I hope this finds you and your families happy & well.
What a devestating time it has been for the many famlies affected by both the Victorian bushfires and the Nth Qld floods. In particular, our thoughts have been with those with food allergies who are unable to access their specific dietary foods.
We have been thrilled to be able to help out these communities by donating boxes of our allergy-friendly foods to the whatcanieat.com.au pallet appeal. Kylie from whatcanieat has organised for 2 pallets of allergy friendly foods to be distributed to needy areas - one pallet heading south to Victoria and one heading up north to the flood affected areas. If you haven't already heard of whatcanieat, have a look at their website here. You may find some other great special dietary products (besides ours!) on there. And watch out for them on A Current Affair over the coming weeks too.

This month's recipe
Protein-packed breakfast pancakes
(adapted from Living Without magazine)
Brown rice flour & sorghum add extra protein & fibre to these tasty gluten & dairy free pancakes. Top them with sliced fruit for a healthy start to the day.
(for convenience, mix the batter the night before, cover and store in the fridge. If batter has become too thick, add some more liquid)
3/4 cup brown rice flour
1/2 cup Miss Roben's sweet sorghum flour
1/4 cup tapioca
1 teaspn xanthum gum
1 tablespn baking powder
2 large eggs (or equivalent replacer)
1 teaspn vanilla (gf)
3 tablespns sugar
1 cup DariFree original
1 teaspn oil of choice
Mix together flours, xanthum gum and baking powder with a whisk in a mixing bowl.
Add eggs, vanilla & sugar.
Add DariFree slowly until batter is desired thickness. Do not over-mix or batter will become thick & stiff.
Heat oil in a non-stick pan. When pan is sizzling hot, pour in batter or drop by serving spoonfuls to make pancakes. Spread batter out in pans in needed.
Cook until pancakes have bubbles throughout and bottoms are lightly browned. Flip with a spatula and cook briefly until done.
variations :
For banana-nut pancakes, add half a ripe mashed banana and 2 tablespns ground almonds.
For blueberry pancakes add 1/2 cup fresh or frozen blueberries and increase sugar to 5 tablespns.

The savoury biscuit/dumpling mixes are all gone now, sorry for any inconvenience to those who had enjoyed them.
BEING DISCONTINUED :
Sweet Sorghum flour. Now available for $7.95 per packet. This is a wonderful, versatile flour packed full of protein. Works well when combined with rice flour in muffin/biscuit recipes, and can be used anywhere you need a flour substitute. Will last for months in the freezer, so great to stock up before we see the last of them.
SUPER SPECIALS :
We still have some Carrot Cake mixes with shorter than usual shelf lives, with 'best before' dates of early March 09. Kept in the fridge or freezer, these mixes will last for months longer with no compromise to their quality. While stocks last on these short dates mixes super prices of :

I need your help!
I have customers who use our products for all different sorts of reasons, and for family members of all different ages. I would love to expand our testimonial section to embrace as many different uses of the products as possible. This is such a help for people starting out and gives reassurance to them that others are in the same position.
If you can spare the time to send me a few lines about how and why you use the products I would really appreciate it. You can sign it with your name or initials and your suburb or state - however you send it is what I will use. The testimonials will be listed on our website.
The other thing I would love to see is photos of our products being used in all different places! So if you have a tin of DariFree sitting out at a kid's party, or photos of your kids enjoying a Miss Roben's cake for their birthday, or munching on some Enjoy Life snack bars, cookies or Boom Choco Boom bars please email them to me! These will be fabulous in the testimonials section and is a bit of fun too. Each month I will randomly select one person who has submitted a photo to receive a surprise gift!
