Belgian Saison with Vietnamese Pho 

(ex. De Proef Saison Imperiale, Heavy Seas Red Sky at Night) 

 

Vietnamese pho is renowned for its symphony of flavors, and what better beer to pair with it than a complex Belgian saison. A good saison will match the soup's spicy clove and anise notes; it will elevate the herbaceous mint and basil and cut through the fatty slivers of rib eye steak that are so popular in the dish. The subtle funk and citrus-like acidity will be like an extra squeeze of citrus on your palate. Enjoy!

Beer Braised Sausage Hoagies

Difficulty: Easy

 

It's football season, folks, which mean it's time to bust out the propane grills, load up on ice, and hit the pavement for a little tailgating. And this here is one of my all-time favorite tailgating recipes. 

 

Beer braised sausage hoagies is a dish born of convenience. It combines sausage, the epitome of tailgating goodness, with beer, something you're likely to have a ton of on hand when you tailgate. The cooking method is so easy, too, that it's impossible to screw up -- even if you've sampled a bit too much of the good stuff before hand.

 

Ingredients 

1. About two pounds of sausages. Any variety will do -- in fact, the crazier you get the better. Spicy Italian with chorizo? OK! Andouille and bratwurst? Why not? There's nothing fussy about this dish, so use whatever variety of good quality sausages you can find.

2. Veggies. Yes, despite the fact that peppers and onions are not part of the meat food group, they do bring a lot to the table. I like the combo of one red bell pepper, one large yellow onion, and two poblano peppers, but you can use whatever mix of peppers and onions you like. I have made this with sliced jalepenos in the past. If you are so daring... have at 'er.

3. Bread. A quality hoagie roll that can stand up to an intense dousing of sauce is key. You're looking for something soft, with a slightly elastic crust.

4. Beer. The brand matters not. Lagers such as Blue Point's Toasted Lager or Native Lager work great, as do maltier ESBs or Amber Ales. Just steer clear of hoppy IPAs, which get more bitter as they reduce.

5. (Optional) Mayo. Its purpose is two-fold: It serves as a bit of a foil to the salty and savory sausages, and it helps protect the bread from soaking through with sausage juice. Yes, that actually works. 

 

Prep

Start by slicing your vegetables into strips. Crack open your beer, and get your sausages ready. And that is the prep portion of this recipe! 

 

Steps

1. Get out a big skillet and get it very hot. At the game you'll want to use a portable propane stove, but a grill top could work too if you don't have one. Just plop the skillet on the warmest part of your grill.

2. Now introduce your sausages to the skillet, browning them on all sides. Make sure you take the time to turn them so all sides get nice and caramellized.

3. Once they're good and brown, toss in your veggies and sort of move the sausages around so they're sitting on top of the peppers and onions. Let them cook for about 5 minutes and then pour in one whole beer. 

4. Let the beer come to a simmer and then cover. Cook that way for about 10 minutes, then take off the cover and let the liquid reduce for about 20 minutes. What you'll have by that time is a deep, rich sauce that's imparted with the flavor of the onions and peppers, the richness of the sausage, and a yeasty, beer-like aroma.

 

To serve, simply coat the inside of your hoagie roll with mayo, toss the sausages inside with some peppers and onions, and spoon a little of the delicious liquid over top. Enjoy!

In the history of our company, August and September have long been the slowest times of the year. The snowbirds are gone, people are finishing up vacations, and the kids are just getting back to school. It has always been a good time to take a breather, maybe go away for a little vacation, or simply kick back and enjoy a beer... ahhhh, the "fruits of our labor!"  This is not so anymore! We are going full bore into the end of summer. The fall seasonals are arriving daily and, of course, all the Oktoberfests are on our minds.  

But that isn't all. Take a look at our calendar: we've got Cigar City Week in full swing with major league tap takeovers and beer dinners at places like Laser Wolf, BX Beer Depot, Sustain, Cervezas, Funky Buddha, and World of Beer. Cigar City will be bringing in some rarities to South Florida for those events, such as Hot Blooded Foreign Stout, Caramel Graham Cracker, and Cucumber Saison, just to name a few. Then we've got Left Hand and Victory teaming up for a killer beer dinner at 8 oz. Burger Bar on South Beach, plus three other stellar events. And if that wasn't enough -- and if you don't already have plans for Labor Day -- head down to Key West for the Second Annual Key West Brew Fest and a weekend full of beer-filled events surrounding it.

There may no longer be a summer lull, but at least there will be some great beers to enjoy along the way -- and lots of fun events, too.  Hope to see you down in Key West!

Attention beer geeks: Justin Clark of Cigar City Brewing will be giving a presentation on aging quality beer on different kinds of wood at BX Beer Depot (2964 Second Ave., Lake Worth, 33461). During the presentation, BX will be offering a selection of Cigar City ales aged on a wide selection of wood, including White Oak Jai Alai IPA, White Oak-aged Florida Cracker, Humidor IPA, Heavy Toast Oak IPA, Soft Maple Brown Ale, Hickory IPA, and Humidor Zhukov's. Starts at 6 p.m., cost is $5 and includes lecture and samples. Beers will be available by the glass after 7 p.m.

Get ready for an outstanding night of pairings as Sustain Miami (3252 NE First Ave., ste. #107, Miami, 33137) teams up with Cigar City Brewing for a six-course pairing dinner. Both the beer and the menu look outrageous:

First course: homemade corndogs
paired with Jai Alai IPA

 

Second course: Taylor Bay scallops
with preserved lemon,  mustard oil, and cucumber

Third course: chile-rubbed quail
with fava bean, mint, and horseradish

with sweet-and-sour cabbage and corn bread

paired with Guava Groove Saison

Join Certified Cicerone and Fresh Beer Pimp Chris Montelius as he hosts the "Limited Edition Beer Tasting and Summit" at Abraxas Lounge (407 Meridian Ave., Miami Beach, 33139). Starting at 8 p.m., explore three-ounce samples of 12 different limited edition or rare beers. Montelius and company will explain each beer style and profile as you taste. Comers are encouraged to bring a limited edition brew from their own collection to share with the other participants. This way, everyone can try a bunch of beers without cleaning out their wallets! It's a tale of two breweries at Maxi's Lineup (Adjacent to Food Shack, 103 S. US Highway 1, ste. D3, Jupiter, 33477). The small plates destination will host a Victory/Left Hand collaboration dinner at 6:30 p.m. on August 29. Jason Ingram from Left Hand and Cameron Rollo from Victory will be in attendance for this four-course meal:

Most of us don't usually think of beer as an earth-friendly alternative to improving our gardens and lawns or dealing with a host of pests. However, if you can bring yourself to part ways with your favorite brew, or at least invest in some of the cheap stuff, you'll be surprised by beer's many uses.

1. Trap slugs and snails: Place dishes or jars of beer around your garden, especially in the evening. In the morning, the slimy critters, which have been drawn by the beer's aroma/fermentation, will have drowned. The beer can be re-used until it evaporates for garden pest control.

2. Trap fruit flies: If you keep a compost pail in your kitchen, you will also likely have fruit flies. Just place a jar or can of beer on the kitchen counter. Cover the top with plastic wrap or paper, leaving a small opening for the flies to get into. The fruit flies won't be able to get back out.

3. Distract bees and wasps from your outdoor gathering: Beer placed in cups around the outskirts of your picnic or barbeque will attract bees and wasps. It's not a long-term wasp control tactic; it's more like placing difficult relatives at the furthest table.

Brewhaha Over Small Craft Breweries Put to Rest

The Alcoholic Beverages Control Commission looked pretty silly this past week, thanks to an advisory issued on the willy nilly stating that craft brewers holding farmer-brewer licenses must also grow 51 percent of the cereal grains and hops needed to produce their beer. The ruling came about after the state's only nanobrewery, Idle Hands, applied for its license and was denied - just after licenses for startups Wandering Star, Jack's Abby, and Mystic Brewery were approved. The 51 percent threshold - which was determined by the ABCC without any prior consultation from farmers or brewers - is nearly impossible to achieve by any of the state's small breweries and put the proverbial knickers of the craft beer industry and its supporters in an enormous, uncomfortable twist.

 

And here's why: Most brewers don't have the ability or overhead to oversee enough farmland to meet the threshold. Idle Hands, who had a farm share and a hops supply contracted for 1.5 acres of land would have needed 11 acres total to meet the ABCC's requirement. Furthermore, the only license alternative is a manufacturer's license, which costs significantly more ($5,000-$7,000 versus the current $22-$100 range for a farmer-brewer license, which is based on production) and doesn't allow on-site tastings or direct sales to customers. And let's be honest: who wants to visit Sam Adams or Harpoon if you can't taste (or buy) the wares? Boo, hiss!
