Chard Frittata!

From Alice Waters, the Art of Simple Foods
Wash and separate stems from one bunch of chard. Cut stems into 1/4" slices and coarsely chop leaves. Heat in heavy pan, med. heat, 1 TB olive oilAdd one med. onion, sliced thin. Cook for 5 miinutes, then add chard stems and season with salt.
Cook for 4 minutes and add leaves, cooking until leaves are tender,
adding a splash of water if the pan dries out. Turn out of the pan onto
a plate. Crack
into a large bowl 6 eggs. Add salt, 2 tsp olive oil, pepper, cayenne,
4 chopped garlic cloves. beat lightly. Gently squeeze chard with your
hands, wringing out most (not all) of liquid. Stir the chard into the
beaten eggs. Thoroughly preheat 10" heavy or non-stick pan over med-low
heat. Pour in 2 TB olive oil. After a few seconds, pour in the
egg mixture. As the eggs set on the bottom, lift the edges to allow the
uncooked egg to flow underneath. Continue to cook until mostly set.
Invert a plate on top of the pan; turn the plate and pan upside down to
turn out the frittata onto the plate.
Pour in, 1 tsp. olive oil. Slide the frittata back into the pan. Cook for 2-3 minutes more. Slide onto a plate and serve warm or at room temperature. All photos on EBlast courtesy of Amanda Edmonds. Thanks, Amanda! |

Exciting Events at the Downtown Ypsilanti Farmers' Market...
Something for everyone! Bring the whole family because there are great things happening for all. DEMONSTRATIONS: - This week from 3-5pm Ashley Bishop, Growing Hope's current Community Organizer and fermenting of foods extraordinaire, will be demoing how to preserve some of those seasonal winter crops by making kimchi. Recipes will be available and Ash is available to answer questions!
- And from 5-7pm Sylvia of Pilar's Catering is sampling her tamales and curtido salad. She'll show us some of the secrets to mastering this simply delicious and healthy raw salad that can even be made from local produce in the winter!
KIDS:
- A nutrition grad student from the University of Michigan will be offering some great and entertaining activities that are good for both fun and learning! Look for Ofra in the back south corner of the indoor market.

Our Winter Market and Vendors!

Our first
Downtown Ypsilanti Winter Farmers' Market was an absolute success! We were amazed with the variety of products and produce local growers and vendors were able to bring. The entire room was aglow with color, enthusiasm, holiday spirit, and local offerings. Thanks to everyone who made it to the first market and supported this local venture.
Don't miss out on this coming week, Nov 24th, with phenomenal Thanksgiving possibilities. The pumpkin pies and desserts smell (and taste!) fresh and amazing, the chestnuts are grown in Michigan and ready for roasting, the coffee from Ugly Mug is ready to be sampled, bacon, beef, buffalo, chicken have been a huge hit, and so much produce from our local growers is available! See side bar for inspiration!
