If any of this is in your New Year's resolution, we are here to help!  In this edition of our country profiles we are looking at one of our most popular destinations: Jordan.  Jordan has so much to offer visitors, and like Egypt, it is a good place to start your explorations of the region.

Country Profile: Jordan
 
Jordan has long played a leading role in the history of the Middle East.  From the Old Testament and New testament to modern Middle East history, Jordan has been a prominent actor. 
 
Biblical sites such as Gilead, Ghadara, Moab, Mt. Nebo, Bethany, and the lands of the Adomites, along with other ancient archeologcal sites are popular destinations for visitors and important research sites for archeologists and scholars.  Roman domination left its mark on the country as well and the most magnificent ruins can be seen in Jerash, just north of Amman.
 

Jordan

was part of the Ottoman Empire, conquered by the Ottoman Sultan Saleem I.  Jordan, as well as the territories of Greater Syria, were liberated by the forces of the Arab Revolt that came out of Hidjaz in northern Saudi Arabia under the command of the Hashemite Sharif Hussein Ben Ali.  Assisted by Captain T. E. Lawrence (known now as Lawrence of Arabia) and the British troops that were stationed in Egypt and advanced under the command of General Allenby to meet the Arab troops, they drove the Ottoman Turks out.  When visiting Jordan many sites related to Lawrence of Arabia's adventures will be pointed out to you.

 

Jordan is approximately 37,300 square miles, or about the size of Indiana.  About 94 per cent of the country is arid and cannot produce food without irrigation.  Its geography ranges from the Rift Valley, lying almost exclusively below sea level in the West to the flat steppe in the East with a mountainous strip paralleling the Rift Valley in between.  Elevations range between 1230 feet below sea level at the Dead Sea surface to about 3612 feet above sea level at Wadi Rum in the south. 

 

The Dead Sea region is not only a popular visitor destination, it is also important to the rest of economy of Jordan.  Minerals extracted from the Dead Sea and neighboring areas are the primary commodities exported.  Unlike its Arab neighbors, Jordan has no oil and relies heavily on Iraq for its crude oil supplies that are trucked into the country to be refined and used.  Agriculture accounts for about 7% of the GDP.

 

Jordan is a constitutional monarchy, currently ruled by King Abdallah, the eldest son of the late King Hussein, one of the longest reigning monarchs in history.  The late King Hussein named his eldest son Prince Abdallah as Crown Prince and heir to the throne shortly before he passed away in 1999.  Abdallah was educated in Britain and the US, and maintains close ties with both countries.  He is known as an adventurer and an avid promoter of tourism to Jordan.  His wife, Queen Rania, is known for her philanthropic work and is the mother of their four children, the youngest born in 2005.  Both are committed to promoting peace and understanding between the Middle East and the West, and between Muslims and non-Muslims.  King Abdallah has been managing the domestic and regional crises with competence and patience, and has carried on his father's tradition of being a moderate voice in Middle East politics.

From the Jordanian Kitchen
 

Fatayer  (Stuffed Pastry)

 

This small turnover pastry, made from a small ball of dough (about 2" in diameter) which is rolled out to approx. 3" in diameter.  See below for dough recipe and filling recipies.  A heaping tablespoon of filling is placed in the center, then dough is folded over from three sides towards the center and pinched firmly closed.  The resulting shape is a triangle, with sealed seams running from each of its three corners and meeting in the center.

 

Fatayer are baked in a preheated 400-degree oven until golden brown.  Pan should be well greased, and tops of pastries brushed generously with olive oil or butter before baking. 

 

These Jordanian appetizers are easy to make and all start out with the same basic dough.  They can be made in advance and frozen until baking time.   

 

Basic Dough

2 1/2 cups self-rising flour

1/2 tsp. Salt

3 T oil or shortening

 

Sift flour and salt and rub in shortening until crumbly.  Add sufficient warm water gradually to make a soft dough.  Knead until smooth.  Cover with a damp cloth and let rest for half an hour.

 

Spinach Fatayer

1 lb spinach

1 onion, finely chopped

Juice of 1 lemon

1/4 cup olive oil

1/2 tsp. Sumac

Salt and pepper to taste

 

Wash and drain spinach.  Chop and sprinkle with salt.  Let stand 15 minutes, then squeeze out excess moisture.  Add other ingredients, mix, and fill pastry and bake as indicated above.

 

Cheese Fatayer

1 cup feta cheese

1 egg

1/2 cup parsley, finely chopped

1 onion, finely chopped

Salt and pepper to taste

 

Mix all ingredients together well, fill pastry and bake as indicated above.
