Breakfast boosts your brain power, gets your metabolism going and puts you in the right frame of mind to start your day. Unfortunately, too many people skip breakfast and suffer consequences, slow to start work, body has gone through longest "fast" for the day.  
 
Catering your breakfast is a great way to have morning office meetings and kick start your day.  When people start their day, they tend to me more organized, and often face less of a chance of being interrupted by phone calls and other unplanned visits. 
 
For breakfast meetings, we offer whole wheat bagels with low fat lilikoi cream cheese as a topping or scones made with oatmeal and fresh apples. There are hot entrees to choose from as well.

Xpress Chefs was honored to be selected to cater the volunteer functions at the 10th Annual Lantern Floating Hawaii ceremony on Memorial Day weekend.  We served 1,600 meals to the gracious event volunteers and we were able to experience the event, up close and personal.

The Lantern Floating Hawaii ceremony was held at Ala Moana Beach Park, and was sponsored by Shinnyo-En Hawaii and its community service arm Na Lei Aloha Foundation.  An estimated 40,000 people attended the spectacular event, with more than 3,000 from Japan.  
 
Xpress Chefs staff and volunteers assisted in preparing and serving the food, leading up to the event and on the day of. We send a warm mahalo to Chieko Steele and Charlene Flanter of Na Lei Aloha Foundation, as well as Tom Nishiyama of Ichinyosha Hawaii, Inc. whose continuous support of Lanakila Pacific and Xpress Chefs runs deep and doesn't waiver.

Lantern Floating
basil cucumbers apple
Oh So Good
Somen
Salad

Recipe
1 package somen, boiled
1 kamaboko, chopped
nori, cut into small strips
1/2 head of lettuce, shredded
2 eggs, scrambled (fried thin & cut into slivers)
3 stalks green onions, chopped
ham or char sui, chopped
 
Sauce
2 TBS sesame seeds
3 TBS vinegar
2 TBS sugar
1/4 cup cooking oil
1 dash sesame seed oil
2 TBS low-salt shoyu
 
Boil somen; drain. Place in 9x13" pan.  (To make individual servings, coil somen into small mounds in pan.) Garnish with lettuce, ham or char sui, eggs, kamaboko, green onions and nori strips.  Mix sauce ingredients in a bottle.  Shake well and pour over salad or serve separately.

Recipe 
 
1 can (8 oz.) nonfat refried beans
1 medium ripe avacado
2 small tomatoes, drained & diced
1-1/2 oz grated cheddar cheese
1 bunch green onions
1 package taco seasoning
1 carton (8 oz.) low-fat sour cream
1 can (4 oz) chiles, diced
1 can (4 oz) black olives, sliced
 
Prepare in layers.  Mix refried beans and taco mix, spread evenly in serving container.  Puree avocado and mix with sour cream; spread over first layer.  Mix diced tomatoes and diced chiles; spread over second layer.
 
Sprinkle cheddar cheese on top.  Sprinkle olives and chopped green onions over the cheese.  Serve with baked tortilla chips or baked pita chips.
