Greetings! It's Wellness Day at the Market this week. Join us and celebrate all things healthy. Nancy Smith, LMT* from Essence of Self will be with us offering free 10-minute table massages, she'll address your health questions, offer holistic wellness tips and she'll be holding a free raffle for a 75-minute massage of your choice. Ann Townsend-Solis, RN, will be performing Reiki and M technique massage and Don Wiese will join us to discuss his book, West Milford Baker's Dozen: A Hiker's Guide to Climbing the Heart of the Highlands 13 Greatest Peaks. While you're at the market this week, don't forget to pick up your free map for Ringwood's town-wide yard sale which is next Saturday, 9/29 and Sunday, 9/30 from 9am-4pm. Bialas Farms ~ Kasha Bialas ate 5 ears of corn for dinner last night. Oh my! Who knew late September corn could be so sweet and delicious? Check it out this weekend, along with the fresh Spinach, Kale, Leeks, Kohlrabi and Carrots. Get the most colorful sweet bell peppers and eggplant, and try the first parsnips of the year. Lots of winter squash coming in this week, too, so be sure to stop by the markets. Fall has brought out the best veggies!

Recipe of the Week
This recipe goes great with fresh applesauce. Make extra applesauce and freeze a few batches for the winter.
Potato Leek Pancakes
3 large potatoes, scrubbed and shredded (I leave the skins on for added nutrients)
2 to 3 leeks, white and light green parts, trimmed, cleaned, halved and sliced very thin
2 eggs
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper or to taste
1/4 cup vegetable oil
Put the shredded potatoes into a few paper towels. Wrap and squeeze all the water out of the potatoes. Combine in a large bowl with everything except the oil. Mix well.
Heat a griddle over medium high heat. Prepare the griddle with nonstick cooking spray. Add enough oil to just coat the pan.
Working in batches, place about 2 tablespoons of the potato mix onto the hot griddle. Flatten the pancake with the back of a spatula. Repeat. Add more oil as needed. Cook until bottom is golden, then flip. Repeat on second side.
Serve with applesauce. Makes 4 servings.
Nutrition information per serving: 350 calories, 15 g fat, 40 mg cholesterol, 330 mg sodium, 50 g carbohydrate, 7.5 g fiber, 7 g protein. Good source vitamin A and iron. Excellent source of vitamin C.
