Featured Beer and Cheese Pairing:

Featured Cooking with Beer Recipe of the Week

White Beer Cookies

White Beer Cookies

Difficulty: Easy

Time: 40 minutes prep / 16 - 20 minute bake time

Beer Style: Witbier (White) Ale

Seasonality: Summer

Serves: 24 cookies

 

Ingredients:

 

Cookies

-2 bottles (12 oz. each) -Belgian-style white beer (witbier)
-5 tbsp honey
-1 1/2 sticks unsalted butter, room temperature
-1 1/4 cups powdered sugar
-1 large egg
-1/2 tsp vanilla
-1 medium orange, zested
-2 tsp ground coriander
-2 cups all-purpose flour
-1/2 tsp baking soda

 

Icing (optional, but not really)

-1/2 tsp vanilla
-1 cup powdered sugar
-1 tbsp orange juice
-1 tbsp whole milk
-1 orange, zested

 

Directions Cookies:

Combine beer and the honey in a medium saucepan over medium heat and reduce until 1/3 cup of liquid remains. I know. You're starting with 24 oz. of beer and reducing it to 1/3 cup. 

About 40 minutes or so. You should skim that foam off the top of the liquid and discard during the reduction.

 

Tip: The liquid will begin to aggressively foam because of the high sugar concentration when there is around 1/3 cup remaining

While your reduction is cooling, cream the butter and sugar together.

 

Add the egg and blend the mixture together.

 

Then add vanilla, orange zest, coriander, and the beer reduction. Blend together.

Whisk the flour and baking soda together in a separate bowl and slowly add it to the batter. Mix until just blended.

 

Scoop mounds of cookie dough onto an aluminum cookie sheet lined with parchment paper, fitting about 12 cookies on a pan.

Bake at 350 degrees for 16 - 20 minutes.

 

Let the cookies cool for about 10 minutes.Then move them to wire racks to finish cooling.

 

Directions Icing

Begin by whisking the vanilla into the powdered sugar. In a separate bowl, mix the orange juice and milk together. Then pour the orange juice/ milk mixture into the sugar, until you reach your desired consistency of a thick paste. Probably only 1 tbsp of the orange juice/milk.

 

Make sure your cookies are completely cooled! Using a butter knife, put a dollop of icing on each cookie and spread it a bit over the top. Then place a small piece of orange zest on top of the cookie as garnish. Let the icing harden a bit and enjoy!

After watching the video of Sam Calagione from Dogfish Head (in the News section below) receive an award from Fast Company for being one of the most creative people in business today, I found myself reflecting on the growth of craft beer and our business.  I encourage you to watch the video because Sam talks not only about the meteoric rise of his company and craft beer in general but also the basis for the creative edge that drove his company to the success that he is having today. He reflects on how during recent times we actually left the unique and unusual styles of past brewing processes behind and settled into an almost white bread approach to brewing that wound up dominating the market worldwide.

 

It is this renewed interest in flavor and style that has driven not only Dogfish Head but the entire craft market. We are almost turning back the hands of time as brewer's experiment with a wide variety of ingredients and toy with many different flavor profiles to find unique and interesting beers that appeal to this new (and older) generation of beer drinkers. While many of these beers may not be "your cup of tea" or "beer" as the case may be, it is the pushing of these boundaries and the excitement that it has created within the industry that continues to drive the growth. It is a brave new beer world out there these days and we have a lot to look forward to.

June 29th

Yo Momma's Strawberry Pizzazz - Almost 5 pounds of fresh strawberries were used per gallon to deliver a beautiful aroma followed up by incredible flavor. The seeds and acidity from the strawberries help to balance out the sweetness and provide a well rounded, fresh fruit character.  

 

Margarita-Style Melomel - Made with dark and light agave nectar, orange blossom honey, fresh lime juice, lime zest, and orange zest. This mead was inspired by the popular tequila beverage. This is a variation on a recipe that's been floating around their homebrewing club (F.O.R.D.) for years.  

 

Pineapple Coconut Melomel - B. Nektar's Pineapple Coconut Mead is so delicious, their dear late friend Jon once called it 'God Juice'. Orange blossom honey, pineapple juice and coconut make this one of their most exciting releases to date. The flavors will take you to tropical shores with warm breezes. 

 

Backwoods Cyser - A cyser (pronounced: Size-er) is the name for a mead that is made with apple cider. They used fresh pressed, unfiltered Michigan apple cider and fermented it with local wildflower honey. They then aged this mead in 12 year old bourbon barrels for 1 � years. The mead is then back sweetened with local star thistle and buckwheat honey. Serve this at cellar temp in an over-sized wine glass, or a snifter. 

 

Barrel Aged Dry Cyser - A dry mead made with apple cider and wildflower honey. They matured this mead in oak barrels for about a year to mellow the flavor and contribute to the body. Best served chilled. Pairs wonderfully with food.

Cuir Third Anniversary Ale - Cuir is The Bruery's third anniversary ale. It is the same recipe as Papier and Coton, created using the Solera method. Layered with complex flavors of dark fruit, vanilla, oak, and burnt sugar, they blended a portion of both Papier and Coton that had been aging in oak barrels with this new batch of the same beer, adding an additional layer of complexity that will grow over time as they continue to age and blend with each anniversary, creating an older average age to the ale.

2,500 Years Ago French Brewed Their Own Beer

France and wine, the two have been married in our minds since we were little kids. The French arrogance towards anyone else's alcohol is well renowned and several movies have been made to capture their sentiments. However, who knew that French loved beer in the Iron Age as well?

 

Yes, that's right - archaeologists have uncovered evidence that the occupants of southeastern France were brewing beer during the Iron Age, some 2,500 years ago. The discovery found barley grains as well as an oven nearby that may have been used to regulate the brewing process. The recent find was in Roquepertuse, close to modern Aix-en-Provence, and was excavated in the 1990s.

 

Beer's history has been dated back to the Bronze Age (some 4,000+ years ago) in China and the Middle East, but this is the first sign that it was developed in France, which had already established its wine-making practice.

 

The malted grains and, more importantly, the arrangement that were found by the team tends to indicate a "home-brew" scenario (probably not a Mr. Beer Kit!). "All that is needed is an amount of grain, some water, containers (commonly pottery vessels) in which to soak the grain, a flat paved area - possibly the floor - to spread out and turn the grain during germination, an oven to dry it in order to stop germination, domestic grindstones to grind the malted grain, hearths and again containers for fermentation and storage," they wrote.

 

Although it looked like beer, the taste still remained a mystery. "It is...still difficult to know what the taste was of this beer," added Bouby, a researcher in the Institute of Botany at Montpellier. "We know nothing, for example, about possible additives used in brewing, such as hops. We know nothing about possible lactic fermentation, which would give a sour taste to the beer." Dogfish Head Founder's Unique Recipe For Creating A Great Beer Company

The two Sams, Nos. 11 and 46 on our Most Creative People in Business list, respectively, put their heads together last week at Fast Company's Most Creative People conference, where Calagione praised the White House's home brewing and cooking initiatives. (Kass has been brewing beer at the White House from locally sourced honey.)

 

"We just tasted the honey porter yesterday, which was unbelievably good, if I do say so myself," Kass said. "We have no idea what we're doing--we're just experimenting, so anytime you want to come for a visit and give us some pointers, we'd be more than happy."

 

"What herbs and spices are you and Michelle [Obama] growing in the garden?" Calagione asked Kass.

 

"Only legal ones," said Kass, to peals of laughter.

The serendipitous brainstorming session occurred during Calagione's enlightening talk on the state of the brewing industry. His startup, Dogfish Head, is one of 1,700 breweries in the country--two of which, InBev and SABMIller, control over 80% market share. Roughly another 10% of the market is owned by imports Heineken and Corona, while independent domestics such as Sam Adams and Yuengling make up for the rest. "You can see the odds that us little guys are up against in this industry," Calagione said.

 

The odds were always stacked against Dogfish. When Calagione started the company years ago, he did so with just $25,000 borrowed from his dad, another $25,000 from his orthodontist, and roughly $50,000 from the guy he used to do stonewall for in the summer. His business plan was to make "off-centered" ales with some of the most unusual ingredients you can imagine, including one that is fermented in part using his own saliva.

 

Yet despite the competition, Dogfish has flourished, thanks to Calagione's almost anthropologist-like approach to brewing. During his talk, he spoke of ancient recipes from Africa and the U.K., help from molecular archaeologists, and referenced research on crockeries in the tombs of Egypt. Some of the earliest beers, he explained, were developed during the time we shifted from hunter-gatherers to settlers. For full article and video
