Pork Belly Banh Mi with Spicy Cucumbers Made with Hottenroth

NOTE: The pork belly can be made a day ahead of time, chilling in the fridge. The cucumbers can be made the morning of.
For 4-6 sandwiches
Ingredients:
For the Pork -1 1/2 lbs pork belly, skinless -2 tablespoons salt -1 tablespoon white sugar -1 tablespoon brown sugar -2 teaspoon ground ginger -1 1/2 teaspoon chinese five spice -1 teaspoon white pepper -2 The Bruery's Hottenroth Berliner Weisse
For the Cucumbers -2 large garden cucumbers, thinly sliced -2 teaspoons salt -3 tablespoons sugar -2 teaspoons crushed red pepper -4 garlic cloves, minced -1 tablespoon Asian fish sauce -1 tablespoon soy sauce -2 tablespoons sour beer (optional), I used Hottenroth by the Bruery, but any Berlinerweisse is fine.
For the Sandwiches -1 large baguette, maybe 2, halved and sliced into whatever size you want your sandwiches to be -1 bunch cilantro, leaves picked off, stems discarded -2 large carrots, grated
-Mayo (optional)
Start with the pork. Mix together the dry ingredients and rub into the pork belly, brush off the excess. Put the pork belly in a snug container and pour the beer over it. Marinate for at least six hours and up to 24. Pre heat the oven to 450 F, and dry off the pork belly on some paper towels. Put the pork belly into a snug roasting pan or pyrex dish and roast for one hour, basting once half way through. Make sure it's in the center or lower rung of the oven, as the top can brown quickly. If it starts to get too dark, cover with some foil. After an hour, turn the oven down to 250 F and cook for another hour to and hour and fifteen minutes. You want the pork to be soft to the touch, but not falling apart. When it's done, take it out of the oven and cool until you can handle it, and wrap it up in plastic wrap and stick in the fridge to chill. Chilling makes it a lot easier to slice, so if you don't care about looks, you can slice right away. If you do chill it, heat up the slices in a pan for a little to warm it through.
For the cucumbers, cover the slices with half the salt and sugar and let them rest for 15 minutes. They'll leach out a little liquid, so I did this in a strainer. Place the cucumbers in a bowl with all of the other ingredients, and let them marinate for 15-30 minutes. Just try not to eat all of them before you get to the sandwiches!
Next, assemble the sandwiches. I lightly toasted the baguette, spread a tiny bit of mayo on the bread for moisture, then on the top side layered the carrot and cilantro, and on the bottom layered the pork belly then the cucumbers. Enjoy!

It is this freedom that has made the American craft beer industry one of the most exciting and fast growing industries in the country and in the world. Wildberry Pyment - A 'Pyment' (pie-ment) is a mead made with grapes. This one is made with clover honey, shiraz grape juice, and natural wildberry concentrate. It is full bodied and semi-sweet. Makes a great sangria or try it over ice as a spritzer.
Vanilla Cinnamon - A light colored, sweet mead made with whole cinnamon sticks and vanilla beans. The beans are sliced open by hand before being added to the mead to ensure maximum flavor extraction. Yo Momma's Strawberry Pizzazz - Almost 5 pounds of fresh strawberries were used per gallon to deliver a beautiful aroma followed up by incredible flavor. Simply a classic mead to share with someone special. The flavor is rich with fresh strawberries and honey. The seeds and acidity from the strawberries help to balance out the sweetness and provide a well rounded, fresh fruit character.
Margarita-Style Melomel - Made with dark and light agave nectar, orange blossom honey, fresh lime juice, lime zest, and orange zest. This mead was inspired by the popular tequila beverage. This is a variation on a recipe that's been floating around their homebrewing club (F.O.R.D.) for years.
Pineapple Coconut Melomel - B. Nektar's Pineapple Coconut Mead is so delicious, their dear late friend Jon once called it 'God Juice'. Orange blossom honey, pineapple juice and coconut make this one of their most exciting releases to date. The flavors will take you to tropical shores with warm breezes.
Backwoods Cyser - A cyser (pronounced: Size-er) is the name for a mead that is made with apple cider. They used fresh pressed, unfiltered Michigan apple cider and fermented it with local wildflower honey. They then aged this mead in 12 year old bourbon barrels for 1 ½ years. The mead is then back sweetened with local star thistle and buckwheat honey. Serve this at cellar temp in an over-sized wine glass, or a snifter.
Barrel Aged Dry Cyser - A dry mead made with apple cider and wildflower honey. They matured this mead in oak barrels for about a year to mellow the flavor and contribute to the body. Best served chilled. Pairs wonderfully with food.
 THE BRUERY
Cuir Third Anniversary Ale - Cuir is The Bruery's third anniversary ale. It is the same recipe as Papier and Coton, created using the Solera method. Layered with complex flavors of dark fruit, vanilla, oak, and burnt sugar, they blended a portion of both Papier and Coton that had been aging in oak barrels with this new batch of the same beer, adding an additional layer of complexity that will grow over time as they continue to age and blend with each anniversary, creating an older average age to the ale.

2011 Top Beer Consumption States Per Capita

Who loves their beer the most? Across the country, craft beer is exploding - we've all seen the news and major craft breweries like Sierra Nevada, New Belgium, and Yuengling. Well, it's time to put your money where your mouth is America - how much do you really love beer?
The obvious answers that we may all think about (Colorado, California, and Texas) do not rank amongst the top. Remember this is per resident, how much alcohol is purchased (and specifically by the population that is 21+). Based on that sentiment, according to the Beer Institute, an industry lobbying group in Washington D.C., New Hampshire has the highest beer sales per person in the United States.
New Hampshire houses 17 breweries, including an 865,000-square-foot Anheuser-Busch facility in Merrimack. In 2010, an average of 32.7 gallons of beer, the equivalent of nearly 350 12-ounce cans, was sold per legal drinking-age person in New Hampshire.
The overall rate for the rest of the country was 20.7 gallons. New Hampshire clocked in ~58% higher than the national average.
The typical rule is the colder the state is the more beer they sell. However, the Summer is the peak selling season for beer.

The South may rise

A new breed of Appalachian farmers are sending hops up the wires.
When you think of North American regions known for growing hops, the Pacific Northwest probably comes to mind first. Next, upstate New York. After that, the list trails off quickly. Though things are quietly changing: For the past three years, a group of small farms in western North Carolina's Appalachian mountain region have been raising trellises and achieving some early success.
This area of the South is best known for bluegrass, moonshine, dry counties and Eric Rudolph's mountain hideaway. It also once had a reputation as tobacco-farming country. As that crop became less profitable, mountain farmers were forced to diversify: A drive through the counties that surround Asheville finds these farmers cultivating heirloom apples, truffles and shiitake mushrooms. It was only a matter of time before hops took root.
Located in Black Mountain, Van Burnette's Hop'n Blueberry farm has been in the family for more than 160 years. About six years ago, Burnette began toying with the idea of growing hops when Pisgah Brewing Co. opened a few miles away.
"I started researching it, but nobody around here was growing hops. There was nobody nearby I could contact who was even considering it," he says. So he set out on his own, and later came across other small farms attempting the same crop.

Mich. Allows Sale of Md. Beer With Vulgar Name

Michigan liquor regulators have switched their position and will allow sales of a Maryland-based beer with a name that's offensive to some people.
Flying Dog Brewery has received approval to promote and sell a popular India pale ale called Raging B---- in Michigan. Julie Wendt of the Liquor Control Commission said the agency on Tuesday followed a recent U.S. Supreme Court decision that found states cannot engage in "content-based discrimination."
Flying Dog Brewery of Frederick, Md., already sells other beer in Michigan. Flying Dog Brewery's chief executive Jim Caruso told the Frederick News-Post that "Michigan surrenders!"
Flying Dog still has a First Amendment lawsuit pending in federal court in Grand Rapids, Mich., and Caruso said the company is proceeding with the case despite the liquor control commission's decision. For full article.
