Featured Recipe: Fresh Corn & Tomato Salsa |
4 ears of sweet corn 1/2 red onion, diced 2 tomatoes, diced 1/2 jalapeno, seeded and finely diced 1/2 hot chili pepper, seeded and finely diced Juice of 1 lime Salt to taste 1 tablespoon vinegar 1 teaspoon sugar (optional)
Slice kernels off the corn, and combine it with all remaining ingredients in a bowl. Cover and refrigerate before serving. Top polenta or grilled meat or veggies with this salsa, or use as a dip for your favorite local chips! This raw recipe is full of vitamins and should be enjoyed whole-heartedly!

| Meet the Vendor: Zilke Vegetable Farm |
|
At the Zilke Vegetable Farm tent, you will probably notice something different from the majority of the vendors at the DYFM. This tent is regularly operated by two young people, Emily and David Wilson. I spoke to Emily, who is going to be a junior in college this fall. They run the tent because Zilke Vegetable Farm is a family business, where every one in the family is more or less involved in some way. They are a two year old business from Milan, MI and have plans to expand. They plan to buy more acreage and are looking into offering their products as a CSA (Community Supported Agriculture). They are also looking into selling to small local businesses. One of the Zilke Vegetable Farm's specialties is their small tomatoes. They offer an exciting variety including cherry, chocolate cherry, black cherry, sun sugar, yellow pear, and juliet tomatoes. They grow a comparable variety of peppers. Look for their variety of peppers, tomatoes, and onions loaded in mixed containers for making salsa and sauces at home!
Emily says that the business has been a great learning experience for her and they are constantly looking for ways to improve. The Zilke family plans to continue using more and more of their soil for growing diverse produce varieties! Just this year they added an additional hoophouse to their farm. The Downtown Ypsilanti Farmers' Market is happy to have the Zilke family join us for their first year of selling at our market! |

What is Community Supported Agriculture? |

Over the last 20 years, Community Supported Agriculture (CSA) has becom  e a popular way for consumers to buy local, seasonal food directly from a farmer. Here are the basics: a farmer offers a certain number of "shares" to the public. Typically the share consists of a box of vegetables, but other farm products may be included. Interested consumers purchase a share (aka a "membership" or a "subscription") and in return receive a box (bag, basket) of seasonal produce each week throughout the farming season. This arrangement creates several rewards for both the farmer and the consumer. In brief...
Advantages for farmers:
- Get to spend time marketing the food early in the year, before their 16 hour days in the field begin
- Receive payment early in the season, which helps with the farm's cash flow
- Have an opportunity to get to know the people who eat the food they grow
Advantages for consumers:
- Eat ultra-fresh food, with all the flavor and vitamin benefits
- Get exposed to new vegetables and new ways of cooking
- Usually get to visit the farm at least once a season
- Find that kids typically favor food from "their" farm - even veggies they've never been known to eat
- Develop a relationship with the farmer who grows their food and learn more about how food is grown
