March is National Nutrition month and the USDA has released the newest Dietary Guidelines for Americans based on the latest scientific research to help prevent chronic diseases such as diabetes and heart disease. Selected Messages for Consumers

Take action on the Dietary Guidelines by making changes in these three areas:

Balancing Calories
  • Enjoy your food, but eat less.
  • Avoid over sized portions.

Foods to Increase

  • Make half your plate fruits and vegetables.
  • Switch to fat-free or low-fat (1%) milk.

Foods to Reduce

  • Compare sodium in foods like soup, bread, and frozen meals - and choose the foods with the lowest numbers.
  • Drink water instead of sugary drinks.

Dear Jane,

My mother is retiring from her job this year. She had an HMO through her workplace, but she had Medicare part A since she turned 65. Will Medicare become her primary? Does she need a supplemental insurance to cover deductibles?

Your mother's employer should provide her with some benefit information as well. She has two options. She can choose a managed Medicare, which would be similar to her previous plan or she can choose a supplemental insurance plan to cover deductibles. If she is going with a traditional Medicare plan she should enroll in part B benefits as well so she does not incur a penalty for late enrollment. The premium for part B is currently $96.40 per month, unless her annual income is over $85,000 and is usually deducted directly from social security payments. The current deductible for 2011 for part B is $162 and for part A is $1,132. The co-payment for hospital stay days 61-90 is $283 a day and for days 91-150 is $566 a day. If she should require skilled nursing the co-payment for days 21-100 is $141.50 per day. You can see why it would benefit her to obtain a Medicare supplement plan to help with co-payments.

You also want to make sure she has prescription coverage either through HMO or Medicare Part D plan. She may qualify for assistance with prescriptions through PAAD (Pharmacy Assistance for the Aged and Disabled).

The "Riverview Estates Cookbook From our Home to Yours" is available at the front desk.  This is a wonderful hardback cookbook consisting of treasured recipes passed down through generations to resident, families, staff and friends.  This would make a wonderful addition to any collection. The price of the book is $15.

We would also like to take this opportunity to thank all those who contributed their precious and remembered favorite recipes.  Thank you for sharing them with all of us!
8th Annual Fine Arts & Peach Festival
Artist Needed
We are now accepting applications for the 8th Annual Riverview Estates Fine Arts & Peach Festival & Sale.  This year's festival is scheduled for August 6, 2011 from 10:00 a.m. to 4:00 p.m.  There is no rain date, please ensure your display is weather proof.  You can obtain more information and an application on our website at http://www.riverviewestates.org/otherevents.shtml

 

Chicken Salad Grape Wraps
 
Sandwich/Wrap

Servings:
Makes 24 servings

Ingredients:
  • 3/4 cup butter
  • 3 whole chickens roasted (5-7 lb. each before cooking), light and dark meat pulled and coarsely chopped
  • 5 stalks celery, diced
  • 1 red onion, diced
  • 3 cups red seedless grapes, halved
  • 3 1/3 oz. chopped walnuts
  • 1 cup sour cream
  • ½ cup Dijon mustard
  • 1 tbsp. salt
  • 1 tsp. pepper
  • 12 flour tortillas
Methods/Steps
  1. Combine celery, onion, grapes, and walnuts with sour cream, mustard salt and pepper: mix thoroughly. Add roasted chicken and toss lightly.
  2. Spread 6 oz. of chicken salad on each tortilla and roll up into a wrap. Cut in half to serve.
  3. For service, plate one-half of a wrap with a small bunch of grapes, a beverage and veggies with dip.

Alzheimer's Support Group
 
Riverview Estates offers a support group for caregivers and family of those affected by Alzheimer's disease.  This is an informal group that meets the first Wednesday of every month at 6:30pm. This group is free and provides information about the disease process, support, and services that are available. Please join us. "Cut off your nose to spite your face"
"Don't miss the music concert because Rosie isn't going.   Why cut off your nose to spite your face?"

Meaning: To injure yourself out of anger toward another; to make a situation worse for yourself when angry with someone

Origin: Some people were using this proverb in Latin as early as 12OO.  There may have been a story about cutting off part of a long, ugly nose, only to succeed in disfiguring the whole face.  Apply that same idea to any spiteful action you commit against another person that ends only harming only you.
