Vanilla Sweet Potatoes

4 Large Sweet Potatoes

8 Whole Vanilla Beans (split down the center vertically and remove the seeds)

1lb. Butter

2tsp. Vanilla Extract

In a 400degree oven, roast sweet potatoes whole. Be sure to poke them with a fork before going into the oven. Soften the butter and whip it together with vanilla extract and beans. Remove the potatoes from the oven, scoop out the flesh, mix with vanilla butter and add a touch of salt. Do not over mix. Arrange all components on a plate and garnish with toasted pecans and fresh pomegranate seeds. Serves 4 to 6 people.
