Pumpkin Soup!
|
Ingredients
1 lb of chopped pumpkin.
1 oz of butter.
1 medium onion, finely chopped.
2 cloves of garlic, crushed.
3 cups of chicken stock.
1 tablespoon of tomato paste.
1 tablespoon of grated parmesan cheese.
Salt and pepper. Directions Chop the pumpkin into large cubes (not using the skin and seeds).
Sweat the onion and garlic in butter in a large saucepan until the onion is clear.
Add the pumpkin and garlic and sweat for a minute.
Add three cups of chicken stock and the tomato paste.
Cover and simmer for twenty minutes or until the pumpkin is tender.
Rinse a blender in boiling water to warm and blend the soup mixture.
Serve sprinkled with grated Parmesan cheese.

Downtown Ypsilanti Winter Farmers' Market includes an
amazing line-up of local food vendors! There will also be children's activities and a fantastic basket
of giveaways each week, along with every other week blood pressure screenings
through MICHR. This week's free raffle giveaway features a beautiful totebag from Eat Local Food!
The
Winter Market will be held at the Corner Brewery, 720 Norris Street,
Ypsilanti, from 3-7pm on the second and fourth Tuesdays of November and
December: November 10th & 24th, & December 8th & 22nd!

2009 DYFM Successes!

This season in 2009 we saw great heights in sales, attendance, and EBT/food stamp growth! Overall sales will have increased by more than 58% over last year. EBT sales will have jumped more than 111% over last year, and that doesn't even include the additional $2500 in matching bonus bucks that were given to EBT users during the months of July-September.  The final numbers are in, and total sales have exceeded $108,000, and that is something remarkable! Of total sales, 20% came from either EBT (food stamp), Project FRESH, Prescription for Health, or the Bonus Bucks program. That's 20% of our total sales that contributed to bringing better access to healthy and local food to the lower income population in Ypsilanti! | |
