White Christmas
(thanks to Julie for testing this one out and sending me the recipe to share)

1 1/2 cups gf puffed rice cereal (I used Enjoy Life crunchy rice)
1 cup DariFree Original powder
1 cup gf icing sugar
1 cup dessicated coconut
1/3 cup chopped red glace cherries
1/3 cup chopped green glace cherries
1/3 cup sultanas
250g copha

Line a shallow tin with foil
Combine the puffed rice, DariFree powder, icing sugar, coconut, glace cherries and sultanas in a large mixing bowl. Make a well in the centre.
Melt copha over low heat, cool slightly and add to dry ingredients
Stir with a wooden spoon until all ingredients are moistened and well combined.
Spoon into prepared tin and smooth down surface with wetted hands or back of a spoon. Refrigerate for 30 minutes or until set. Cut into small triangles to serve.

Note : copha contains soy lethicin so this will not be  soy free

Variation : I don't go much for glace cherries so I also made one using chopped dried apricots instead of the cherries & it was great

Little Pavlovas
(gluten/dairy/nut/soy/rice free)

We use these instead of trifle on Christmas Day.

Find some individual pavlova shells (Coles has several varieties that contain basically egg white and sugar)

Top with fresh strawberries, raspberries, blueberries (frozen ones will work just fine as well)

Then add a few dollops of vanilla ice cream, made from the Miss Roben's Versatile ice cream mix.

A really easy & tasty summer treat.

Allergy Friendly Rocky Road
This is divine!

Ingredients:
300-400g Enjoy Life choc chips or Boom Choco Boom bar (chopped )
(Or use a combination of both, which is what I did and it was great)
1 x 100g packet of glace cherries, halved
1 cup chopped dried apricots
1/2 cup walnuts, chopped
1/2 cup gluten free marshmallows, chopped
1/3 cup shredded coconut

Method:
Place chocolate in a heatproof bowl.
Sit bowl over pan of simmering water and stir until melted and smooth.
Remove from heat.
Pour into bowl with cherries, apricots, walnuts and marshmallows.
Stir to combine.
Spoon mixture into a lined / greased lamington pan.
Sprinkle with coconut.
Refrigerate for 2 hours or until set.
To serve, lift out of pan and cut into squares.

ENJOY!!!
