Enjoy a fun-filled day with family and friends, at the HMSA Island Scene Festival on Saturday, September 27 from 10am to 2pm at Kakaako Gateway Park.  The FREE event features health screenings and tips, keiki activities, food and entertainment including:
 
Xpress Chefs Farmers Market with a tasty selection of fresh, seasonal produce, delicious baked goods, and our special Kalua Turkey pre-sale. 
 
And, you won't want to miss Xpress Chefs Cooking Demonstration from 11:30am to noon. Chefs Frank Chun and Alan Cabebe will demonstrate our Crackseed Barbeque Sauce and share the recipe and samples.

Healthy tip: A reason to pick shrimp
Shrimp can shine all by itself on an elegant serving tray or tantalize our tastebuds when steamed or grilled and served with the simplest sauce.

Although high in cholestoral, the American Journal of Clinical Nutrition found that shrimp did not adversely affect production of cholesterol in the body.  Low in fat and calories - especially when flavored with a low-fat sauce - shrimp also offers beneficial doses of omega-3 fatty acids, vitamin B12 and niacin. Shrimp also are mineral-rich, supplying iron, zinc and copper.
 
For locally grown fresh shrimp, farmed in Kahuku, visit the humble shrimp trucks and shacks along Kamehameha Highway on the northeast shore.

The key to cooking shrimp, regardless of method, is to cook them quickly. And that's good news. Cooking shrimp will leave you more time to enjoy the holidays and less time preparing the meal.
Chili
& Garlic
Dipping Sauce

Recipe
Shrimp Skewer
Makes 1/2 cup
 
Ingredients
1/4 cup fresh lime juice
1 1/2 tablespoons chili paste
2 tablespoons cooking wine
5 cloves garlic, minced

Preparation
1. Mix all of the ingredients
in a small bowl.
2. Refrigerate at least 30 minutes before serving.
3. To store, place in a tightly sealed container and refrigerate.

For the most health benefits,  serve with steamed or grilled shrimp.

Infused
Orange Mint Iced Tea
 
Recipe
 
 
To make iced tea for a crowd, begin with a strong infusion that can be watered down as needed. Prepare several hours in advance, and let stand at room temperature until ready to serve. Prep: 10 minutes.
Orange Blossom
Ingredients
12 Earl Grey tea bags
1/2 cup packed fresh mint leaves
5 (3-inch) orange rind strips
5 trays ice cubes or 5 pounds crushed ice
Garnishes: fresh mint sprigs and extra orange rind strips

Preparation
1. Place tea bags in a 2-quart heatproof glass pitcher. Squeeze mint leaves gently to release flavor, and add with orange strips to pitcher. Add about 2 quarts boiling water, and let cool to room temperature. 2. Strain tea infusion, discarding tea bags, mint leaves, and orange rind, and return to pitcher. Cover with a plate, and set in a cool dark spot (not the refrigerator) until ready to serve. 3. Fill 10 iced tea glasses halfway with ice, add tea infusion to level of ice, and fill with water. Garnish, if desired. Infusions can also be used to make you own flavored spirit. 
Makes 10 servings.

Most citrus fruits are covered in wax, so if you want zest you should purchase organic.
