Hope this finds you warm and well! We have had a real cold snap on the Gold Coast but it's lovely for a change, and we got some much needed rain this week as well.
I have been super busy this past month, having hosted the Julie Matthews diet seminar here on the Gold Coast with Autism Holistic Centre. It was a great success and it was fabulous to have Julie be able to drop by on her way to the Mindd Foundation conference in Sydney. I was privileged to speak about Healthy Homes at the Mindd conference, but the best part by far was meeting all the positive, energetic, like minded people at the conference soaking up the amazing wisdom of the key speakers. And I also got to meet some of my lovely customers there which was a bonus!
This month we have the first of our new suppliers products for you and we are very excited to be working with Superfoods for Kidz - you can get all the product information below. Allergy Friendly Chreese Scones 
Thank you so much to Kelly from Allergy Tots who has shared her yummy Chreese scone recipe. She says it's also good with a bit of diced bacon added in, I'll be doing that tonight, thanks again Kelly!
INGREDIENTS 1 small brown onion, diced 30g nuttelex 2 cups gluten free self-raising flour 1 trial packet of Chreese made up according to packet (I used cheddar flavour) 1 tablespoon chopped parsley (optional) Pinch of salt and pepper (if desired) 2tsp Original Darifree powder mixed into ¾ cup (185ml) water 1 teaspoon vinegar 1 tablespoon melted Nuttelex/ghee - for brushing scones prior to cooking. METHOD Preheat oven to 200°C (180°C fan-forced).
Cook onion in Nuttelex over a medium heat, until golden brown and softened.
Combine flour, salt, pepper and parsley (if using) and pre-made Chreese mix in a large bowl. Add cooked onions and rub the mixture together until the fat coats the flour. Combine Darifree milk and vinegar and stir into flour mix, using a knife to mix to soft dough.
Tip the mixture onto a lightly floured bench and shape and pat the dough out to a rectangle about 3cm high.
Using a 4cm biscuit cutter or scone cutter, cut rounds from the dough and place on a lightly greased and floured baking tray. Dip the biscuit cutter in a little extra flour to prevent the dough from sticking to it.
Brush the tops of the scones with the melted Nuttelex.
Bake scones in preheated oven 25-30 minutes until risen and golden brown. When properly cooked, they will sound hollow when tapped on the base.
Serve warm, spread with nuttelex if desired.
