Explore French and Swiss Mountain Cheeses!

fondue Join us at The Market for our first Fondue and Raclette Party! Thursday, February 22, at 6:30pm bring your friends in out of the freezing cold and snow and gather around a steaming pot of cheese fondue or sizzling raclette! Learn or rediscover this fun and easy way of intimate winter entertaining. It is a guarantee for great conversation and comraderie! Everyone will be provided with recipes and tips to bring home so you can plan your own soiree!

Reservations are necessary. We will limit the seating to about 6 tables. The plan is to serve you with both fondue and raclette. Our fondue recipe will utilize French Gruyere, Swiss Appenzellar, and Swiss Bergkase, or Emmenthaler. For the raclette, I would like you to try both our French Raclette and our fabulous Comte de St. Antoine.

The fondue will be served with cubes of our Pellston Market Country Italian Bread and Salad. The raclette will be served with charcuterie such as Rosette de Lyon, Chorizo, Molinari Finochiona and Hot Copicola, Steamed French Fingerling Potatoes, Cornichons, Pickled Onions and Mustards. We will have fruit sorbets for dessert, if anyone has room!

The fee is $30 per person. Nancy will be talking about the different cheeses that will be featured and you are welcome to come into the kitchen and watch the preparation of the fondue! We will try to have grated cheeses packaged for you to bring home along with your recipe so you will have it ready for your next party. The cost for the cheese is $22, please try to let us know in advance if you would like one.

Dinner at the Market - Menu for February 24, 2007

risotto Our last Dinner was sold out and I apologize for those who could not join us! I hope you can make one of the next ones! My menu for the 24th is as follows:

Hors d'Oeuvres

First Course - Butternut Squash Risotto w/ Fresh Sage, Nutmeg and Lemon Zest

Main Course - Filet de Poisson, Sauce aux Olives et Vinagre de Xeres -Market select fish filet with sauteed spinach and chard, seasoned with fresh thyme, cayenne, a splash of vinegar and a crumble of fresh goat cheese. Julienne zucchini and sweet pepper.

Salad Course

Dessert - Gateau Chocolat , Sauce Caramel Chaud, Creme Chantilly

Come and Join Us, Please! Reservations Required Please call 231/539-7100 w/ a credit card number to hold your place. Cost is $45 per guest, plus sales tax and gratuity.

We welcome you to bring your own libations. There is a 48hr. cancellation policy that we must regretfully adhere to. If you must cancel, please try to find someone to replace you.

First Course - Warm Cauliflower and Caramelized Onion Tart garnished with Salade

Main Course - Seared Duck Breast rubbed w/ Morrocan Spices and napped w/ Roasted Tomato, Honey and Raisin Sauce
Toasted Israeli Couscous w/ Oregon Hazelnuts, Tiny Diced Vegetables and Dried Fruit

Dessert - Lemon Meringe Ice Cream Cake w/ Raspberry Sauce and Spiced Blueberry Compote! (what do you think, maybe lemon zest, cinnamon, cardamon and lime??)

Pinna Brigante, Sheep's Milk Cheese from Sardinia;

Bois Blond, from the Pasturages Comtoise in France, decadent vacherin stlye creamy cow's milk cheese encased in wood to be served w/ a spoon!

Bijou, artisanal hand made goat's milk cheese from the Vermont Butter and Cheese Co.

Trugole, Italian Asiago!!! There are many more coming as well.

I couldn't resist ordering these while at the food show in San Francisco. Most shops Up North wait until late June to order their specialty cheeses, but at the Pellston Market we make sure our selection is the best all year round! You have been tremendously enthusiastic and supportive of our ambitious cheese program and I don't want to let you down!

The shipment of Les Costes extra virgin olive oil finally arrived last week! Come in and taste this luscious Spanish Arebequina. It has a full ripe olive flavor, while at the same time it is soft and delicate.

If you have already placed an order please call the staff with you payment information so they will be sure to pull it off the shelf for you!

Fruit Vinegars from L'Olivier in France - Wake up your winter palate with - Fruits des Passion, Figue, Framboise and Tomate - The flavor is amazing and even the packaging is wonderful. There is only one US importer of these great vinegars and again, we were very lucky to have snagged some of their shipment for Pellston!

I may be crazy, I know it is the dead of winter, but the Market is filled with great new merchandise. We have four new ceramic serve ware lines for your table. The colors and glazes are amazing! You will find these items are original, bright, fun and functional.

So beat the winter blues, come and indulge yourself and your friends in a market designed just for you.
