Featured Beer and Cheese Pairing:
Herbed Cheese Spread paired with a Belgian Witbier (ex. Avery White Rascal, The Bruery Orchard White, De Proef La Grande Blanche and Victory Whirlwind Wit)
 
The common spices in Belgian wits including orange peel and coriander complement the herbs in the cheese spreads. The Witbier cleanses the pallet and its light body pairs beautifully with the lighter cheeses such as these.

Breckenridge Agave & Ginger Chicken Marinade

Difficulty: Easy
Time: Chicken should be marinated 4 - 24 hours.
Beer Style: American Wheat Ale
Serves: 6
 
Grilling may be winding down for a lot of areas in the country but beautifully enough when you live in South Florida BBQ is always in full swing and enjoying a wheat beer on a hot afternoon while you grill is even better! This marinade from Breckenridge Brewery is the best of both worlds!
 
Ingredients:
- 1 1/2 cups flat Agave Wheat
-1/2 cup olive oil
-2 tablespoons ginger, peeled and finely minced
-2 cloves fresh garlic, chopped
-3 tablespoons orange zest
-6 each chicken breasts, skinless and boneless
 
Directions:
In a glass bowl, combine all ingredients except chicken. Add chicken breasts and make sure marinade is covering the chicken. Cover tightly and refrigerate for at least 4 hours or overnight. Turn the chicken about 4 times so that the marinade is evenly distributed.

Remove the chicken and strain the marinade, to use for basting. Grill over medium heat and baste with marinade as you grill. Grill each side for about 2 minutes. Turn chicken 4 times.

Labor Day has come and gone and the Fall is approaching (although rather slowly as I watch the latest Hurricane develop off the coast of Africa.)  But that hasn't stopped all the Fall beers from hitting the market.  You think Pumpkinhead is afraid of a little wind and rain...no way.  He'll send his little bro Smashed Pumpkin out to send that weather straight away.  And if both of those can't handle it...Southern Tier's Pumpking just might do the trick. Don't forget Dogfish's Punkin will be kickin it too.  If those can't make the rain go away...at least they might just make YOU forget about it.  Don't forget that the true German Oktoberfest actually kicks off Sept. 18th and lasts until Oct. 4th this year.  Most places around here won't notice until it has almost passed but you can sure pickup some great Oktoberfest beers about now....Left Hand, Penn, Ayinger, Shiner, Gordon Biersch and more are all available now.  Get into the season and let those Summer blues melt away.

September 10th
Riverwalk Trust hosts 'The Original' Riverwalk Mutts and Martinis Yappy Hour, Fort Lauderdale's largest outdoor, pet-friendly cocktail hour, on September 10, 2010, from 5:30 pm to 8 pm. The goal of the event is to bring together the Downtown community and their favorite four-legged friends for a night of celebration and networking while raising funds for the Riverwalk Trust. The event will be held along the Riverwalk at Briny Riverfront Pub. 

On this fun evening along Fort Lauderdale's Riverwalk, a $25 donation ($20 prepay online) gives attendees two complimentary drinks, appetizers, live music, silent auction, chances to win raffles and prizes and lots of fun treats and activities for their pets including dog massages, canine contests and doggie ice cream. Dog adoptions will be available courtesy of the Humane Society of Broward County, and a portion of the proceeds from each ticket sold will go towards the Humane Society of Broward County. Tickets may be purchased by clicking here or at the door the evening of the event. Sea Dog Brewing will be present to give beer drinkers some tasty brews to sip on, if your not the martini type.

September 16th
For those foodees, The New Times Pairing Event at the Broward Center for the Performing Arts (201 Southwest 5th Avenue, Fort Lauderdale, FL 33312) is a great opportunity to try some dishes from a bunch of the top restaurants in the area paired up with a nice wine or beer. Attendees will be able to sample an array of beer and wine from around the globe while enjoying live entertainment, free appetizers and the chance to win fabulous prizes. Special comedian guest Al Jackson (featured in NBC's Last Comic Standing and HBO's Las Vegas Comedy Festival in 2009) will be there for a few laughs.

If you have ever been to Town in South Miami you know how good their food and beer selection is. Well, finally they will be hosting a beer dinner that is sure to make your mouth water. Their menu consist of the following pairings:
 

Course 1: Eggs and potatoes- potato crisps, potato foam, Serrano ham, fried egg, demi glace, truffle oil paired with Dogfish Head Raison D'Etre

Course 2: Ahi poke- ahi tuna, wontons, cucumber spicy Asian dressing paired with Oskar Blues Gordon,

Course 3: Duck nachos- duck confit, white corn tortillas, sour cream, avocado, and pepper jack cheese paired with Cigar City Jai Alai  

Course 4: Baby Backs- beer braised baby backs, white corn bacon grits, pickled red onions paired with Ayinger Oktober Fest-Märzen

Oatmeal Stout- Rich, round and roasted, their Oatmeal Stout is satisfaction in a glass. Small Batch 471 Series IPA- Hoppy? Brother, 471 IPA redefines hoppy. 471 is a small batch, limited edition ale that was created by Breckenridge's Brewmaster to separate the weak from the strong. 471 is a double IPA, that combines Pale, Munich, Caramel-30, Carapils and Torrified Wheat malts, with Chinook, Centennial, Simcoe and Fuggles hops. It has a big sweet mouthfeel, followed by more hoppiness than you've ever had at one time. Enjoy.

Bitches Brew- In honor of the 40th anniversary of the original release of Bitches Brew, Miles Davis' 1970 paradigm-shifting landmark fusion breakthrough, Dogfish Head has created their own Bitches Brew - a bold, dark beer that's a fusion of three threads imperial stout and one thread honey beer with gesho root, a gustatory analog to Miles' masterpiece.Featuring the album's iconic artwork, created by the late Mati Klarwein, on its label, Dogfish Head's Bitches Brew was unveiled at SAVOR, An American Craft Beer and Food Experience, June 5, 2010 at the National Building Museum, Washington DC.

The newly created ale is designed, according to Dogfish founder and president Sam Calagione, "as the ultimate partner for chili or spicy curry chicken" and best enjoyed "sipped cool, not cold, from a snifter or red wine glass while listening to the Bitches Brew album."

Calagione was drawn to the alchemical spirits in Bitches Brew right out of college, acquiring a copy of the album "within months of the first time I brewed a batch of homebrew in my apartment in New York City. I listened to it when I was writing my Dogfish business plan. I wanted Dogfish Head to be a maniacally inventive and creative brewery, analog beer for the digital age. You could say that my dream was to have Dogfish Head, in some small way, stand for the same thing in the beer world that Bitches Brew stands for in the jazz world. You can imagine how excited we are to be doing this project 17 years after I wrote that business plan."

Panil Barriquée - Located in Italy, Doctor Renzo Losi's Panil brewery makes many excellent natural beers in time-honored, classic styles.

Save the wild yeasts! From senseless abuse and pasteurization.

Suddenly beer-lovers here in the States are all a-titter over dark, sour, wood-aged ales. These complex, fruity-tasting beers, native to the Netherlands and Belgian Flanders, represent one of the oldest beer styles in the world. In their traditional form, these Sour Reds - also known as 'Flemish Red' or 'Oud Bruin' beers - are related to real lambic beers: a touch of wild yeast and bacteria coming from the wood give acidity, both lactic (sour) and acetic (vinegar).

Barriquée is the only all-natural, traditionally-made example you will find today, and it comes from, of all places, Italy. This masterpiece is 'triple-fermented.' Primary fermentation is in stainless steel. The deep earthy, sour character results from three months of maturation in cognac barrels from Bordeaux, followed by re-fermentation and further aging in the bottle. Barriquée is not pasteurized or filtered, and no sweeteners are added, so it is uncompromisingly dry and complex, and endlessly interesting.
 
 
 
The Bruery
THE BRUERY
 
Coton - Coton is The Bruery's second anniversary ale. It is the same recipe as Papier, but created using the Solera method. They blended a portion of Papier that had been aging in oak barrels with this new batch of the same beer, adding an additional layer of complexity that will grow over time as we continue to age and blend with each anniversary, creating an older average age to the ale.
 
Autumn Maple - Brewed with 17 lbs. of yams per barrel (in other words, a lot of yams!), this autumn seasonal is a different take on the "pumpkin" beer style. Brewed with cinnamon, nutmeg, allspice, vanilla, molasses, and maple syrup, and fermented with their traditional Belgian yeast strain, this bold and spicy beer is perfect on a cold autumn evening.
 
Tradewinds Tripel - The Bruery's  Summer seasonal, Trade Winds Tripel is a Belgian-style Golden Ale with a Southeast Asian twist. Instead of using candi sugar (typical for such a beer), they use rice in the mash to lighten the body and increase the gravity, and spice with Thai Basil. The result is an aromatic, digestible and complex beer made for a lazy summer evening. 
 
  
Southern Tier

Harvest - "quadrupulus humulus lupulus" Harvest Ale is ther celebration of the changing weather and the sowing of hops and barley that will be used in Southern Tier's upcoming brews. They usher in the fall with a classic English style Extra Special Bitter of the highest order. Deep ruby in color with an even deeper hop flavor... in fact, they throw fresh English hops into every brewing vessel, then dry hop after fermentation to impart a zesty kick. This beer has real hop character that mingles with fresh malted barley for an experience that will make you wish it were fall year 'round.

 

Pumking Imperial Pumpkin Ale"bewitched and brewed with pagan spirit" Pumking is an ode to Púca, a creature of Celtic folklore, who is both feared and respected by those who believe in it. Púca is said to waylay travelers throughout the night by tossing them on its back and providing them the ride of their lives. It is a journey from which everyone returns forever changed!

 

Brewed in the spirit of All Hallows Eve, a time of year when spirits can make contact with the physical world and when magic is most potent. Pour Pumking into a goblet and allow its alluring spirit to overflow. Humidor Series Cedar Aged IPA - The Humidor Series is a rotating offering of Cigar City Brewing beer aged on cedar. Cedar has a more subtle effect on beer than more traditional woods like oak. World's 'Oldest Beer' Found in Shipwreck
First there was the discovery of dozens of bottles of 200-year-old champagne, but now salvage divers have recovered what they believe to be the world's oldest beer, taking advertisers' notion of 'drinkability' to another level.

Though the effort to lift the reserve of champagne had just ended, researchers uncovered a small collection of bottled beer on Wednesday from the same shipwreck south of the autonomous Aland Islands in the Baltic Sea.

"At the moment, we believe that these are by far the world's oldest bottles of beer," Rainer Juslin, permanent secretary of the island's ministry of education, science and culture, told CNN on Friday via telephone from Mariehamn, the capital of the Aland Islands.

"It seems that we have not only salvaged the oldest champagne in the world, but also the oldest still drinkable beer. The culture in the beer is still living."

Juslin said officials had talked to a local brewer about whether the new-found beer might be able to yield its recipe after experts decipher the brew's ingredients. For full article

Someone Finally Fried Beer: Texas Treat is Booze Plus Grease
Mark Zabel, inventor of deep-fried Texas treats including the chocolate-covered, strawberry waffle ball and jalapeno corndog shrimp, wanted to invent something that would blow away the competition at the state-wide cook-offs.

"We will be 'officially' presenting Fried Beer to the judges at the Big Tex competition on September 6, 2010," Zabel writes on the company's website.

He says he's aiming to take home the trophy at the State Fair of Texas on Sept. 26.

Zabel says he's currently using Guinness but might switch to Shiner Bock or a pale ale like Sierra Nevada, reports Jacksonville.com.

The beer itself is fried inside a pretzel-like pocket. "By using our patent pending process, we are able to place beer inside a salty pretzel-like dough, and deep fry it. When you take a bite, beer pours out of the inside pocket of dough," says Zabel. For full article 

To Enjoy Champagne, Treat It Like Beer, Study Says
Champagne may be a symbol of life at the top, but it is best poured into a tilted glass just like that other sparkling beverage, the plebeian beer, according to a new study.
 
That's because the bubbles - or dissolved carbon dioxide - in Champagne release its aroma and cause a tingly feeling that heightens the drinking experience. The higher the concentration of bubbles, the better.

The best way to keep the bubbles in the beverage, as any beer drinker knows, is to let the liquid tumble gently down the side of a tilted glass.

When Champagne is poured into a glass held vertically, it loses twice the amount of bubbles, said Gerard Liger-Belair, the study's lead author and a physicist at the University of Reims, in the heart of France's Champagne region.

"There is more turbulence and more motion in the liquid in a vertical pour," Dr. Liger-Belair said. "When you tilt the glass the liquid invades the glass with less force." For full article

2,200 Brews on Tap at Denver's Biggest-Ever Great American Beer Festival
 
Got your ticket to the Great American Beer Festival? No? Too bad. It sold out six weeks ago and your only hope now is to find a kindly scalper outside the Colorado Convention Center.

The 29th annual GABF, which began as a tiny tasting of 40 beers among like-minded friends in Boulder, has exploded, both in size and popularity. This year's version runs Sept. 16-18 and features 2,200 beers from 462 breweries, the largest selection of American beers ever served. In addition, 3,594 beers from 522 breweries will be judged in 79 competition categories. It's expected to draw 49,000 aficionados during its three-day run.

The GABF is the centerpiece event of the 2-year-old Denver Beer Fest, a 10-day celebration of Colorado and its extensive beer culture, which gets underway Friday. Both events are putting more emphasis on food-and-beer pairings this year. The GABF has a Farm to Table Pavilion, highlighting nine breweries and 12 food pairings, and there will be presentations on foods that match up with beer.

At the same time, the Denver Beer Fest has enlisted a number of high-profile eateries to feature Colorado beers." For full article
