Strong, Belgian-style Ale with Cuban Sandwiches
(ex. Victory Golden Monkey, Avery Salvation, Holy Mackerel Panic Attack)
A great Cuban sandwich has a symphony of flavors working -- sweet ham, fatty pork, creamy cheese, tangy pickles and mustard, and crunchy bread. Which is why you need a complex beer to pair with it such as a Belgian-style strong ale or tripel. The spicy, yeasty character of these Belgian styles will pair well with the melange of flavors, while the high alcohol content and sweetness will stand up to the richness of the meat. Enjoy!

Rib Eye Steak with Stout Pan Sauce

Difficulty: Moderate
Cooking with beer is best when you can incorporate beer into something you already make on a regular basis. For me, that's a rib eye steak.
There's nothing like cooking a steak on the grill, but the drawback is that you can't make a delicious sauce from all the juices, fats, and proteins that come off of it. That's why I often pan fry them to make a beer pan sauce.
Beer is perfect for this recipe because the alcohol does a great job at deglazing the pan. Wine is often used, but screw that. Only beer, and especially stout, has the caramel and roasty flavors that go so well with a nicely crusted steak. This really does take a steak to a whole new level.
Beer Pan Sauce Ingredients
- 1 lb. steak such as rib eye
- 6-8 oz. of beer. A stout is a good choice, but so are brown ales, porters, or Scottish ales (an IPA would not be good here)
- 1 tablespoon of butter
- 1 tablespoon of fresh herbs like cilantro, parsley, rosemary, thyme
Some other things you could add to this are onions, shallots, garlic, or peppers. I like to keep it pretty simple but go ahead and experiment to your heart's delight.
Steps
- Pan fry the steak to your desired doneness (except well-done, for the love of God).
- Remove the steak from the pan and cover it with foil. You always rest a steak after cooking anyways so this is a great time to make the pan sauce.
- Add enough beer to the pan so it's 1/8-1/4 inch deep. Adjust the heat so it's simmering. Stir with a wooden spoon, scraping up all the brown bits (called fond) that got stuck to the pan. Reduce the beer by half, which only takes a few minutes.
- Cut the heat then add the butter and herbs. Stir them in well, then either pour the sauce over the steak or put it on the side. These sauces can be intensely flavored so you might want to put it on the side if you're unsure.
That's it! Easy, huh?
I'll add that the type of pan is key in this. Don't use a non-stick pan because that defeats the purpose. A cast iron or stainless steel pan is best for getting all those brown goodies to stick which you'll then scrape up later.

Let the dancing in the streets begin!
Shipyard Pumpkinhead is here and making its debut at local retailers as I write this intro. Just smelling it will make you think of the fall...the cool breezes, the leaves changing, and the smells of sweet potatoes roasting in the oven. Amazing how our memories are so tied to taste and smell. It won't be long before Smashed Pumpkin, Southern Tier Pumpking, Bluepoint Pumpkin, and Cisco Pumple Drumkin make it into the market as well.
And the Oktoberfests will be arriving this week as well... so break out the oompah band, get your lederhosen on, and fire up some brats. It is time for some delectable beers at your favorite biergarten. More and more biergartens are opening up everyday in neighborhoods near you and will be serving the likes of Ayinger, Penn, Bluepoint, and Shiner to name a few other Oktoberfests for your drinking pleasure.
As a side note: we are the only distributor in Florida to get the Stone/Baird/Ishii Collaboration Green Tea IPA. So track that one down -- it is pretty limited and I hear it's pretty damn good as well. I'll be popping mine later.

West Flanders Ale - A regional classic. A traditionally-brewed Flanders brown ale is blended with 18-month-old lambic to create this tart, refreshing, medium-bodied benchmark ale. Reddish-amber with a tan head. Hints of tart fruit and an underlying light lambic sourness dominate the nose. The palate has apple and raisin-y fruit notes offset by a touch of brown ale caramel sweetness and a toasty/woody finish with just a light touch of hops. 5.5% ABV.
BOULDER BEER
Hoopla Pale Ale - In search of the perfectly drinkable, yet flavorful festival brew, Boulder Beer and avid homebrewer Kyle Hollingsworth -- Keyboardist for the String Cheese Incident -- joined creative forces. Hoopla Pale Ale is dry-hopped with generous amounts of Glacier hops for a fruity, floral hop aroma and flavor. Its lively hop character is wonderfully balanced with a crisp, clean finish from the unique blend of American and German grains, making Hoopla the perfect companion beer to the festival season. 5.7% ABV.

HEAVY SEAS BEER
Red Sky at Night Saison - Red Sky is brewed in the style of Belgian farmhouse ales using a unique Belgian yeast strain and authentic Belgian candi sugar. Davy Jones' Lager - This Imperial Creme Ale is fermented using lager yeast at ale temperatures then slowly lowered down to lager, taking the yeast from the top down to the depths of Davy Jones' locker. Clocks in at 7% ABV.

De Proef Saison Imperiale Farmhouse Ale - While the style is generally known for its light body and subtle spice, Saison Imperiale is a bolder, "mega" interpretation of a farmhouse ale. Light amber in color, this beer provides funky wild yeast notes and spice to the nose, with a bit more malt character, body, and hop notes as appropriate to the "Imperiale" style. 8.5% ABV.

Baird/Ishii/Stone Japanese Green Tea IPA - This very limited collaboration brew between Japanese brewers Baird and Ishii and Stone Brewing features a golden honey color, slightly hazy off-white head, pungent nose of oily hops and pine, and hints of Sencha green tea. The big viscous mouth feel follows with a nice hop bitterness on the tongue, fusel notes, and a huge hop presence with slight tea like finish on the back palate. 9% ABV.
Organic Cider- Established in 1758, Samuel Smith's Old Brewery is independent and committed to quality, using the finest ingredients available for its beer and cider. Its Organic Cider uses a wine yeast strain that provides a clean finish and allows pure apple flavor to shine through. It pours a bright straw-gold with excellent clarity, presenting a light body with brilliant conditioning, a crisp clean flavor, and a dry finish. River Falls Red Ale - Thomas Creek's flagship beer is a medium-bodied, extremely smooth Irish-style red ale with an evenly roasted malt character from start to finish. It features Perle, East Kent Golding, Tettnanger, and Willamette hops. 5.65% ABV, 21 IBUs.
Class Five IPA - A citrusy and crisp, fully-hopped India Pale Ale brewed for the true hop head. Conduplico Immundus Monachus Belgian Imperial Porter - The Conduplico, A.K.A. Double Dirty Monk, is a richer version of Thomas Creek's original Dirty Monk. It sports a surprisingly dry and tart finish and a robust roast character not found in even the darkest of Belgian beers. For those who dare to sip: get thee to confession. 10% ABV, 54 IBUs.

Dark Rum - Brewed in the first Rum Distillery in Oregon, Rogue Rum is handcrafted in 567 litre grundies using Hawaiian cane sugar, Champagne yeast, and free range coastal water. Each batch is double distilled in a process that allows lower grade alcohols to be extracted. Any impurities are then removed through a hand charcoal filtering process that delivers a smooth crisp taste that measures 80 proof. The White Rum is mellowed in oak barrels and the Dark Rum is aged in charcoaled oak bourbon barrels from the Jack Daniels Distillery in Tennessee.
Oregon Single Malt Whiskey - Oregon Single Malt Whiskey is made using Risk™ malt grown on Rogue's Micro Barley Farm in the Tygh Valley Appellation. It is combined in Newport with Free Range water in brewing vessels and then Ocean aged for 3 months. This young whiskey is light and honeyed with a golden honey color and a mildly sweet finish.
 CIGAR CITY BREWING
Table Saison - Clocking in at 5% alcohol-by-volume, this is a lower alcohol version of a French saison. Hazy gold in color, Table Saison reveals mild clove and tropical fruit notes in the aroma. Light bodied with crisp lemon peel, mild bitter curacao, and clove notes. Another thirst quenching but full-flavored summer beer from Cigar City (draft only).
Minaret ESB - Amber in color with a rich, caramel expression in the nose, Minaret ESB takes after traditional English Bitter Ales. You'll find a hint of red delicious apple and plenty of grassy, herbal character from the East Kent Golding and Fuggles hops. The beer is full-bodied without being cloying, and features a nice caramel center with a dry, clean finish (draft only).

Craft Breweries Struggle to Meet Increasing Demand

Some craft brewers are growing by shrinking.
After years of shipping beer farther and farther away, many small brewers are now shrinking distribution to sell beer more profitably at home.
The strategy reflects the nation's growing thirst for boutique beers from independent breweries that simply can't produce enough to meet the demand of a larger market - so they're putting local customers first.
"The idea of leaving sales territories is not ideal, but demand locally is necessitating it," said Paul Gatza of the Brewers Association, a craft-beer trade group in Boulder, Colo.
It's a good problem for Frederick-based Flying Dog Brewery, known for highly-hopped ales with naughty names like Doggy Style and Raging Bitch. Chief Executive Jim Caruso announced in June the company was halting distribution in 13 Southern, Midwestern and Western states to bolster its position in what he called "the new world of craft beer."

Cicerones Make Dining Out With Beer a Snap

Fine restaurants have long employed sommeliers for the purpose of pairing wine with food. It's a position that requires a great deal of knowledge, and it may not surprise you to know that it involves more effort than simply wandering about intimidating diners and growing a tiny, pencil mustache. Usually, the job involves choosing the wines for the restaurant and the management of a cellar, with all of the attention to tiny details that is required. It requires months of intense study and a complex understanding of the process of the vintner's art from grape to glass.
But what if your customers aren't interested in wine?
There's no particularly good reason that the same level of attention shouldn't be paid to beer. Many of the same issues apply, from selection of a decent lineup of draught and bottles to finding the proper glassware to serving temperatures. There's even, in upscale venues, cellaring of bottles for aging to be taken into consideration. If you add English style cask ales into the mix, beer that is still alive and changing when it arrives at a pub, the job might even involve bashing things with a mallet. In the hands of an untrained server, this can result in a jet of yeast and ale shooting across the bar.

The History of Hoppy Beer, Explained

In an 1843 essay, "A Walk to Wachusett," naturalist Henry David Thoreau wrote: "The culture of the hop, with the processes of picking, drying in the kiln, and packing for the market, as well as the uses to which it is applied, so analogous to the culture and uses of the grape, may afford a theme for future poets."
Nearly two centuries later, the culture of the hop most definitely has taken root, not perhaps where Thoreau might have predicted, but most notably on the West Coast.
