A Hefeweizen is a pale, spicy, fruity, refreshing wheat-based ale. The delicate flavors of the cheese and beer match up well. Neither has a level of intensity that will overshadow the other.

Shiner Bock Drunksticks

Serves: 2-3
Ingredients
For Shiner Bock Drunksticks: -1 lb chicken drumsticks (about 4-6) - preferably organic -2 bottles Shiner Bock -2 tablespoons garlic, chopped -2 tablespoon shallot, chopped -1 tablespoon sriracha -1 tablespoon dijon mustard -1/4 cup sugar -1 tablespoon kosher salt -2 tablespoon vegetable oil
For the Glaze:
-1 bottle Shiner Bock -1/4 cup white sugar -1/2 cup brown sugar -1 teaspoons sriracha salt to taste Directions:Rinse the drumsticks under cold water and pat dry with a paper towel. Set aside. In a large bowl add all the ingredients and whisk well until most of the sugar and salt has dissolved. Place the drumsticks in the marinade and marinate for 3 hours to overnight. Preheat oven to 400F. Line a large baking tray with foil. Remove drumsticks from marinade, pat dry and place on the baking sheet. Bake for 20-30 minutes (depending on the size of your drumsticks) - you can use a meat thermometer or pierce the thickest part of the thigh with the tip of your knife (if the juices run clear it is done). While the chicken is baking in the oven, you can prepare the glaze. In a large saucepan, add the beer, and sugars- place over medium high heat. Make sure the sugar is evenly dissolved and allow mixture to reduce to the consistency of maple syrup, about 10 minutes. Stir in the Sriracha and add salt to taste. Wow! What a week...American Craft Beer Week was! All I can say is incredible. Over 20 events from tastings and beer dinners to full out pub crawls. I wanted to say a big thank you for all of you craft beer lovers that made it out to one or more of our great events. A special thank you for all 77 of you that participated in our first "Ales on the Avenue" - Delray Beach Pub crawl. A fantastic turnout! I wasn't able to be at that one but I heard the G'Knight on the Randall with Lemon, Lime, Orange and Grapefruit peel, Lemongrass and Centennial hops was fantastic. Loads of fun was had by all!
But even after such a week, we here at Fresh Beer just keep on trucking and we've got two more Dogfish Head beer dinners lined up at two brand new craft hot spots in both Miami and Boynton Beach. Which way do you go? I have no idea...I'm trying to figure out myself! And that is just the beginning...there are more events and tastings on the horizon not to mention new beer lines like Twisted Pine coming into the market. Just remember "The liver is evil, we must punish it!"

TWISTED PINE BREWING COMPANY
Hoppy Boy IPA - Hoppy Boy India Pale Ale is the flagship beer of Twisted Pine. It pours a hazy pale orange and has a dry, tart taste with an earthy bitterness. Pleasant grapefruit and citrus notes are provided by the addition of Cascade hops. This classic American IPA is brewed with medium caramel malts that play off the citrus and orange rind hop flavors to make this beer most enjoyable.
Billy's Chillies - This light-bodied ale has an amazing chili aroma that jumps out at you. They infuse wheat beer with fresh Serrano, Habenero, Jalapeno, Anaheim, and Fresno chili peppers. Surprisingly, the chili flavor is strong but not overpowering and comes through without lending too much heat. Billy's Chilies is a very drinkable beer and pairs especially well with food. It finishes dry with a spiciness that will leave you thirsty for more.
Raspberry Wheat - Raspberry Wheat Ale is an unfiltered wheat beer that is refreshing and perfectly balanced with a crisp tartness. Raspberries meet the nose, leading way to a clean creamy texture. Pours a golden color with a nice white head. The flavor is subtle, yet very distinct. A popular beer that will bring back your best summer memories all year 'round!
Big Shot Espresso Stout - Rated a 95 on ratebeer.com. Big Shot is a favorite of many coffee-loving beer drinkers. This thick Stout is playfully infused with espresso in every pint. It pours jet black with a rich creamy brown head with wonderful roasted coffee and grainy malt aromas. The earthy, dark chocolate flavors of the espresso showcase the flawless balance of the beer.

Grey Lady Belgian-style Wit - The name "Grey Lady" comes from the nickname for the often-foggy island for which it is brewed. This hazy, Belgian-style Wit emits a complex, earthy nose with sophisticated notes. The sift, malty mid-palate has wicked good zesty hints but gives way to a delectably dry finish. Quenching!

Cask Ales: Does Carbonation Matter?

With the coming of summer and everyone, especially beer enthusiasts, look towards summer months and brews, breweries are constantly looking for new tastes and styles of beer. This may include the kind of brew (lagers, IPA's, Porters, etc.) as well as the manner in which the beer is poured. When drinking a draft beer, the keg is pressurized, and then carbon dioxide or nitrogen are used when pouring. In no way does either method, carbon dioxide or nitrogen, effect taste. Though these two methods are the most popular, there is another method of receiving your beer from the tap and that is from a cask without carbonation. Without going too much into a chemistry lesson and getting too involved with the science of brewing and storing beer, this "new" method, one without carbonation, raises the question, does carbonation, or lack thereof, effect taste?
Traditional kegs, the kegs most are familiar with, have a tube and valve located within them to allow beer to go in and gas out when both filling and emptying. Beer in a traditional keg has been sealed and then gas-pressurized. For those of us, and what beer drinker hasn't, who have ever tasted beer that has become "flat" it is because the pressure from the keg has been released and the beer has come in contact with oxygen - the real carbonation killer.
Cask ales, or "Real Ales," differ because they are unfiltered and are served without the use of nitrogen or carbon dioxide when poured from keg to glass. This of course causes many people to think because of the lack of pressure cask ales are flat. This is not true, cask ales have natural carbonation which comes from the secondary fermentation in the brewing process. However, the main difference between cask ales, and ales that are cask conditioned, is smell and taste. For full article

The Bruery increases capital investment, makes lineup changes

(Placentia, CA) - The Bruery announced that it is investing further in its brewery and shifting its focus even more on barrel-aged beers. In doing so, there is a casualty and a couple other changes.
Per a newsletter/news release just sent out...
"As we approach our 3rd anniversary, it's incredible to look back at the journey of these last few years. Our growth has been of a magnitude that we never could have imagined when brewing our first 15-barrel batch. As you might already know, we've been operating at capacity for over the last year and a half; a near doubling of capacity in January of this year has been a mere drop in the bucket. We've reached a fork in the road. One path is to open a much larger brewery that would satisfy demand over the long term, and accumulate millions of debt and bring on outside investors to get to that point. The other path is renewal of our original vision: a small, family-owned business making some of the most interesting, highest-quality specialty beers available in the market in our own unique way. After much debate, research and soul-searching, we've chosen the latter path - but on a grander scale.
We have just leased a temperature controlled warehouse space that we will be filling with thousands of oak barrels, allowing us to create some of our favorite beers such as Oude Tart, Melange #3, and a variety of other delicious and innovative beers. We're extremely excited for this cellar expansion both because it will allow our creativity to shine and because it will help us get our favorite beers into more glasses in more cities. Since day one at The Bruery, we've been making barrel aged ales with an eventual goal to fill shelves with these complex and full-bodied beers. Until now, we have only been able to do this on a limited basis, primarily reaching only those in our Reserve Society. This new investment will allow us to brew more, distribute more and get more specialty beer into the marketplace.
With this change, we have had to make room in our brewing schedule to brew the beers that we'll be barrel aging. Unfortunately, Orchard White is the victim. While we have great love for Orchard White, we feel there are many great witbiers available and believe our limited resources are best spent elsewhere. Further, Rugbr�d will now only be available in the fall and winter, with Hottenroth taking it's place in the spring and summer beginning in 2012." For full article

Homegrown Stone
By: Draft Magazine For the past year or so, we've watched as Stone Brewing searched for a brewery location somewhere in Europe, but it's new developments closer to home that are making waves today. The prolific California brewery is slated to undergo huge expansions and developments over the next year, and there's even talk of constructing a Stone hotel.
Aside from its beer, Stone's probably best known in the industry for its focus on the slow food movement, showcased especially during its regular Fresh! dinners, when every ingredient is harvested or killed the day of the meal. So, it's a natural fit that the brewery recently purchased the lease to local farm La Milpa Organica. Located just eight miles from the brewery, Stone Farms will total 18 acres, and contribute to the "eat local" ethos of the Stone World Bistro. This comes at perfect timing as the brewery's slated to open a second bistro location in San Diego's Liberty Station some time next year.
But that's not all. Stone has also secured two leases on plots adjacent and across the street from the brewery. Part of the land will be set aside for the construction of a Stone hotel, which could be open for business as early as 2013. The other portion will be used as a separate brewing facility, which will probably be set aside for the production of experimental projects, including sour beers.
So that's the news from San Diego. Still no word on where Stone might end up in Europe, but it's clear the company is deepening its roots in its hometown. For original article or the The video announcement.
