Featured Beer and Cheese Pairing:
Stout and Aged Cheddar (Ex. Dogfish Head Chicory Stout, Shipyard Blue Fin Stout, Rogue Shakespeare Stout, etc.)

A big stout, with lots of chocolate and black malts with that it hints of coffee, will handle the complexity of a well aged, still sharp Cheddar.
Featured Cooking with Beer Recipe of the Week

Roasted Sweet Potatoes with Maple Smoked Bacon and Beer

By Food Blogga

 Sweet Potatoes

Difficulty: Easy

Time: 20 minutes

Beer Style: Brown Ale

Seasonality: Winter

Serves: 4

The Food Blogga created this recipe for Roasted Sweet Potatoes in honor of San Diego Beer Week. It's sweet, salty, smoky, and tangy. It's great with beer buddies like pork and beef and goes really well with chicken sandwiches and salmon burgers.

Ingredients

2 large orange-fleshed sweet potatoes or Garnet yams
olive oil to brush on the flesh
6 strips maple smoked bacon
1 tablespoon butter
1 yellow onion, thinly sliced
2 teaspoons light brown sugar
2/3 cup beer
2 tablespoons maple syrup
freshly ground black pepper

Directions

1. Preheat oven to 400°F. Line a large baking sheet with aluminum foil, for easy clean up. Wash potatoes and pat dry. Brush flesh with a little bit of olive oil. Place flesh side down on the prepared baking sheet.

2. In a large skillet over medium heat, add bacon. Cook, turning frequently, until browned and crisp, about 6-8 minutes. Transfer to a paper-toweled lined plate to drain. Cool completely. Chop finely, reserving one slice for garnish.

3.Once the potatoes are cooked, remove from oven and cool for 5-10 minutes. Scoop out the flesh and set aside.

4.In a large skillet over medium-low heat, melt 1 tablespoon butter. Add sliced onions and brown sugar; stir occasionally, until the onions caramelize and turn a deep golden brown, about 10-12 minutes. Add beer and cook 2 minutes. Add maple syrup. Stir well and cook 3-4 minutes. Add roasted potatoes and bacon to skillet. Stir well.

5.Season with freshly ground black pepper. Garnish with reserved bacon.

As I drank one of Matt's Russian Imperial Stout's last night at Big Bear after a long drought of beer consumption, I pondered the question of what made me enjoy this time of year most.  Was it the spiced and delicious holiday beers that appear during this time of year or just the general influx of the darker beers that really brought the holiday time home.  Certainly, looking forward to the Turkey, Ham, Sweet Potatoes, etc. which bring the season to the forefront.  But what would it be without the darker ales and lagers that I love so much and that are so highly anticipated as we enter the cool dark days of winter?  There is something to be said for warming your insides with a rich full flavored dark stout or porter.  And what goes better with your holiday feast then a winter warmer?  So skip the bread and give me a beer and bring on the Holiday Season!

Cheers,

New Arrivals:

Southern Tier
SOUTHERN TIER BREWING COMPANY

Oat Imperial Oatmeal Stout - This beer begins in spring when oat seeds are sown as soon as the soil can be worked. Meanwhile, select types of barley are planted with hopes that Mother Nature will be kind. Southern Tier's brewers wait patiently until the legumes are mature and ready for the scythe. Upon delivery to the brewery, these ingredients are mixed together in the mash tun where they steep, creating a rich molasses-like liquid. Spicy hops are boiled with the thick brew, giving balance and complexity. Brewers yeast feasts upon the rich sugars, concluding its transformation into oatmeal stout. Pour Oat into a snifter, allow its thick tan head to slowly rise, releasing unbridled aromas. The color of Oat is as dark as a moonless night. The first sip reveals Oat's thick and nourishing taste. Like a haversack to a horse, a bottle of this stout is a meal in itself. Enjoy responsibly.

Ayinger
AYINGER BREWING COMPANY

Weizen-bock - The weizen-bock style is relatively uncommon, even in Bavaria: they are wheat ales (weissebeer or weizen beer) that are brewed to be as strong as a bock - with corresponding fuller body, and enhanced flavors. They can be pale ("helles") or dark ("dunkles"), but Ayinger Weizen Bock is pale in color. Classic Bavarian weissebeer aroma suggesting spice and cloves; smooth body from wheat and from decoction mashing; extravagant, pinpoint conditioning. The flavor offers the essence of the wheat harvest, fresh-baked bread, maybe even - somehow - the sunshine of a fall afternoon. The finish is tropical fruit, cloves and banana.

Victory Logo
VICTORY BREWING COMPANY

Yakima Glory Ale - The tenacious grip of big, juicy hop aroma and character slides smoothly into rich, dark malts. This heavyweight battle between fresh, Yakima Valley hops and dark, roasted malts is resolved harmoniously as the flavors merge to deliver complex satisfaction with a warming edge. Bask in the "glory" of the bright and brassy hops!

Palm Ridge Reserve
PALM RIDGE RESERVE MICRO BATCH FLORIDA WHISKEY

Bourbon-Style Whiskey - Florida Farm Distillers is a micro-distillery located on a small cattle farm near Umatilla, Florida. Owners Marti and Dick Waters believe that their personal and detailed attention makes Palm Ridge Reserve stand out from other mass produced liquors. The boutique operation produces a 90 proof, young Florida Bourbon-style whiskey. This limited quantity, select whiskey (only 500 cases per year), is non-chill filtered, mellowed with toasted orange and oak woods, and left to finish in small charred oak barrels.

Cigar City
CIGAR CITY BREWING CO.

Improvisación (Oatmeal Rye India Brown Ale) - ORIBA is dark brown in color with a complex nose displaying notes of pine, citrus, chocolate, rye, dark caramel and slight notes of wood. They use over 10% Oats in this beer to give it a silkier mouth feel and they pack over 24% of 3 different rye varietals to achieve a complex, spicy rye character. Of course  they can't help but balance it all out with lots of American hops.

Either and Or - The collaboration is between Cigar City of Florida, Hill Farmstead of Vermont and Grassroots Brewing of Denmark. According to Joey Redner at Cigar City, the beers are "basically black IPA's brewed with lots of citra, mt. rainier and simcoe along with Thai Thai honey from North Florida aged on medium toast Spanish Cedar."

"Either" and "Or" are two different beers that come in the same case. They are made with the same ingredients, have the same high 11.2% abv, but they are brewed by different brewers so they each have their own unique taste. So yes, you will be doing yourself a disservice by not grabbing one of each. There are two more beers to this series called "Neither" and "Nor" that will be brewed in Vermont and Denmark that will be released at some point in the future.

Stone
STONE BREWING CO.

Lukcy Basartd - a dry-hopped meeting-of-the-Bastards in a in-the-fermenter-blend of Arrogant Bastard Ale and Double Bastard Ale...with a perfect balance of the essence of OAKED Arrogant Bastard Ale. All in all, one awesome Bastard. Lukcy Basartd Ale will be released in November and should be available in many of the enlightened locations where the liquid Arrogance is typically found. This is a 'once only' special release commemorating the 13 year anniversary of when Arrogant Bastard Ale was first released upon the unsuspecting public. That is, 'once only' unless we decide to make it again.

Vertical Epic 10.10.10
- An Ale brewed with Muscat, Gewurztraminer and Sauvignon Blanc grapes and chamomile.
The inspiration for this year's edition comes from a trip to Belgium taken by Stone Brewmaster Steve Wagner and Head Brewer Mitch Steele in early 2008. There they discovered a special edition of a renowned Belgian golden triple that had been extra hopped up with American hops. Back in Escondido, they opened the bottle and found that it was good. Very good, in fact. Being the hop lovers that Stone is, they found the whole experience deliciously inspiring. Their Stone 08.08.08 Vertical Epic Ale is a variation on this theme. They proudly present you with this very dry pale golden beer which sports a thick, creamy white foam, is spicy, estery and fruity (from the yeast), and possesses a crisp bitterness-oh yes, and is very, very generously hopped. It's fair to say that this is a beer that was inspired by a Belgian beer that was in turn inspired by the well-hopped West Coast style beers-which are, of course, the very kind of brews that Stone is famous for! Interesting how the world turns sometimes. And delicious too.

Terrapin Logo

10 Crazy Craft-Beer Flavors

Does your beer only contain water, hops, barley and yeast? Boring. Driven by creative impulses -- and aided by an arsenal of spices to rival a restaurant kitchen -- craft brewers today are creating beers that are as unorthodox as they are exquisite. Here are 10 flavorful weirdos.

Short's Key Lime Pie
Michigan-based Short's makes countless kooky brews (for instance, Bloody Beer features tomatoes and Bloody Mary seasonings), but I like Key Lime Pie. It's made with marshmallows, graham crackers and lime, expertly evoking the dessert.

Mama Mia! Pizza Beer
This beer doesn't just taste like pizza -- it's made with pizza. An entire whole-wheat pizza margherita is used in the brewing process, complete with basil, oregano and garlic. Thankfully, the beer is strained before it's bottled.

Wells Banana Bread Beer
The name is no lie: This British brewers use boatloads of bananas to give the copper brew its signature fruity nose. It tastes plenty nutty too, though some folks might prefer it to be a bit sweeter. It would be grand blended with a stout.

Buckbean Original Orange Blossom Ale
To create this aromatic ale, the Nevada brewery infuses the orange-amber nectar with a tea made from steeped orange blossoms. It's easy-drinking ambrosia.

Upright Gose
To make this ancient German style of beer, the Portland, Oregon-based brewer uses lactic acid and salt, resulting in a sour, slightly salinic ale that's surprisingly refreshing.

Williams Brothers Kelpie Seaweed Ale

In a nod to 19th-century Scottish brewers who made beer with malt fertilized with seaweed, Williams Brothers makes this chocolatey ale with fresh seaweed. Though the flavor of bitter chocolate and coffee dominate, Kelpie has a salty, oceanic underpinning.

Cigar City Hunahpu's Imperial Stout

The Tampa, Florida, brewery's imperial stout is an exotic, flavorful doozy, thanks to tons of Peruvian cacao nibs, both ancho and pasilla chiles, Madagascar vanilla beans and cinnamon.

Dogfish Head Sah'tea
The Delaware brewery's take on the classic Finnish farmhouse beer sahti is made by caramelizing the wort (that is, the grain broth that makes beer) with superheated river rocks. For spices, the brewers add juniper berries and a tea made with cardamom, cinnamon, cloves, ginger and other aromatics. Don't worry: the spicing is subtle, not overwhelming.

Rogue Chipotle Ale

Chili heads, take note: The crisp golden ale incorporates roasted chipotle peppers, which adds a smoky nuance to the beer. Naturally, it's a great mate to a bowl of chili, but it's also an ace on its own.

BrewDog Dogma

To fashion this offbeat ale, the madcap Scottish brewers used guarana, poppy seeds, kola nuts and heather honey. Despite the sweet addition, Dogma never becomes cloying, and packs a nice bitter streak. For original article
Doh! Duff Beer Does Exist
From Beer Universe

If you've lived in America over the last two and a quarter decades, you're probably familiar with a few Lisas and a couple of Barts.  At the sound of the name Homer, though, only one man's face comes to mind...  And he's bright yellow.  The Simpsons is America's longest-running sitcom, going strong on Fox since December of 1989.  Brilliant writing of memorable characters has been the show's calling card, as they reward our viewing loyalty with a certain hilarious predictability.  Case in point: Duff Beer.

Homer Simpson has been in love with Duff Beer - loosely modeled on other ubiquitous one-syllable American beers of questionable quality - for as long as we can remember, and episodes are even based around brewery tours and rival companies.  Recently though, a newly married (non-cartoon) couple of Beer Universe members submitted a photograph to our Facebook page of something very curious: a pair of Duff Beer bottles that they drank on their honeymoon in Barcelona, Spain!

Yes, members of the Beer Universe, there is a Duff Beer.  In fact, there are a few...

Daleside Brewery in England makes an Irish-style black beer called Duff.  A brewery in Hessen, Germany, also sells a beer under the name Duff that adheres to The Bavarian Purity Law of 1516 regarding traditional ingredients.  The Lion Nathan Brewery in Australia was ordered to cease making and destroy all of their existing Duff Beer a few years ago after 20th Century Fox brought legal action against the company.  So what Duff Beer did our loyal members drink?  It appears to have been an import from Mexico! Thanksgiving Dinner Pairing

OK, tell me that you haven't done this. You're building your Thanksgiving dinner at the supermarket. You've carefully planned your menu - turkey, ham, yams, mashed potatoes, gravy, something with too many cranberries, salad, rolls, pumpkin pie and maybe even pecan pie. Your cart is creaking under the weight of all the stuff required to assemble this great feast when it occurs to you; the wine!

So, heaving your body's whole weight into the cart, you shove it over to the liquor department. Now you stand in front of the wine racks pondering. What goes with, well, all of this stuff in your cart? The meat is pretty rich so it needs a rich wine like, say, a cabernet sauvignon. You reach for a promising looking bottle then it occurs to you that this won't go very well with the oyster dressing that you're making this year. And it might not do too well with the marshmallows on the yams and don't even get me started with the cranberries!

OK, you tell yourself, what about something white? It will have to be substantial to stand up to the turkey; maybe an oakey chardonnay? Then you think that it might not do well with that gravy and, once again, those cranberries are looming. What to do? How about a pinot noir? It doesn't have tannins so it might do...but from somewhere deep within the heaps of groceries in your cart you clearly hear those cranberries chuckling at you.

This annual question puzzles even the most sophisticated of sommeliers. Since wine pairing creates issues with so many foods, it is virtually impossible to find one bottle that will pair nicely with everything that shows up in the holiday plate.

So, don't serve wine. Make beer your choice of libation this season. It will raise your holiday spread to heights you never anticipated. Trust me on this.

A wide range of really great beer is now common almost everywhere. And beer pairs so much easier with so many more foods. Besides, as the beerandturkey.com website points out, what did the pilgrims drink with their Thanksgiving feast? It's far more likely that it was good ale than wine.

What beers should you serve? Here are some suggestions courtesy of the Brewers Association:
