This month's recipe is excellent for this time of year. There are quite a few ingredients, but it is super easy! It can be prepared and on the table in 45 minutes counting the simmer time. Great recipe for your crockpot, too! ENJOY!
Southwestern Chicken Soup
2 (14.5 oz.) cans stewed tomatoes 1 (28 oz.) carton organic chicken broth ½ lb. cooked chicken cut in small cubes 1 red pepper cut in cubes 1 c. sliced zucchini 1 (7 oz.) bag frozen corn ¾ c. picante sauce 1 (2.5 oz) jar sliced ripe olives 1 ½ tsp cumin 1 tsp basil 1 clove garlic, crushed ½ c diced green onion ½ tsp. salt ¼ tsp. red pepper ½ c cilantro, chopped (add last 10 minutes)
Put all of the ingredients together. Bring to a boil, cover and simmer for 30 minutes.
