West Coast-style IPA with Tuna Tataki (ex. Stone IPA, Avery IPA, Rogue Brutal IPA)
It's no secret that Asian food and pale ales go together like white and rice. But this combination of luxurious tuna with a refreshingly hoppy IPA takes it to another level. The secret is in the high carbonation and crisp finish of West Coast IPAs, which cuts through the richness of the fish. Tataki is also traditionally served with lemon-soy ponzu, a flavor profile that gets along perfectly with citrusy, piney West Coast hop varieties such as Cascade, Centennial, and Chinook. Enjoy!

Ogden Sangria and Honey Bee

Difficulty: Easy
Mead is hot stuff!
The ancient honey wine is showing up as a cool ingredient in summertime cocktails, particularly at Miami's Kill Your Idol on Espaņola Way. The unconventional bar and lounge has created a whole line of Norse-themed cocktails utilizing the Viking's beverage of choice. To recreate its "Ogden Sangria," pick up a bottle of mead from Michigan's B. Nektar Meadery along with a few other key ingredients. While you're at it, try a "Honey Bee" -- a mead-driven take on the classic island cocktail.
Ogden Sangria
Adapted from the version made at Kill Your Idol in Miami
Ingredients:
- 2 oz. B. Nektar Dry Orange Blossom Mead
-juice from one clementine orange
-1-2 whole strawberries
-1 oz. vodka
-.5 oz. triple sec
Muddle or puree strawberries and add to Boston shaker. Combine other ingredients with ice and shake well. Strain and serve in chilled wine glass.

-1 oz. B. Nektar Dry Orange Blossom Mead
-1 oz. Kirsh, a German cherry brandy
-.5 oz. gin
-1 oz. grapefruit juice
-1 oz. orange juice
Mix the ingredients in the shaker with ice, then pour into a highball glass.

As we sit around and swelter with the rest of the country in the heat of the summer, it is hard to imagine that in the beer world the summer is all but over. Yes, there are still going to be all the classic summer beers available at your retailer for a bit longer. Things like Shipyard Summer, Blue Point Summer, Shiner Ruby Redbird, Magic Hat Summer Scene, and Wacko are out there, but you should really start taking inventory because in the next month or so they will be disappearing until next year.
Yes it's true, our fall selection of products will be arriving soon to our warehouse. It's hard to imagine cool weather beginning to filter down from the North at the moment. But that will not stop the forward march into the next season for beer. Products like Southern Tier Pumpking, Dogfish Punkin, and of course the big daddy of all Pumpkin beers, Shipyard Pumpkinhead, will be making their first appearance in mere weeks. And don't forget the Oktoberfests...Penn, Ayinger, Stoudts, Blue Point, and more.
So if you've got a favorite summer beer and still want to savor it as our long South Florida summer winds slowly into the fall, be sure to stock up now. The leaves might not be changing but the bottles on the shelf will be soon.

Dockside Pilsner - A light-bodied and golden German-style Pilsner with a very light and clean finish. A careful blend of German hops add complexity and maintain its microbrewed integrity. 4.5% ABV, 26 IBUs.
River Falls Red Ale - Thomas Creek's flagship beer is a medium-bodied, extremely smooth Irish-style red ale with an evenly roasted malt character from start to finish. It features Perle, East Kent Golding, Tettnanger, and Willamette hops. 5.65% ABV, 21 IBUs.
Class Five IPA - A citrusy and crisp, fully-hopped India Pale Ale brewed for the true hop head. Two-row, Victory, and caramel malts provide the backbone for a bouquet of East and West Coast hops, plus copious amounts of dry-hopping. Class Five picked up a silver medal at the 2003 World Beer Championships. 5.5% ABV, 84 IBUs.
Up the Creek - Mashed at a low temperature to increase the amount of fermentable sugars while reducing residual sweetness, this hoppy behemoth of a beer hides its alcohol well. As Imperial IPAs go, UTC is designed to be dangerously drinkable. So use caution, or you'll find yourself Up the Creek! 12% ABV, 111 IBUs.
Conduplico Immundus Monachus Belgian Imperial Porter - The Conduplico, A.K.A. Double Dirty Monk, is a richer version of Thomas Creek's original Dirty Monk. It sports a surprisingly dry and tart finish and a robust roast character not found in even the darkest of Belgian beers. For those who dare to sip: get thee to confession. 10% ABV, 54 IBUs.
Dark Rum - Brewed in the first Rum Distillery in Oregon, Rogue Rum is handcrafted in 567 litre grundies using Hawaiian cane sugar, Champagne yeast, and free range coastal water. Each batch is double distilled in a process that allows lower grade alcohols to be extracted. Any impurities are then removed through a hand charcoal filtering process that delivers a smooth crisp taste that measures 80 proof. The White Rum is mellowed in oak barrels and the Dark Rum is aged in charcoaled oak bourbon barrels from the Jack Daniels Distillery in Tennessee.
Oregon Single Malt Whiskey - Oregon Single Malt Whiskey is made using Risk™ malt grown on Rogue's Micro Barley Farm in the Tygh Valley Appellation. It is combined in Newport with Free Range water in brewing vessels and then Ocean aged for 3 months. This young whiskey is light and honeyed with a golden honey color and a mildly sweet finish.

Florida Cracker White Ale - Light-bodied and easy drinking, this sessionable witbier pours a cloudy straw color. Citrus and coriander hit you up front, with moderate notes of orange peel, coriander, and vanilla, before finishing with citrus and flowers. A great summer beer (draft only).
Oatmeal Raisin Cookie - This complex oatmeal nut brown ale is aged on raisins, Ceylon cinnamon, and Madagascar vanilla beans to create a deep brown color and an aroma reminiscent of oatmeal raisin cookies. Expect mild cinnamon and vanilla notes upfront with emerging raisins, and a lightly spiced finish with hints of toasted bread (draft only).
Xenu Honey Cream Ale - A light bodied and refreshing ale, with a clear bright yellow pour. Big frothy white head. Sweet aroma of straw and lemons. The taste is crisp, refreshing and clean, with citrus, grass, and a slight bitterness on the back end. Overall a great compliment to the summer weather (draft only).
Table Saison - Clocking in at 5% alcohol-by-volume, this is a lower alcohol version of a French saison. Hazy gold in color, Table Saison reveals mild clove and tropical fruit notes in the aroma. Light bodied with crisp lemon peel, mild bitter curacao, and clove notes. Another thirst quenching but full-flavored summer beer from Cigar City (draft only).
Minaret ESB - Amber in color with a rich, caramel expression in the nose, Minaret ESB takes after traditional English Bitter Ales. You'll find a hint of red delicious apple and plenty of grassy, herbal character from the East Kent Golding and Fuggles hops. The beer is full-bodied without being cloying, and features a nice caramel center with a dry, clean finish (draft only).

Brewers Go Farmstead-to-Kettle to Combat Shortage

As a certified-organic brewery, Boulder-based Asher Brewing Co. is often at the mercy at what the market can bear and has to source ingredients where they're available.
Asher acquires its grains from Vancouver, Wash., and its hops from Germany, New Zealand and parts of the United States.
"An organic brewery, people look to us for our carbon footprint and our sustainable practices," said Steven Turner, a co-founder of the not-yet 2-year-old brewery. "We would really love and be excited to someday be able to make an all-Colorado beer."
Other area craft brewers -- many that do not have to rely on landing the more exclusive organic ingredients -- share similar sentiments.
The founder of Longmont's Oskar Blues Brewery said there's a great deal of frustration in watching hops prices fluctuate by $21 per pound overnight and in practically being forced to buy Canadian barley because of a relatively complex Colorado market for the grain.
Those and other complications, however, could be easing as some change is brewing in the Colorado agriculture landscape.
Within the past three years, a number of small hop farms have popped up across the state; a couple of proprietors are working to open the Colorado barley market to smaller brewers; and others, such as Oskar Blues, have launched their own farms.
Many obstacles face the growth of Colorado and Boulder County's beer agriculture, but craft brewers, farmers and others say they're optimistic about the progress thus far.
"We really are excited about the infant industries in Colorado," Turner said. " ... We're a young infant brewer, so we're thinking we could grow with the local (agriculture) industry -- that we could grow it together."

Beer Cocktails Put a New Twist on Summer Refreshments

Cold to the touch and wet on the tongue, ice-cold beer is one of the best antidotes to hot weather. Beer cocktails, then, are a welcome upgrade from the predictable cooler full of bottles at summer barbecues.
No doubt your guests will be familiar with the shandy, typically comprising a light-bodied ale and a mixer of lemonade or citrus soda.
But beer can do better. You can do better.
Think of beer cocktails as an excuse to dabble in two things: brews and booze. And because most beers carry lower alcohol-by-volume ratings than hard alcohol, you'll be doing your guests the favour of curbing their intake under the sun, when dehydration is riskiest.
The most basic rule of building beer cocktails? Use quality ingredients.
"It's so simple," says Gabriel Orta, co-founder and partner of Miami Beach's Bar Lab cocktail consultancy, which designs drinks for the W South Beach, hotel among others. "If you have good spirits and good beer, you're going to have a good cocktail."

Thirsty? There's an App for That

When you're buying an unfamiliar beer, one of the toughest things about the transaction is spending money on something you may not like.
Well don't worry anymore, because now there's an app for that. Brew Gene is a free iPhone application created by a group of friends who want to eliminate beer buyers' remorse.
"We were at a cookout a couple of years ago and there were a bunch of random beers there and you were just grabbing them and you'd end up grabbing one you didn't like," said John Muggeridge of Southborough, Mass. "We thought, wouldn't it be great if there was a site that would tell you what you like, and what you will like going forward?"
That sparked the idea for Brew Gene, which began as a website, Brewgene.com. Along with Muggeridge, the site was started by partners Mike Kelly, Connor Tyrrel and Justin Unger. Erik Asmussen joined the group when they decided to create the iPhone app.
