Barleywine-Style Ale with Stilton (Ex. Dogfish Head Olde School, Lefthand Widdershins, Victory Old Horizontal, Boulder Killer Penguin, Nogne #100)

Stilton is a ripened, crumbly blue cheese with blue veins of sharp mold running throughout. The plum, raisin, toffee, and heavy malt components of a fine barley wine meld into an extravagant symphony with these cheeses. A nice aged barley wine and Stilton disappear into each other. You will taste rich, buttery, creamy sweet notes in the cheese, with a cheeky little hop/blue cheese snap at the back of your throat as the after-taste.

Pumpkin Chorizo Soup By Jennifer O'ConnellLadies of Craft Beer Difficulty: Easy Time: 20 minutes Beer Style: Pumpkin Beers Seasonality: Fall Serves: 6 - 8
As the obsession with pumpkin beer continues to grow, we're seeing more and more recipes with the delicious ale. Here's one from The Ladies of Craft Beer for a great fall pumpkin soup with yummy chorizo.
Ingredients
3 TBL of Olive Oil 1 lb of Chorizo -sliced into ˝ inch rounds 1 med Onion -small diced 1 stalk of Celery -finely chopped 1 Shallot -finely chopped 2 bottles of Pumpkin Beer 2 cans of Pumpkin Puree 2 Bay Leaves Salt & Black Pepper & Cayenne Pepper to taste
Directions Add 2 Tbl of olive oil and the chorizo slices to a cold pot. Turn the heat on to a med-high heat. This helps to render the fat out of the sausage and flavors the oil.
Let the pieces get crispy on both sides then remove them from the pot. Add an additional tablespoon of olive oil to the pot and add the onions, shallot and celery plus a pinch of salt. Cook until onions are translucent then add the beer.
Bring to a boil, add the canned pumpkin, reduce to a simmer and throw in bay leaves and finely ground black pepper . At this point you could add it to a slow cooker or simmer covered for 45 min. - 1 hour. Puree soup with either an emersion blender or in batches using a regular blender. Taste for seasoning in the soup and add salt, black or cayenne pepper too your liking. If the soup seems thicker then you'd like add some more pumpkin beer or chicken stock at this point. Stir the chorizo back in, leaving a few to garnish the bowls if you so desire.

Halloween is upon us....trick-or-treaters abound, candy is everywhere, and the jack-o-lanterns are beginning to shine. For the adults, Halloween couldn't have fallen any better this year. Friday and Saturday Costume parties will be in full swing and recovery from the festivities will mean either relaxing at home handing out candy or escorting the kids from house to house. The Bx Beer Depot (2964 2nd ave N. Lake worth, FL 33461) will be celebrating Learn To Homebrew Day in a few interesting ways. At 9:00am there will be an all grain brewing class being held at their Tiki Brewhaven; class cost is $15.00 and the class will be taught by Paul McHugh. He has been brewing for over 30 years and has a Gold Medal to prove it. His goal is to teach us how to brew a great batch but also to show that you don't need expensive equipment to brew a world class beer. At Noon they will be celebrating Learn To Homebrew Day and letting brewers bring their equipment here to brew and serving up George's Mean Dry-Rubbed Ribs. SAINT SOMEWHERE BREWING
Saison Athene- Saison Athene is a bottle conditioned saison brewed with chamomile, fresh rosemary and black pepper. A dose of wild yeast at bottling adds to the complexity. The taste starts with a nice zesty lemon and citrus flavor with hints of orange peel and green apple. That is accompanied by sweet malt, and candied sugar and a touche of honey.
Pays du Soleil - A dubbelbrewed with Palmetto berries and whole Hibiscus flowers. House saison yeast strain along with a dose of wild yeast at bottling add to the complexity. The aroma starts with a big funk and bret blast, powdered sugar notes, mild boozy alcohol, some herbal notes, sharp tart fruits and gooey burnt fruit paste like notes finished off with a little animal musk. Odd, but oddly good.
Lectio Divina - a cross between an abbey double and a saison. Open fermentation with a saison strain and a dose of wild yeast at bottling add to the complexity. Hazy, amber colored beer with a reddish tinge, with an off-white head that starts quite large but disappears rather quickly. As you go through the beer, multiple interchanging fruits, grains, yeast and the all encompassing tartness that keeps things interesting.

Rose-like, peachy aroma. Orangey, lemon-grass and lemoncurd flavours. Rich, oily, honeyed texture. Medium to full body. Big, orange-zest and a hint of bitter sourness in a warming finish.
Malheur 12°- A dark brown ale with beautiful and rocky "café latte" light brown foam. The flavour is malty and cereal and might invoke thoughts of fresh cut bread. The taste of Malheur 12° is full, round, with a touch of sweet alcohols, but the ale is still dry and bitter coffee, with touches of nuts, honey and rum from the brown candy sugar. The aftertaste is bitter-sweet, long and warm.
Bombardier Premium Bitter - The subtle bitterness is derived from the English Challenger Hop and the colour and aroma stems from using Crystal Malt and Goldings Hops. Wells Bombardier uses more malt per pint than other premium bitters. Our English Crystal malt is ground, rather than crushed, to give a richer, more rounded flavour and Wells Bombardier's characteristic deep copper colour.
Banana Bread Beer - Wells Banana Bread Beer continues the Wells family traditional yet innovative approach to brewing fine ales and is '. Wells Banana Bread Beer partly take its name from the Saxon phrase for beer - 'Liquid Bread'. Combining traditional ale recipe with the flavor of 'fair trade' bananas creates an intriguing and flavorsome pint. Timmermans Framboise Lambic - Timmermans Framboise Lambic faithfully reflects the colour and flavour of ripe raspberries, with no trace of the acidity of lambic. This wonderful flavour reaches its peak with its intensely fresh after-taste.
Timmermans Strawberry Lambic - Its aroma evokes the perfumes of a lovely summer. Its strawberry flavour confirms the nose's impression without sweetened saturation. Moreover, it's even enhanced by a real feeling of freshness, recalling those tiny green granules that are found around ripened strawberries. Its taste is consistent and spreads very quickly throughout the mouth to finish its journey on a touch that is fruitier rather than sweetened.
Blanche De Bruxelles - Smooth yet grainy, sweetish with hints of apple and ginger. Witbier is a very old type of beer, a speciality of the farm-breweries of old Brabant. The master brewers used their very best crops to make this beer. Blanche de Bruxelles owes its natural cloudiness to the large percentage (40%) of wheat that goes into its composition. The natural spice aromas of coriander and bitter orange peels are added during the brewing process. The brewing method, which includes infusion, is very slow. The beer, which is not filtered, is bottled and refermented with yeast and brewing sugar. You need only take a sip of this delicious drink to appreciate the fresh and mellow flavour with its hint of orange. It is really not like any other beer.
VICTORY BREWING
Moonglow Weizenbock - This dark amber wheat beer features fruity and spicy aromas galore. Significant strength underlies the pleasant citric appeal of this bock beer. Redolent with the flavors of harvest fruit, Moonglow typifies the traditional weizenbock-style so thoroughly enjoyed throughout Bavaria. Left unfiltered, its unique yeast strain gives Moonglow a radiance all its own.
LEFT HAND AND TERRAPIN
Midnight Project #3 Oxymoron - Sometime around midnight in a city nobody can agree on, the idea for Left Hand and Terrapin to brew a collaboration beer was born. Oxymoron is the third in the series of one-time releases between the two breweries. A combination of contradictions embodied in liquid form. Oxymoron is an American-style IPA brewed with three German malts, six German hops varieties, and a lager yeast strain. Obnoxious yet reserved elevated yet modest, it's the embodiment of blending two brewing philosophies together in order to achieve singularity. Consider it an expression of cruel kindness". Look for it next week
TERRAPIN BEER

Tipsy Gene May Prevent Alcohol Dependency By Wesley Griffin
Well, it looks like good news for lightweights everywhere. It's good news for the guy you pick on for sipping too slowly. It's good news for the girl whose cheeks flush red as she starts her second beer. It might even excuse the serial blurter, that buddy who can't seem to help giving secrets away or telling the punchline of a joke well before its time. We all have friends like these, people who simply feel the effects of alcohol before everyone else, but before you laugh at their expense, know this: it runs deep. And recent research shows that it might make them awfully lucky.
BBC News reports the University of North Carolina has released a study of what they believe to be a 'tipsy' gene which, aside from saving people a lot of money on booze, is present in 10-20% of the population and offers some protection against the dangers of alcoholism.
The specific gene - called CYP2E1 and found on the 10th chromosome - has encoded instructions for how the brain should metabolize the small portion of consumed alcohol that is not broken down by the liver. The enzyme produced in the brain by CYP2E1 breaks the alcohol down quickly and therefore makes the drinker more sensitive to its effects. This, in turn, typically prevents individuals from drinking until inebriation and makes them far less likely to develop an addiction. For full article

Charbay: Turning Beer into Booze
A father and son distill gallons of beer into good spirits.

Back in 1999, Marko Karakasevic woke up to an overwhelming, dank aroma at his office/home-away-from-home in Mendocino County, Calif. He feared something had caught fire. Humboldt is, after all, the neighbor to the north where hops' illicit cousin is abundant. How would he explain it to his father, Miles Karakasevic, who slept nearby? Fortuitously, the herbaciousness that permeated the air was simply the smell of distilled hops, which he should've expected, since he was in the process of distilling 20,000 gallons of pilsner.
It's a 21/7 process (he sleeps three hours a night), keeping an eye on a copper alembic pot and making cuts to the distillate to ensure only the hearts-the most desirable liquid-and not the heads or tails, remain. Whiskey is a distillate made from "low wash" or "distiller's beer," meaning it contains the same malted grain, water and yeast that all beer has. The difference is that the beer we drink is bittered, usually with hops.
The Karakasevics, though devoted to tradition, aren't big on convention. Given to wearing Hawaiian shirts, shorts and flip-flops, father and son continue the family trade as winemakers and distillers dating back to mid-18th-century Yugoslavia. Miles left the old country nearly 50 years ago and wound up establishing Charbay-making mostly wines and brandys-in 1983 in St. Helena, one of the Napa Valley's idyllic enclaves. The family resides and works on the same 17 acres to this day, where Miles, 69, and Marko, 37, carry on as the 12th and 13th generation, respectively.
While they produce 29 products in all-Marko created a line of Charbay-infused vodkas that account for roughly 90 percent of their sales-it is his innovative whiskeys that are stealing his focus at this moment. They constitute nearly 2 percent of sales. But he's working on that. For full article
