Recipe of the Week

Zucchini Lasagna
zucchini lasagna
Make a lasagna with no pasta!

Directions:

Cook zucchini until tender, drain and set aside. Fry meat and onions until meat is brown and onions are tender; drain fat. Add next 8 ingredients and bring to a boil. Reduce heat; simmer, uncovered 10 minutes or until reduced to 2 cups.

In small bowl slightly beat egg. Add cottage cheese, half of shredded cheese and flour.

In (1 1/2-qt.) baking-roasting pan arrange half of the meat mixture. Top with half of the zucchini and all the cottage cheese mixture. Top with remaining meat and zucchini.

Bake uncovered at 375 degrees F for 30 minutes. Sprinkle with remaining cheese. Bake 10 minutes longer. Let stand 10 minutes before serving.

SNAP and Healthy Families Update

The Ringwood Farmers' Market began accepting SNAP benefits this month and the program has been well received. We are thrilled to be able to make fresh, local food accessible to everyone in our community. Did you know that SNAP benefits come from Federal funds that are then spent in our local economy? It's beneficial to all involved.

It's not too late to donate to the  Healthy Families Program. An article featured in The Record underscored the dire need for more donations to our local food banks. Please visit our Healthy Families page on our website to learn more about the program and to make a donation.

Non-Profit Corner and Buy Local Spot

The Buy Local Spot is a space sponsored by The Ringwood Chamber of Commerce. Each week the "Spot" will feature one to two Ringwood businesses.

Each week the market has two spaces reserved for area non-profit groups. Each group may use this space to raise awareness for their organization. If you are a non-profit organization interested in participating in the market, please contact Teri Powers for more information.
