Four Fresh Salad Ideas
1. Make a crisp grilled cheese sandwich, with good bread and not too much good cheese. Let it cool, then cut into croutons. Put them on anything, but. especially tomato and basil salad. (Pictured above).
2. Mix wedges of tomatoes and peaches, add slivers of red onion, a few red-pepper flakes and cilantro. Dress with olive oil and lime or lemon juice.
3. Grate carrots, toast some sunflower seeds, and toss with blueberries, olive oil, lemon juice and plenty of black pepper. Sweet, sour, crunchy, soft.
4. Combine chopped bell peppers, tomatoes, red onion, chilies and cilantro, then toss with corn tortilla strips, toasted in a 350-degree oven until crisp (or yes, use packaged chips; why not?). Dust with chili powder and lots of lime juice.

| Meet the Vendor: Norris Stephens |
|
Norris Stephens is the farmer for Good Medicine Farms located in Milan, Michigan. If you've been to the Downtown Ypsilanti Farmers' Market, you have certainly seen Norris and probably bought fresh produce or beautiful hanging plants from him. Norris has been with the market since its start four years ago and participated on the market's Community Advisory Board. Norris supports the market partly because he likes so much about it, including the location, the management, and the people who come to the market. He considers the DYFM a great resource for small growers, and says that it provides these growers with an affordable venue to sell their food. Norris has always enjoyed seeing things grow, and grew up in a time where "everyone had a garden". He came to enjoy gardening enough to make it his profession as a farmer. He is an advocate of locally grown and fresh picked food, asserting that store bought food cannot compete with the taste. He admits farming in Michigan has its challenges, especially with the unpredictable weather. In an effort to combat issues with weather, he has been working on three green houses similar to the one at the Growing Hope Center. This allows him to keep temperatures more consistent and helps him to extend the growing season of food. In addition, Norris is applying for a grant that would provide a drill well, helping the farm to have enough water in the early spring. Norris is a fan of all vegetables and prepares much of what he grows as a stir fry, including tomatoes, onions, and squash. Along with tomatoes, cabbage, potatoes, etc., look for Norris' popcorn and okra! It'll be here soon! |
