Allergy Friendly Easter
Yes it's upon us again. Although Easter is a little way away, for those of use who can't just pick an egg off the shelf, it's time to think about what we will do for Easter treats this year. Although I try to stay away from food treats as much as possible (and fill up plastic Easter Eggs with little chickens from the $2 shops), I still like to have a few little eggs for Tim, he is still a kid after all.
You will know there is little, if any, choice for gluten, dairy, soy, nut & egg free eggs on the shelves. Lucky it's really easy to make your own! I found some great little Egg moulds at Big W and customers have also told me Spotlight has a good range, and of course good old ebay has some too. Coloured foil has been spotted on ebay, Spotlight and even at Coles.
This is how easy it is ... 1. Oil the moulds so the chocolate won't stick
2. Melt Enjoy Life choc chips with some oil - either in the microwave or over the stove - just be careful not to burn it.
3. Paint a thin layer of chocolate into the moulds and chill for 5 minutes.
4. Paint a second layer of chocolate into the moulds and chill for 10 minutes.
5. Carefully remove the eggs from the moulds and use some of the remaining chocolate to paint around the rim of the eggs to join them together.
Store in fridge or freezer until you need them.
This year I'm making 'rattly' eggs and putting Surf Sweets Jelly Beans inside the eggs before I join them together!
Also experiment with using some of the Enjoy Life Boom Choco Boom rice bars or crispy rice bars if you want a more 'milky' chocolate rather than dark choc.
Good luck and Happy Easter!
