From Bialas Farms ~ Two words: Garlic Scapes! Ask us for the lesson and a taste this week. You can use Scapes anywhere you'd use garlic - with Spinach, Kale, Bok Choy and Turnip Greens. Roast some Yukon Golds with olive oil and salt in foil (grill or oven) and add loads of garlic scapes during the last 30 minutes. You can also make Pesto, compound butter, or just cook 'em up like green beans! They have an asparagus-like texture and mild garlic flavor when cooked.

 Recipe of the Week
Don't forget to shop at the market first for your ingredients! A Snoep Winkel chicken would do nicely in this recipe and be sure to use Red Barn Farm honey.
Honey Lemon Chicken
1 tablespoon oil 3 1/2 to 4 pound chicken - cut into 8 pieces 1/2 cup all purpose flour 1 teaspoon salt 1/4 cup honey 1/4 cup lemon juice
1. Preheat oven to 375 degrees. Line a baking pan with foil for easy clean up. Lightly oil the foil. 2. Combine flour and salt in a plastic bag. Shake chicken pieces in flour mixture, remove from bag and place on prepared pan. 3. Bake for 45 minutes. 4. Combine honey and lemon. Spoon mixture over chicken to glaze chicken pieces. Bake another 15 minutes or until done.

Beginning June 9th, EBT card holders can go to the Market Manager tent and use their benefits to purchase "Green Market Bucks". The "Green Market Bucks" can then be used to purchase eligible food and beverages at the market. Please direct questions to the Market Manager or email Eat Local.
