature "Urban Primative Pop" on its cans. Others, like Brooklyn Brewery, have a more traditional nostalgic vibe -- its logo is designed by Milton Glaser, the artist responsible for the iconic "I HEART NY" graphic. Then the folks at 21st Amendment went nuts with themes and full can narratives (and we love almost all of them). There are also benefits to cans beyond great graphics. Opaque cans limit light intake, which means the beer is protected better and has a longer shelf life than suds packaged in a clear glass bottle. Scientists Find Lager's Missing Link...Half a World Away

How did lager beer come to be? After pondering the question for decades, scientists have found that an elusive species of yeast isolated in the forests of Argentina was key to the invention of the crisp-tasting German beer 600 years ago.
It took a five-year search around the world before a scientific team discovered, identified and named the organism, a species of wild yeast called Saccharomyces eubayanus that lives on beech trees.
"We knew it had to be out there somewhere," said Chris Todd Hittinger, an evolutionary geneticist at the University of Wisconsin-Madison and a coauthor of the report published Monday in the Proceedings of the National Academies of Sciences.
Their best bet is that centuries ago,S. eubayanus somehow found its way to Europe and hybridized with the domestic yeast used to brew ale, creating an organism that can ferment at the lower temperatures used to make lager.
