Featured Beer and Cheese Pairing:
Asiago and a Brown Ale (Ex. Native's The Eleven Brown Ale, Avery Ellies Brown, Cigar City Maduro Brown, Peak Organic Nut Brown Ale, Shipyard Brewers Choice Brown Ale etc.)  

Asiago is a wonderful cheese that is experiencing new notoriety in cooking circles.  Asiago is a semifirm Italian cow's milk cheese that exhibits a somewhat nutty flavor.  Nibble on some Asiago while sipping a brown ale for a smooth, nutty flavor blend that is close to perfection.  Some Asiago can be quite sharp with its strong aroma and flavor; the malty brown ale tends to mellow the cheese.

Palo Santo Marron BBQ Beef Ribs - Dogfish Head Pub recipe

Palo Santo Ribs

Difficulty: Advanced

Ingredients:

 

(Recipe will need to be cut down for household use)  

-Beef ribs (30lbs)

-Salt 3 cups

-Pepper 2 cups

-Worcestershire sauce 2 cups

-Palo Santo 1 gallon (around 11 -bottles)

-Pablano peppers 3 (seeded, rough chop)

-Carrots 4 whole (rough chop)

-Garlic � lb whole

-Onions 2 whole (rough chop)

-Celery 1 head (rough chop)

-Ketchup � gallon

-Apple cider vinegar 1 cup

-Brown sugar 2 cups

-Lemon juice 1 cup

 

Directions:  

 

Day 1

Mix salt, pepper, and Worcestershire sauce in small mixing bowl.  Lay all ribs on a sanitized stainless steel table and rub with the Worcestershire mixture generously on both sides.  Wrap in stacks of 4 high in plastic wrap and refrigerate for 1 hour.  After an hour, grill off on both sides on grill with medium heat from the wood till outside crust has caramelized and starting to crisp up (roughly 4 - 7 minutes on each side).  Continue till all ribs are "grilled" off.  Remove from heat.  In braising pan add carrots, garlic, onions, celery and green peppers.  Add ribs up right and fit all in one pan.  Add Palo Santo to the pan.  Cover with aluminum foil tightly, you don't want any steam or juices releasing from the pan.  (Need them for day 2).  Cook at 300 degrees for 9 hours in a moist cooking oven preferably over a dry heat oven.  Dry heat will leave you with less braising liquid and a BBQ sauce of less potency.  If using a dry heat oven, drop temp to 250 degrees for 9 hours.  Once out of oven, do not uncover, do not peak inside, let your ribs rest on table for 20 minutes before placing in refrigerator overnight.

 

Day 2

Unwrap ribs and gently transfer to sheet pan.  Remove top layer of fat that has coagulated on top of braising liquid (will come right off, should be solid).  Add braising liquid to stock pot and bring to boil.  Once boiling, add apple cider vinegar, brown sugar, and lemon juice.  Cook for 10 minutes and add ketchup, stir to incorporate.  Cook for an additional 5 minutes, remove from heat, place in 4 gallon plastic storage vessel, puree using a hand held emulsion blender.  Immediately place in walk-in, cover, label, date, rotate.

 

Hold ribs up so they make a 90 degree angle to a cutting board and with a chef knife, start on the right of the ribs and place knife on the left hand side of the first rib.  Cut down in one motion following the bone.  (Meat will cut right off).  Continue till all ribs are done.

 

To heat.  Lay four ribs on a cutting board.  Place 2 Tbs of sauce on each rib and smother with your hands (yes you need a new set of gloves).  Place on a sizzle pan and place in oven.  Heat at 450 degrees for 8-10 minutes till barbeque sauce has caramelized and the meat has an internal temperate of 145 degrees.

Did Winter happen in South Florida?  I thought it was a dream.  Was it cold down here...for a day...a week...huh?  What happened.  While the rest of the US was buried under the worst snow storm in recent history...we here have moved directly into Spring.  And with Spring comes Spring beers which are being released every week from every brewery...that is if they have dug out from the aforementioned snow.  Awww...don't we feel sorry for them. 

This weekend is looking perfect for BBQ so check out the recipe for Palo Santo ribs.  It sounds delicious!  And keep an eye out for the newest brand that we just picked up from Belgium: Palm Ale.  Now this isn't an 8% tripel with lots of fruity flavors and sweetness...it's an easy drinking toasty amber ale with hints of orange.  If that sounds familiar, the word is that it was the inspiration for a very famous beer from Colorado that you still can't get in Florida.  You know....the one that is named after a bike...hint hint.  Look for it on tap around town and coming in package very soon. 

Also, don't forget that we are moving into Mardi Gras!  Lots of great Mardi Gras promos coming up so get your krewe together and head on out to a few.  We've got lots of Magic Hat beads and trinkets to feed your Mardi Gras fun..... Laissez Les Bon Temp Roulez!!

The Young Friends of the Historical Society of Palm Beach County and the West Palm Beach Antique Row Art & Design District will host the fifteenth Annual "Evening on Antique Row" from 6:00 pm to 9:00 pm in the nationally acclaimed antiques district in West Palm Beach. Matt from Shipyard will be there to provide some brews from Shipyard and Sea Dog.  

 

The Evening on Antique Row closes Dixie Highway between Southern Boulevard and Greenwood Avenue with live entertainment, hors d'oeuvres, bicycle rides and more, allowing visitors to explore the area's 50 unique shops, each offering collections of 17th to 20th century antiques, decorative arts, period furnishings and fine art. Porter - Chocolate malt and roasted barley give the beer its nearly black color, subtle coffee and dark chocolate flavors and an exceptionally smooth finish.

     

Spring Seasonal Helluva Bock - A malty german-style lager, this brew is smooth with a low-hop flavor. It's lighter than your average bock, but it'll still knock you back quicker than an alpine gale.

Old Howling Bastard Barleywine - Blue Point Brewing's "Old Howling Bastard," named after an infamous local character, is a strong ale with plenty of character all its own. Made with English 2 row barley and Vienna malt. Reaching an alcohol content of 10%, barleywine should be consumed in moderation. Strong malty caramel flavors are balanced by lots and lots of hops. Try this in a snifter or wineglass. The trick is to never forget that after a few glasses you may become the "Old Howling Bastard."

Back Burner Imperial Barleywine - Long ago, British farmhouse brewers made special ales using the first runnings of the mash. These beers, now called barley wine, are brewed in the tradition of days past. At Southern Tier this long awaited brew is placed on the back burner until the start of the new year. Back Burner Barley Wine is a celebration of things to come and things remembered. It's conceived in three small batches, using voluminous amounts of barley and hops. An employee with access to the @RedCross Twitter account accidentally posted about their night of drinking Dogfish Head Midas Touch and tagged the message #gettngslizzerd.

 

Tools for managing multiple Twitter accounts and smartphones that handle Twitter messaging alongside text messaging have made such mistakes easier than ever before. The Red Cross message was initially visible to nearly 270,000 followers subscribing to that account but hundreds of re-tweets (when the same message is re-sent from another person) and tweets about his post have put that number well into the millions.

 

In a slight tinge of irony, earlier in the day, the Brewers Association released a press release about its SAVOR event coming in June; one of the main goals of the event is to raise the image of beer to be equal to that of wine, a difficult task given the barrage of beer advertisements featuring lowbrow humor. On the other hand, it's a nice bit of publicity for Dogfish Head though the brewery, growing as rapidly as it is, doesn't need it.

 

Red Cross later deleted the tweet and replaced it with a new one that reads, "We've deleted the rogue tweet but rest assured the Red Cross is sober and we've confiscated the keys." At least they have a sense of humor about the matter. For full article 

Summit Brewing switches to pry-off bottle caps

 

(St. Paul, MN) - This week, Summit Brewing Company will begin the first run of bottles with a classic pry-off cap style, discontinuing the use of twist-off caps.


"It's time to give our customers what they really want-an easier way to get inside our bottles," said Mark Strutrud, CEO and Founder of Summit Brewing Company. "We've received an increasing number of comments over the last year or so about how difficult it is to twist off our bottle caps, and we're not joking when we say we've felt our customers' pain."

 

With the change come improvements to the Summit beer drinking experience. Pry-off caps offer a much tighter seal to prevent oxygen from entering the bottle, which can compromise the fresh quality, flavor and body of the beer. The bottle mouth is also much smoother and thicker compared to the twist-off finish.

 

The transition from twist-off to pry-off caps will affect all brands of Summit. Costumers will begin to see the change on their bottles a few weeks after the start of the cap conversion.

Stone to be First American Craft Brewery in Europe

If you're traipsing through Europe and wandering in and out of pubs at random, likelihood is that you'll have a relatively standard selection of brews to choose from: Stella Artois, Guinness, Heineken and Pilsner Urquell, among others.  Better bars might carry a good selection of Belgians, or perhaps even a beer of two from the UK's infant craft scene.  Though a handful of American craft breweries have begun to export, Greg Koch of Stone Brewing Company is ready to do one better for Europeans looking for distinct, craft beer.

 

Koch has decided to simply build a brewery in Europe.  He's narrowed the ultimate destination to either Bruges, Belgium or Berlin, Germany, both a far cry from Stone's home base just outside San Diego, California.  And what type of beers are Europeans looking for the most?  They've become addicted to the hop bombs, and if anyone has those down to a science, it's Stone.  Their series of Arrogant Bastard ales, as well as fantastic brews like Ruination and Sublimely Self Righteous, explode with various piney and citrusy hop aromas and a serious bitterness.

 

The Los Angeles Times reports that it's also the creativity and freedom of American craft brews that Europeans crave.  James Watt, co-owner of Scotland-based BrewDog - which has been a key player in the battle for World's Strongest Beer - says that he "really wanted to make beers like the American brewers who completely follow their muse."  He and others have spent time studying brewing in the States, much like a number of aspiring American brewers apprentice briefly in Belgium.  It's helped them break through a mold of UK brewing that Watt calls "stuffy and old fashioned."
