It's Artichoke Season!
Similar to the olive, the artichoke has been nourishing people for thousands of years. In fact, nearly 99% of all artichokes in the US are grown here in California. With the season peaking in mid-May, these prickly little vegetables add over $50 million to the state's economy. Not bad for a sometimes intimidating veggie.
At the local farmers market, look for dense, firm, tightly closed artichokes that feel a tad bit heavy. Fresh artichokes also tend to 'squeak' when squeezed. Nature's gift to the health-conscious eater, artichokes are free of fat with no cholesterol, low in sodium and in calories. A terrific source of fiber, one medium artichoke has more fiber than a cup of prunes! (Nothing against prunes, by the way).
Each plant produces three different sized edible artichokes, the most 'meaty' on the main stem. Grown from a thistle plant, the 'vegetable' we eat is actually the plant's flower bud. A little known fact? Did you know that California's "Artichoke Queen of 1947" was Hollywood's own Marilyn Monroe.
