Fish Tales with Dave Jensen According to web authorities, this year National Fishing Month begins on July 20th and ends on August 27th. Now, if you know us Jensen brothers, we laugh at just about everything...but this one really had us going! I guess when you live on Captiva, where fishing is fantastic all year 'round, it just seems like every DAY could be "National Fishing Day". Let's take a look at the four seasons of fishing in Southwest Florida, and I'll show you what I mean... SUMMER brings tidy schools of redfish, and they'll be increasing in numbers well thru October. Tarpon are to be found, as this is kind of like a mini season for them...so look for those rolling beauties and make your approach! Cobia, king mackeral and big Jacks are in the drink, and waiting to be caught! Snook is catch-and-release, and they're moving back and forth in Redfish Pass back thru Roosevelt Channel. Yes, the bait shrimp are small this time of year...but it seems those snook don't mind one bit. AUTUMN is another fisherman's paradise here when the redfish migrate into the passes and along the beaches, well into the beginning of October. It's like a redfish frenzy, and they'll look for any -and every- type of bait you're putting on your line! WINTER with it's cooler waters shows us no short supply of sea trout in Pine Island Sound and the redfish are coming through in larger schools. Great show of grouper being caught in these months that we call cooler, but still the air is warm enough to get out on the water and really enjoy yourself. We see quite a few couples renting boats and some rods and tackle for a Valentine's Day of boating and dropping a line in the water...ya gotta love that! SPRING shows seatrout moving from the grassflats of Pine Island Sound through the passes to the Gulf of Mexico. To be precise, we see seatrout all year long...along our beaches in warm weather, and on the sound side of Captiva when the water cools a bit. Blackened Grouper
Recipe Courtesy of Executive Chef Jason Miller
*Ingredients (serves four)
Four 1/2 lb grouper filets Blackening spice
2 Tbls.olive oil or melted butter
*Although best cooked in a hot cast iron skillet, any
pan will do in a pinch. As the blackening spice will
create some smoke, make sure your vent fan is on. If
you do not have an exhaust system available, you can
put the pan on an outside gas grill to cook!
*Cooking Directions
Brush tops of grouper filets with olive oil or butter.
Preheat skillet on HIGH heat.
Sprinkle blackening spice on the filets (the exact amount
depends on how spicy you like your fish.)
Place fish, seasoned side down in hot pan.
Cook 3-5 minutes. Add more spice if desired.
Flip fish once and cook additional 3-5 minutes. Remove from heat and serve (preferably with cold beer!)
