This is a wonderful, simple side dish that is excellent served with grilled chicken or fish.
Orzo with Spinach and Feta
5 c water
2 c uncooked orzo (rice shaped pasta)*
5 c coarsely chopped spinach (raw)
1 c crumbled feta cheese*
1 T extra virgin olive oil
1 T grated lemon rind
1 T fresh lemon juice
½ tsp sea salt Cook orzo 10 minutes in boiling water, drain and rinse with cold water. Combine pasta, spinach and feta in large bowl. Combine oil, lemon rind, juice and sea salt in small bowl. Drizzle lemon mixture over pasta mixture, toss well to coat. Makes 8 one-cup servings. *If you are gluten sensitive, use rice pasta. If you have eliminated dairy from your diet, goat or sheep feta cheese is fairly easy to find, especially in the DFW area.
